One of those week-long ship celebration challenges where day 1 you write 100 words (an exact drabble), day 2 is 200 words, day 3 is 300 words, etc etc day 7 is 700 you get the idea. Can be separate little fics for each day, or, even more exciting, they can each be chapters for one fic with a total of 2,800 words, which is still a pretty short fic all things told, but could be interesting. Extra hard challenge mode would be doing the chaptered version but you START with 700 words and go down by 100 each day. Would make for a Very Different reading experience. Just a concept.
