My Initial Waitor Lines
Good Evening My name is Manuel, I will be your waiter for your palate cleanser this evening.
Has everything been alright so far?
Great.
So tonight we will be serving you 3 slices of Hawkes Bay Granny Smith Drizzled with Lemon with a side of Indian tonic water.
Re-grafted from 180ha of orchards to new high colour varieties to provide our customers with a more comprehensive choice of apples.

In 800 kilometres of reflective foil in order to grow more high profit, high colour varieties ensuring higher pack outs and consistent availability.
To ensure the minimum of human intervention in its growing practices, they opt instead for biological pest and disease management, making our apples almost indistinguishable from organic fruit.
The myer lemons we are using are bred and grown in Hawkes Bay as a hybrid of the citrus and meyeri class to produce a much brighter and sweeter version of the citron and mandarin/pomelo cross.
You’ll be pleased to know that the quinine in your “Indian” Tonic water today has been imported from the cinchona orchards of Peru where they have selectively bred to produce more bark and thus diluted and more chemically pure Quinine bisulphate.

We wanted the character of the waitor to help navigate the course and also help ground the idea that initally the course exists in a normal world.

When discusiing with sven, the idea of the romance behind apples and we view them seemed strong, and the aim with the course now was to shed the light f the difference between how apples are percieved and what actually happens.

We settled on using glass plates as they let the apples shine through the most and also allowed any residue tonic water to shine well.

We decided that apple sticks were not easierst to eat in the quantity we wanted but also presented nicely and soaked easily and quickly in the tonic water.
