I put the question off until the weekend, wanting to look in the mod files first, hoping to find some useful information on this topic after the 1.15 update. And oh boy, did I find something interesting...
Going back to the discussions from a couple of years ago, the very first theory of the reason for Lance's hatred of all things sweet and baked goods was the idea that the gallant adventurer is very strict about his health and appearance. Always perfectly ironed clothes, always clean skin, always well-groomed, healthy, not a single blemish. And he wouldn't eat anything that could ruin his figure or teeth, not even Magic Rock candy, which is considered one of the all-powerful foods in the Stardew world (Prismatic Shard essence, that's rare Lance!). The exceptions were maple syrup (apparently because it is a healthy sweet, low in antioxidants and vitamins and minerals).
Another theory (which @sapphicastral said, thanks moot!) was that Lance is diabetic and therefore couldn't eat anything sweet. He can't consume it because of his health. Maple syrup is still liked gift though (let's write it off to the mechanics of the game, because syrup is loved by almost everyone, except Maru).
But now those two theories can be thrown in the trash, because as it turns out, this pink-haired bastard loves chocolate, more specifically - Chocolate Truffle Bar, the new item in SVE, the recipe for which we can buy from a Traveling Merchant at the Festival of Ice for 12000 gold (damn, expensive 🥲). It's made, as you might have realised, from truffle (which already makes it an expensive food), milk, sugar and hazelnut. And Lance will happily accept the chocolate, saying he doesn't usually eat sweets, but will make an exception here...
Of course he'll make an exception - a bar of such an expensive sweet sells for 4500 gold!!! So, the first theory (about not wanting to consume excessive amounts of sugar and carbohydrates in order to maintain his health and figure) partly remains, but he only accepts the best, natural and expensive chocolate, I guess... That's only 500 gold cheaper than a treasure chest! (Jesus Christ...). Mister, I love you, but your flavours of gifts are frickin expensive.
Well, mystery solved - our noble Lance only wants the best and the finest 🤌 But he's always on the job protecting people from monsters, so let him treat himself to something yummy. I still can't understand tho why he hates Magic Rock candy, because it's even more expensive than Truffle Chocolate and more useful in the plans of buffs imposed on Farmer. Maybe this will be fixed in future updates - who knows.
I'll end this post with a follow-up to his quote about chocolate, which made me think really, really hard:
"...In the northern Highlands, there's peculiar monsters that carry just a right ingredients for the chocolate. I've yet to uncover their origin."

Been thinking lately about the farmer like, stopping the corruption and the Adventurers having an absolute crisis about what to do now that they don't need to fight off monsters. I think Lance and the First Slash will be fine because they can focus on exploration, but Isaac and the other Caslte Village Adventurers probably wouldn't know what to do with themselves.
Mm, yes and no. Depends on which adventurers we're talking about. You're right, The First Slash Clan, and the Adventurer's Guild won't feel the difference too much since their area is still full of monsters that haven't been touched by corruption. They will instead take comfort in knowing that dark magic will no longer spread further. The people of Galdora continent... Hmm, there could be two scenarios here.
On the one hand, the adventurers of Castle Village will always have something to do, just like The First Slash Clan. Monsters and secrets are everywhere, it's just that the same Isaac and Alesia will have to go further to do their jobs (which the scarred monster hunter will sometimes complain about, but it's nothing that totems and magic can't help with). He and Alesia (at least) are professionals, and such people will always be in demand. I'm sure the Galdora continent holds many treasures that were previously inaccessible due to dark corruption. Camilla, through her gift and talents, will smell another source of magic/artifact/treasure sites, and with a wave of her hand will send adventurers and mages out to retrieve what may be of use to the entire Village.
So the town will continue to live and earn its bread, just adapting to the fact that dark magic is no longer behind the barrier. Farmer's deeds will not harm their lives (on the contrary, the young adventurer from Stardew Valley will be considered a hero in the Castle Village like Marlon!).
On the other hand... Farmer did dramatically change the way of life for wizards and adventurers, and they did it even before Castle Village was mentioned. In Marlon's 4 ❤️ event, our teacher and the head of the Guild said that he and the young adventurers from The First Slash (or was it the Castle Village? I forgot...) went to the Mines to find monsters there and test the skills of the newcomers. But it didn't work out, because "imagine their disappointment when they found out that the Mines were almost completely empty.". Farmer has already managed to reduce the number of Slimes, Golems, Shadow people, etc. by half in a couple of seasons, and that's not the limit yet. Now the other Guilds need a new place with not too strong monsters to teach the youngsters how to fight...
If we mention our raids in Crimson Baldlans, Farmer will kill so many mummies and serpents, collect so many artifacts and treasures that will deprive the source of income of many residents of Castle Village. And this is their livelihood and way of living, Farmer destroys monsters not really for money, but for the idea/task/just because they can.
If Farmer has somehow wiped out the corruption in Crimson Baldlans altogether, the local Guild will fall into a temporary crisis. Orders and contracts are gone, loot from monsters can no longer be collected because they simply don't exist, ingredients for elixirs are already hard to get.... Especially those who have devoted their lives solely to the study of corrupted magic will feel the blow. The village will adapt, but again, it won't be immediate and many will already be surviving rather than living. Ironically, the hero under Marlon's wing brought both salvation and trouble.
This, incidentally, ties in with one of my favourite headcanons, that Isaac and some of the other adventurers dislike (and some outright hate) the Farmer for taking jobs away from half the inhabitants. And okay, if they were totally a monster hunter, but they have their own farm, rich in fertile soil, livestock, and multiple sources of income in the mine and Skull Cavern. But noooo, they've gone to Crimson Baldlans and started "helping out" here too. And I like to think that Farmer is so good at completing quests that some adventurers hide tasks, or even chase Farmer away from the notice board. Dick move, but it is what it is. Camilla notices this, but instead of scolding her subordinates for being rude, she gives Farmer some rather difficult tasks. The witch will find an alternative, because although the hatred for Farmer is undeserved, there is some truth in the Castle Village Guildmaster's words - Farmer has really... affected the local economy.

Heeey mousey! (◕ᴗ◕✿) I just have a random idea.
How would the adventurers, mages, or even their spouses react to the Farmer, who used to be a former assassin from a powerful mafia? Their parents used to work in the mafia as a powerful duo couple, but they had to resign for their family. However, the mafia didn’t like it and they killed the parents. Then, the mafia gave the Farmer a choice – either they join or else the mafia would kill their siblings. As the eldest, the Farmer had to join to protect their family. Years have passed since then. The Farmer has grown stronger and smarter, and has now devised a plan to escape the mob and leave the country with their siblings. They now live in Stardew Valley, leaving their old life behind in hopes of starting anew.
Yeaaaah, I have these thoughts about it and I just imagine the Farmer, want to forget everything but random mafia people are appearing in the valley and they had no choice but to tell the truth.
Oh, another question with an interesting scenario 👀 It's actually pretty cool to think about how the residents of Castle Village will react to people, things, and events that came from big towns, like Zuzu City. Hope you don't mind if I make only mages and adventurers this time. Nice to see you again, btw, and thanks for the ask! 🫰💕

Farmer thought Isaac would express his disgust after the truth, but to their surprise, the adventurer began to respect them. Taking on all the dirt and hatred to protect the people you care about isn't something everyone is capable of. He's not an idiot and knows perfectly well that circumstances forced them to be a member of a criminal organisation (but will definitely scold their late parents for their selfish act). Isaac has few connections, but if Farmer needs to protect their family - they can count on him. However, he still gave fair warning that if people call for a fair trial for all mafia members, Farmer must also be prepared to be held accountable, for justice is blind.
Magnus knew it all. Don't look at him like that, Farmer. He is a wizard after all, quite skilful too, and at the first meeting he honestly said that he saw their past and future arrival here. It's not Rasmodius' fault that Farmer didn't believe him then. But he doesn't blame his young friend/adept for the crimes they had to commit out of their own free will. Farmer is very brave, protecting their loved ones from bad people. Magnus will help Farmer if any of the mafia members come to the Valley to find them and their family members.
Camilla's shocked look might fool Farmer and others, but the witch already knew everything. The young, talented Farmer had come to the Stardew Valley with their siblings, become a protector of people from monsters, helping the Castle Village as well - of course Camilla, with her boundless curiosity, had dug into Farmer's past. Really sad, but she admires their willingness to protect and abilities. This could really come in handy for her... Ah, don't let Farmer's worry about the mafia, they're definitely not coming to the Valley. And the recent news of mafia members being arrested/murdered/missing has nothing to do with her*chuckle*.
Yoba have mercy... Farmer has had to face hardships since the childhood, with no way out to escape and save himself and his siblings... Alesia is shocked to realise just what kind of scum there are in the world, forcing a teenager to do their dirty work. The sniper has seen a lot of things, but something like this... She doesn't blame poor Farmer for having to pay for their parents' mistakes. If any of the bastards come to the Stardew Valley, Farmer can count on her bow. And if the law is still merciless to Farmer for their past, Alesia will at least help their family in any way she can.
Jadu is completely baffled and speechless. So much information piled on his head... Farmer is a... wanted criminal? But they were left with no choice. Was there really no other way to escape from mafia and save their loved ones? No, the young wizard doesn't judge them, he has no right to judge Farmer and their unfortunate situation. He knows that Farmer's have grown up pretty quickly and now live in the Stardew Valley peacefully, away from those bad people. Just... if something happens, tell Jadu, okay? He'll try to help them and their siblings, not wanting to see his friend in trouble.
So that's what Farmer meant by telling Lance that they and their family came here "to escape their past"... He's genuinely sorry that his dear friend and fellow adventurer had to deal with the mob out of choice. But also infinitely glad that they were able to finally break the chains and escape with the rest of their family. The galant adventurer doesn't judge them for their past, knowing full well that they were trying to survive and protect the people they holds dear. Lance doesn't visit the Stardew Valley that often, but if he spots someone suspicious, he will warn them and stop the criminal.

Hello Mousey!! 👋 I hope you're well! University kicked my ass for a whole year so I couldn't play much Stardew, but I managed to get in on the new Expanded update eee!
Since it's been a long time I played I wasn't sure if this was part of the new update or not, but I married Lance in this save file and I went over to the Highlands during his shifts. I slept in that tiny bed with him, and the next day the dialogue was so cute!!! 😭
I saw two variations so far like "yawn... five more minutes", he didnt even move until i left the room at 8am, all the while still in bed, closing his eyes and peeking at me from time to time 🤣 Oh and there was also "good morning, it was a little cramped but we made it work" lmao this man is so adorable

Oh, now Lance has these dialogues in Highlands as well???? 👀💕
The dialogue text itself is familiar to me, as it's the same thing Lance said in the morning in bed if Lance stayed overnight in the guest room at The First Slash Clan when he arrived at Fable Reef too. I used to visit every Wednesday (or was it certain days? Can't remember anymore, I've only just returned to SVE again) to read his dialogues. His "five more minutes..." is the cutest 🥺 Lance wants to lie in a warm bed with a loved one, as rest is rare for adventurers, I gather, and he takes advantage of any moment.
And since he has those dialogues in Highlands as well, that means after the wedding I'll start visiting his tower every Sunday.... 👀👀👀
