I don't know anything about milking but what do you like to do with the products of milling? Like, I know we mill things into flour, but that's the extent of my knowledge.

Milling wheat into flour is only one of the many many uses that mills have had over time. Mills have served a function for many years, starting when the ancient Romans built the first watermills, pretty much until the industrial revolution took off, so until like 1800-1850?
Pretty much any type of production that needed a continuous movement, could be powered by a mill, whether it was the millstones grinding flour or hammers flattening metals, such as copper to protect ships from the salty seawater, making paper or pressing oils from seeds or churning butter. Possibilities weren't exactly endless, but there's a tonne of uses and processes.
Some farmers who had their own watermill, even used it to run their washing 'machines' for their families or whatever.
So personally at 'my' mill, we grind wheats, corn and dried beans into feed for animals and we power a saw to saw planks that we can use to repair our mill or whatever. We can also attach a whetstone to sharpen knives or scissors, but we have yet to tackle that project.
