Phoebe's words on his blog about Jim's book "what also must be taking into account is that it was 'ghost' written by a 'New of The World' journalist, who most of you realize are able to create something scandalous out of what might have been quite innocent". So yes the book was manipulated.
Let me start off by stating the quote you have provided has been taken out of context from Phoebe’s blog. This is what was written in full:

To your concern about the co-writer, I understand it, as Phoebe has noted there is a tendency for people in the media to create a spin on things for entertainment, However, if you read the full quote you will see that while Phoebe was skeptical he does not suggest that Mercury & Me was manipulated to serve the interests of Tim Watts. He seems to have a skeptical view of ghost writing in general.
During the time in which this book was written Jim still was experiencing grief (the average person grieves for 3 to 5 years following the death of a loved one, but of course this can be longer). Therefore, I believe Tim was used to help Jim articulate his stories down onto paper. Jim was a strong willed man and he would’ve had ample opportunities to review what had been written.
Phoebe is quite a strong figure, as you would’ve noticed in the blog post I put above he had no issues calling people out on bullshit. He did not do that with Jim’s book at all.
In fact he did quite the opposite. His comments have helped validate a number of stories Jim shared in the book. Here are a few examples:
- Freddie was not overly fond of jewellry

Phoebe also confirmed this:

- Jim did give Freddie a ring on his birthday in 1986

Phoebe also mentioned the importance of the wedding band to Freddie:

- In arguments Freddie often acted on anger and often only later did he think about the consequences.

Phoebe also mentioned another instance of Freddie’s temper when they argued:

- One of the only points of confusion is whether Freddie broke a bone.
During one of his moments Jim thoughts he heard a bone break. But he wasn’t sure. For obvious reasons I’m not going to post the quote because it’s extremely distressing to read. I would advise reading the last few chapters if your interested in Freddie’s final years.
Phoebe on his blog has stated the following:

To finish I’m going to state this; whether the text was ghost written or co-written the ideas contained within this text are entirely Jim’s. This is exactly what Phoebe affirmed (see first photo).
At the end of the day I think we can agree that the writing of this book as long aa has helped us learn a lot more about Freddie’s personality.
I think this has allowed us to feel more connected to his story. I certainly feel this way.
