 लोग एक ऐसी dish चाहते थे, जो वह किसी भी टाइम खा सकें और वो टेस्टी होने के साथ-साथ फीलिंग भी हो| तो ऐसा कहा जाता है कि दिल्ली के पहाड़गंज में सबसे पहले किसी ने छोले भटूरे बनाए और क्योंकि हम भारतीयों को मसालेदार पसंद आता है तो इसकी जोड़ी टेस्टी छोले के साथ  सुपरहिट हो गई|

 छोले भटूरे के छोले के साथ कई तरह के प्ले किए जा सकते हैं| जैसे अमृतसर ने छोले को एक नया आयाम दिया और रावलपिंडी जो आज के पाकिस्तान में है वहां के मशहूर पिंडी छोले एक अलग ही धुन सुनाते हैं| पंजाब में कई जगह चिकन छोले भी बनाए जाते हैं| क्योंकि छोले के taste डेवलपमेंट में इतना स्कोप है कि अलग-अलग कम्युनिटी इसे अपने हिसाब से twist दे सकती है|
