Bistek Tagalog ala Nanay Lydia One of my family's go-to-meal is Nanay Lydia's (Grandma) Bistek Tagalog. Nanay passed down her recipe to her Siblings and to us Grandchildrens before she left us. It is not only a blessing that we learned her way of cooking the classic bistek tagalog but also a gift that we can share to many people. Nanay's Bistek is so simple yet packed with heartfelt flavor. With its cheap and readily available ingredients that you can buy in the wet market or the supermarket, you can create a wonderful Bistek Tagalog. The Ingredients are: 1/2 kilo of Pork Cutlets 3/4 cup of Soy Sauce 4 tbsp of Brown Sugar 1/4 cup of Vinegar Pepper (to taste) 8 pcs of Calamnsi 1/2 cup of Water 8 pcs of Red Onion Oil Procedure: *The key to creating the best Bistek Tagalog is the choice of pork and a good tasting vinegar and soy sauce. An equal amount of fat and meat and a thin cut of the pork* 1. Cut the pork into the desired size. 2. Marinade the pork with Soy Sauce, Calamansi and a tbsp of brown sugar. (30 mins) 3. Cut the onion horizontally to achieve the circular shape. Set aside. 4. Heat a pan with oil and fry the marinated pork. Set aside. 5. In the same pan, sautee the onions. Set aside. 6. In the same pan, put the marinade of the pork and add 1/4 cup of vinegar and add water until desired taste. 7. Add the pork in the marinade sauce and cook until tender. 8. Add the cooked onions while plating. 9. Serve & enjoy! Noj Santos 3H4
