Crunchy Citrus Grain Bowl - [ ] 4 eggs - [ ] 3/4 Cup Farro - [ ] 5 Cloves Garlic - [ ] 1/2 White onion, minced - [ ] 2 Inch Ginger, grated - [ ] 2 Mini Cucumbers, thinly sliced - [ ] 1 Radish Thinly Sliced - [ ] 1 Lime, juiced - [ ] 2 t Curry powder - [ ] 1 T mustard powder - [ ]Salt to taste Boil small pot of water, salt heavily, cook Farro for ~8 minutes, until al dente ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ In small pan, sauté onion and garlic until garlic edges brown. Remove from heat, add curry, mustard, ginger, mix and let cool 2-3 minutes. Add 80% of cucumber and radish to pan. Mix, salt and add to Farro and add lime juice. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Fry eggs in pan (or poach), serve on top of Farro and garnish with remaining veggies. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ #healthyish #vegetarian #quickdinner #mealprep

wild mushroom risotto
3 boxes low-sodium chicken stock
+ 1 pkg dried chanterelle mushrooms <left to simmer in stock>⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 T olive oil
6 cloves garlic  <thinly sliced>
+ 1 leek <thinly sliced, sauce unit clear and fragrant>
2 cups arborio rice <saute a few more minutes>
deglaze with 1 cup white wine
<once almost all wine is absorbed begin adding labels of stock>
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
slice 1.5 lbs of wild mushroom // this batch was portobello, shiitake, chanterelle
<saute mushrooms in 1/4 cup butter and keep to the side>
<shave lots of parmesan. sprinkle enough to coat the bottom of the pan. allow enough time for it to melt and pick up a little colour then remove from heat and give it a minute to stiffen up before dropping it over the bottom of a cup or bowl>

1/2 bunch parsley <finely chopped, to sprinkle in at the end>
 //this batch was for 8 people and we used pretty close to 4 cups parm, so aprox 1/2 cup each but factor in the size of the pan.

//a touch more salt, needs more herbs more parsley maybe some sage, double the leeks and garlic, could use a little more texture, thinner parmesan crackers, try with subbing half the amount of wine with vermouth

spicy pickled carrot salad 
w/ ginger lime vinaigrette ⠀⠀⠀
⠀⠀ ⠀⠀⠀⠀⠀ 
1 xl clove garlic <smashed> 
 2 cloves garlic <finely grated>   
4 t ginger <finely grated>  
2 limes <juiced and zested>  
5 T olive oil   
3 t salt 
<shake mixture in mason jar to combine. 
allow to sit ten minutes for garlic to infuse> ⠀⠀⠀⠀⠀ ⠀⠀⠀ ⠀⠀⠀⠀⠀ ⠀⠀ ⠀

4 radishes <shaved on mandolin>  
1/2 cup pickled carrots <roughly chopped>  
1.5 hungarian peppers <seeded and sliced>  
1 bunch cilantro <roughly chopped>  
1 pkg spinach ⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀ ⠀⠀⠀ ⠀⠀⠀⠀⠀ ⠀⠀⠀ ⠀⠀⠀ 
 // a little garlicy, slightly over-salted and too acidic with the lime and pickled carrots. nice amount of spice. ⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀ ⠀⠀⠀
