Vegan Veggie Burgers

VEGAN VEGGIE BURGERS
Ingredients
600g pumpkin chopped into cubes
1 can lentils
4 shallots (spring onion) chopped thinly
120g rolled oats
2tbsp Paprika
Salt & Pepper to taste
Olive oil spray/Coconut oil spray
Directions
Preheat your over to 200°c or  395°f line a baking tray with baking paper, spray with some oil & set aside
Put pumpkin, paprika, salt and pepper into bowl and rub all over umpkin to coat it with the spices (use more or less to taste) then transffer to bakin tray and bake in oven for 25-30 minutes until very tender, put into bowl, mush up with a fork and let cool
Add lentils, shallots &oats using your hands mush everything together and make 8 round burger patties. (i lined another tray, put the ready patties on it and threw in the fridge for 15-20 minutes to make life easier so that they’re not so soft)
Spray prying pan with some oil, cook over medium heat around 3-5 minutes each side or until cooked through
Nutritional Info Serves 8 Cal 166 Fat 6.8g Protein 5g Carbs 19.3g
Add macros if you’re going to add sauce/bread/etc I like them on their own with some salad, so yum! Finally had some ideas to use that juant pumpkin I got from the market!
Daily Fitspo Blog 🌷 Update: If the patties are too sloppy just sift some flour (I used gluten free flour) over each side before frying-makes them easier to flip and eat

Cream layer: 300g cashews The juice of 1 lime 160g soy yogurt 1 Tbs psyllium husks (optional) 20g / 2 Tbs rice sirup 15-20 vanilla drops (sweetened) Beetroot powder (pink) , black goji berry powder (purple) and blue spirulina from @unicornsuperfoods | save 15% with FRUITFAIRY15 💙💜💗 . Bottom layer: 75g almonds 75g buckwheat (flakes or whole) A pinch of salt 3 Tbs coconut butter 2 Tbs coconut oil 120g dates 1-2 Tbs oat milk, as needed . > Blend bottom layer ingredients until you have a sticky dough-like texture. Press into a round baking pan with wet fingers. Then blend ingredients for the second layer (the cream) except for the @unicornsuperfoods powders. Separate the cream into 3 parts, mix in 1 tsp of each of the powders (either blend or mix well) and spread on top of the cake bottom. Swirl carefully with a spoon to mix the 3 colours. Freeze for at least 6 hours and defrost for 30-60 minutes before eating. 🍰💙❄️ Tastes best with some berries or other fresh fruit on top. 🍓🍇👌🏼

In September I didn’t reach my monthly goal. I didn’t make it to 202lb. But I didn’t give up.
Now, October 6, I have reached that goal with plenty of time in the month to meet October’s goal (199lb) as well.
I believe I can do it. If I put my mind to it and I stay aware of my choices and actions.
Here we go October.
