Jacob said Louis is a snob, What does he mean by that?

He means exactly that.

Louis is a snob. He is arrogant. He sees himself as being "above" others. He loves money. He loves luxury. He loves capitalism.

That goes for both human Louis and vampire Louis, and his hubris is why he even resists being a vampire in the first place. It's not that he's so good and moral and loves humanity. No, as Jacob said, Louis actually hates humans and sees himself as "above" that.

No, he resists his vampire nature, because he feels guilty over actually liking that nature. He loves the blood. He loves the violence. He loves the bloodlust, yet he feels he shouldn't. Therefore, he holds himself back and deprives himself as a form of self-flagellation, and that goes hand-in-hand with his arrogance and snobbery.

It is a canon character trait, and I'm glad the show has picked it up, because Jacob makes it endearing and likable and charming. Jacob's Louis wears it like a badge of honor, whereas book Louis wore it like a cilice.
