I did keto for a few months in 2011 and lost around 25lbs, which absolutely astounded me. I fell off and ended up gaining most of the weight back. I started keto again on February 2015 and have been going strong! I've powered through a plateau and stuck with it. :) I'm hoping to get to my ultimate goal weight for cutting, then start doing strength training. ❤️ THIS IS A SIDE BLOG. Made a fathead calzone for the first time and it came out wayyy better than I expected! I thought it was gonna fall apart or something but it worked so well!
With cucumber and romaine salad with creamy Italian dressing.
Gonna save some calzone for lunch tomorrow. Made me think of that Parks n Rec joke about the Low Cal Calzone Zone 😂

Salmon Patties 2 small cans of salmon (drained) 8 tbsp almond flour 1 egg 1-2 tbsp coconut oil Salt and Pepper
Mix all the ingredients, minus the oil, in a bowl. Then shape into patties and fry in coconut oil about 2 minutes per side. Sprinkle with salt and serve with tartar sauce or pickle juice.

Afternoon run, lunch and an evening shopping trip on an empty stomach! 😂😂
The run was very tiring and my body feels kind of tight. I got it done in 2 pieces as I needed to stop and take a quick break in the middle of the miles. 💪😊
Las night we went to the store and bought stuff for lunches! We were both hungry and the baby wanted ice cream sandwiches so we filled our little basket to the max haha!😂😆

Low carb sour cream beef bake 😍😍😍😍😍🤘👌👍 ________________ INGREDIENTS:
12oz cauliflower rice 1.5lb lean ground beef 15oz can of tomato sauce (I make sure no sugar is added) ½ C sour cream (I use full fat) 1 ¼ C cottage cheese (I use full fat) 2 C shredded cheddar cheese (I shred my own) ½ C sliced green onions 1 tsp salt 1 tsp ground black pepper
DIRECTIONS:
Preheat oven to 350.Place the cauliflower rice in a 2.5 quart baking dish. Microwave 4-5 minutes or until tender but not mushy. After cooking, set aside (leave in the casserole dish).In a large skillet or pot, cook the ground beef over medium high heat until browned, 7-10 minutes. Drain and stir in the tomato sauce, salt and pepper.In a mixing bowl, stir together the cottage cheese and sour cream. Mix in the sliced green onions.Pour the sour cream mixture into the cauliflower rice (that’s in the casserole dish) and mix well.Pour half of the beef mixture over the cauliflower rice mixture. Spread with the back of a spoon to even. Top with 1 C of the cheddar cheese.Repeat with the remaining beef mixture and cheese, ending with the cheese.Bake at 350 for 20 minutes.
