I think part of the reason I find GZ so entertaining to make headcanons about is that he’s basically a blue, hockey robot with every Gruff Male Action Hero™ trope for his personality when we first meet him. (Or, the American ones, anyway.)
And though he’s still very gruff and macho, a lot of the Gruff Male Action Hero parts of his personality, or the ones that I associate with said tropes, are shown to actually hinder him at bit, especially in episode 30, when he watches the kids. His Gruff Manly Ways™ mean that he’s pretty bad at showing emotion, or even really comprehending it in certain ways, tbh. But he interacts with the kids, and he takes Ryuuken’s advice and tries to smile, and even though he has a way to go, he still tries, and he seems much more emotionally healthy for it.
TLDR; I find GZ interesting because he strikes me as a deconstruction (intentionally or not) of American action hero tropes, which makes me happy.

For real, though. I’ve always seen that grey patch on the top of Ryuuken’s chest as his chest or something, so now I can’t un-imagine him in one of those boob window sweaters.
