This past week we took a day trip to Peoria Arizona. This picture is what most people probably imagine when you say, “I’m from Arizona”. Did you know when a saguaro cactus reaches 95-100 years of age it can produce its first arm? Do you have any fun experiences with a cactus you would like to share? (Comment below)

Do you like pound cake? This recipe is simple and perfect for get togethers among family and friends! There are many variations of simple pound cake recipes. This however is one for the books! It’s perfect for any season. If you decide to give this recipe a try, let me know In the comments below! I love to hear everyone’s feedback on one of my family’s favorites!
Lemon Cranberry Poundcake 🍋
2 ½ cups fresh cranberries (You can also use frozen) 2 tbsp lemon, zest 3 eggs 2 tbsp lemon juice (I usually use a whole lemon, even if there’s extra juice) 2 tsp baking powder 2 ½ cups flower ( kings flour is the best however you can use anything you have in your pantry) 1 tsp salt 1 ¾ cup sugar 1 tsp vanilla 1 cup butter ¾ cup buttermilk (I’ll use regular milk with about 1 tbsp red wine vinegar)
Preheat & Bake @ 350 degrees In a large bowl combine butter, sugar and lemon zest. (All should be at room temperature) Beat contents for 2-3 minuets.
Add eggs one at a time. Beat well between each one. (Eggs should be at room temperature)
Add lemon juice and vanilla. Beat for one minute or until combine.
Add dry ingredients in a separate bowl. Combine dry ingredients with wet ingredients alternating with your ¾ cup buttermilk. Beat until contents are fully combine.
Lastly, fold in cranberries and distributed into your desired pans. (I prefer 2 large bread pans)
Bake @ 350 degrees 50-60 minuets
If you are a freezer queen like myself be sure to wrap well in plastic before freezing. You can enjoy this recipe all month long!

Do you enjoy adventures and foods that leave you wanting more? I certainly do. Follow me and discover the many enjoyments of living in Arizona as I travel around the state.
I grew up in a small town and people always ask, “whats there to do in such a small town?”. There are countless things to do, if you are willing to be creative.
If you like to travel but don’t have the time or money, like myself, remember you can always enjoy what’s around you. Arizona is full of unique places if you just take the time to look. All you need is a tank of gas and a open mind.
