why fleur de sel is unique?
Fleur de sel are flakes of salt made from the formation of crystals on their own, unlike table or regular salts that are refined through a process called "panning" wherein large crystals melted into small ones until they're all uniform. The term fleur comes from the fact that fleurs resemble petals while there's still water left to evaporate. The term fleur can also mean scent or flavor which explains why fleurs have a light hint of sweetness. This makes fleurs taste quite different from other types of salt. The fleur form is only temporary though; fleurs disappear as the water evaporates, leaving behind nothing but crystals (which are too big to be fleurs).

It's common for fleur de sels to be harvested in coastal France since France has such a long stretch of ocean coastline. Fleur de sel harvested in Japan and Korea can fetch up to $60 USD per pound! Because fleurs can appear at various places on the sea surface, it's also hard to predict where fleurs will sprout. Farmers have very little control over their harvest site therefore fleur prices vary drastically depending on where they're made. Smaller fleurs are made at places where the fleur areas are more spread out; hence fleurs tend to be smaller than fleurs near "the mother fleur". Larger fleurs are usually harvested near large fleur areas or from especially sunny days. The most prized fleurs du sel have small grains and a very fine texture.

Unlike other salts, fleur de sel is unique can come with anticaking agents that keep the fleur's surface free of contaminants. Fleur de sels without anticaking agents are considered raw but it is said to be healthier to consume raw foods. However if you're buying fleur de sel for cooking, make sure to buy fleur de sel with anticaking agents.
Fleur can also be made "meurette" which means fleur that's charred from the sun and fire at various stages of processing. Heat from the fires help fleurs to lose water but it also discolors fleurs from white to amber or brown hues. According to some scientists, fleur de sels make better desserts because they contain small bits of minerals that enhance flavor as well as give fleur its distinct crunchy texture when chewed (making fleurs very good for those who enjoy foods like potato chips).
Dangers When Consuming Fleur De Sel
Unlike table salt that people take in large amounts daily, fleur de sel shouldn't be consumed by people who have high blood pressure since fleur de sel contains sodium. A warning should also be given to those with diabetes since fleur de sel also contain a large amount of natural sugar (salt comes from the ocean; think about how sweet seawater is). Because fleur are made up of salt, fleur can cause dehydration in some people when consumed in large quantities. If fleur are used as seasoning they shouldn't be used excessively like table salt but rather as an accent to dishes and cooked foods.
