Spicy Beef Vindaloo
Vindaloo Spice Mix: 2 tbsp cumin 1 tbsp cayenne pepper 1 tbsp turmeric 1 tbsp coriander seed 1 tbsp black pepper 1 tbsp yellow mustard seed 1 tbsp salt 1 tsp ground ginger 1 tsp cinnamon 6 tbsp white vinegar 2 tbsp water
The Rest: 1kg Beef Spare Ribs 1-2 Red Onions, cut into wedges 2 tbsp Cornflour 1 - 1.5 cups Beef Stock
Optional: Brown Rice Homemade (or store bought) flat bread Fresh coriander for something green
1. Combine all dry spice mix ingredients together and lightly toast until fragrant. Add the vinegar and water to form a light paste.
2. In a bowl, cover the ribs in the spice paste. Let marinate in the fridge for at least 4 hours.
3. Once marinated, place the ribs in a oven safe dish. Mix the cornflour and beef stock together and add to the dish along with the wedges of onion. Cover with aluminium foil or lid and cook in the oven for 2 hours at 180° celsius.
4. Enjoy with rice, flat bread and plenty of yogurt.
Note: Preheat oven at least 10 minutes before placing the ribs in. If your oven’s like mine, crank it up as far as it’ll go then drop the temp when you put food in. Another Note: Tastes amazing the next day for lunch. One More: I marinated for 6ish hours and added the onions and stock mix half way through cooking because I forgot at the start. Would taste better from the start.
