Fireball apple cake
Fireball Glazed Apple Cake Ingredients For the Apple Cake: 1 1/2 cups vegetable oil 2 cups granulated sugar 3 large eggs, at room temperature 1 1/2 tsp. vanilla extract 3 cups all-purpose flour 1 tsp. salt 1 tsp. baking soda ½ tsp. freshly ground nutmeg 1 tsp. ground cinnamon 3 Pink Lady Apples, peeled and shredded For the Fireball Glaze: 4oz. unsalted butter 1 cup brown sugar, firmly packed ½ tsp. vanilla extract ¼ cup Fireball Whiskey ¼ cup heavy whipping cream Instructions For the cake: Preheat oven to 325 ° F. Beat the oil, sugar and eggs with electric mixer until the mixture becomes light and fluffy, and pale yellow in color. Add in vanilla extract and beat another 30 seconds. Add the flour, baking soda, salt, cinnamon, and nutmeg to the bowl. With the mixer on low, mix until the ingredients just come together. Add the shredded apples and continue mixing until the ingredients are fully incorporated. Pour batter into 10-x-10-inch baking pan. If you don’t have one use a 9-x-13-inch pan but your baking time will be decreased. Bake at 325 degrees for 40-45 or until golden brown and a wooden skewer inserted comes out clean. Let cool on a wire rack. Wait until cool to glaze. For the glaze: In a medium saucepan bring the butter, brown sugar, vanilla extract, heavy cream, and Fireball to a rolling boil. Poke holes in the cake using a wooden skewer. Not as many holes as say a poke cake but enough that it will soak into the cake. Once boiling, pour over the cooled cake. Let the cake cool again completely, the glaze will get a little crust to it…you want that.

Day 6 & 7: Caffiene Free
So Day 6th was spent hiking to the top of Spencers Butte above the fog and grey day we had and into the sun! :)
Day 7 is going to be a slow day on the couch before school starts tomorrow . Not really missing it yet still missing it. Sigh.
The decision do a have small cup of tea tomorrow? or keep going caffeine free?

Reboot
Ok my plans fell out the window and its no ones fault but my own. So here goes the reboot, trying out Zombies Run 5k app to try and motivate myself. Decided to start with the 5k because I fell hard of the fitness wagon this time and apparently bumped my head! Eating crap, not drinking water, No exercise.... Yep gaining weight, feeling unhealthy, just ugh! So everyday I run (the plan) is to post a photo and check in. The Zombie Run app is 3 days a week. I picked today to start again lol and it's raining like there is no tomorrow. We aren't gonna let that stop us are we? Well.....

A new week...
Okay, welcome to September when the kids go back to school. Things are just heating up schedule wise, so of course, I am eating all my anxiety! Well back on the wagon (again)... posting weigh in on Wed. Using Mi Coach to schedule workouts and my fitness pal to keep track of calories! Dang can you believe that the other app I was using freaked out and told me to eat 400 calories A DAY! WTH?!

hey I was considering going to lane community college but I was wondering how hard it is to get classes there? Would I have troubles graduating in two years?
It's not to hard and it's a very friendly and supportive environment!! You should apply and go for it! You can do it in two years if your ready to go full time... life can get in the way but don't let it stop you.

Elmer and Shorty
When I was about 4 my brothers blew up the kitchen. I was playing in the yard when the windows exploded and fire spilled out. I remember the feeling of sharp rocks on my bare feet as I ran to Shorty's house. I remember Shorty answering the door and what I said "can I have Orange Juice?" Shorty's wife used to make the best orange juice! Elmer and Shorty watched me drink the whole pitcher of OJ an than I told them "the house is on fire" one of them asked me where the boys were and I shrugged and asked for more OJ. Elmer sat with me while Shorty went to check on the boys, who were fine. Shorty passed when I was still a kid and I hadn't seen Elmer in years. At my oldest sisters wedding Elmer walks up to me and asks with a laugh "want some Orange juice?" I laughed and hugged him. This week Elmer passed away at 94 yrs old.
