focaccia recipe
Ingredients
·        1 ¾ cups water (appx 40 degrees C)
·        2 tsp yeast
·        4 cups (512g) flour
·        2 tsp salt
·        Olive oil
·        Salt
·        Any toppings you want. Ex. Tomatoes, garlic, olives, cheese, rosemary, etc.
 Directions
1.      Measure warm water into measuring cup. Add yeast and let bloom for 5 min until bubbly.
2.      Mix flour and salt in a large bowl. Add bloomed yeast/water mixture and stir until mixture forms a ball. Rub surface with olive oil, cover, proof in fridge overnight. Minimum 12 hours, maximum 3 days
3.      Line a 9 x 13 pan (or two 8 inch pie plates) with parchment paper
4.      Deflate the dough with oiled hands and fold several times until the dough forms a ball
5.      Put dough into pan(s), coat with oil, cover and let rise for 3-4 hours
6.      Dimple dough, add toppings and bake on center rack at 425 degrees F for 25-30 min
7.      Transfer to cooling rack for 10 minutes before serving.
