Potato Leek & Kale Soup Recipe

Ingredients:
4 lbs of potatoes
3 leeks
3 medium yellow onions
1 bunch of kale
6 chicken bouillon cubes
1/3 cup unsalted butter
black pepper to taste
5 Hot Italian Beyond Sausages
water
Steps:
Fill a large pot about half way with cold water, enough to immerse the potatoes. Peel and roughly dice the potatoes putting them in the pot as you go so they don't start to brown and can leach out some excess starch as you work.
Change the water if it looks rather starchy or has collected debris, but if it's relatively clear just pour off any excess water so the potatoes are just covered. Boil until cooked.
While the potatoes are boiling roughly chop onions and leeks and add to a pan with butter on medium heat. Cook covered, stirring occasionally, until wilted and translucent.
Once both are cooked add the onions and leeks to the pot with the potatoes. Blend with immersion blender until smooth. Add water if needed to reach to desired consistency.
Add chicken bouillon and black pepper to taste.
Chop kale and add to pot. Heat on low, stirring occasionally until kale is wilted to your liking.
While kale is cooking, pan-fry sausages, then cut into bite-sized pieces and add to pot.
Enjoy

My sister's boyfriend, whom we live with, has a cold and requested my potato kale soup yesterday. And he's a bit of a picky eater so it's kind of an honour that he's let my soup enter his dinner rotation. So I made the soup with my sister yesterday and it was delicious. I think I've just about perfected it. Sweating the onions and leeks in butter really makes it. Might try to write down the recipe and post it later.

This hearty and comforting soup is based on the flavors of traditional cabbage rolls. It is cooked to perfection in a crockpot, making it easy to make a tasty meal.
Ingredients: 1 lb ground beef. 1 onion, diced. 2 cloves garlic, minced. 1 medium cabbage, chopped. 1 can 28 oz diced tomatoes, undrained. 1 can 8 oz tomato sauce. 4 cups beef broth. 1 cup long-grain rice. 1 teaspoon dried oregano. 1 teaspoon dried basil. 1/2 teaspoon thyme. Salt and pepper to taste.
Instructions: Boil the ground beef with chopped onions and garlic in a pan. Get rid of extra fat. Put the cooked beef mixture in the crock pot. Put in the crockpot tomato sauce, beef broth, rice, oregano, basil, thyme, salt, and pepper. Also add chopped cabbage. Mix things together well. Put the lid on top and set the heat to low. Cook for 6 to 8 hours, or until the cabbage is soft and the flavors are well mixed. If you need to, change the seasonings before serving. Enjoy your tasty Crock Pot Cabbage Roll Soup while it's still hot!

Hey everyone!! I just wanted to thank you all for participating in my soupcore month of soups last month! It was a pleasure answering all of your soup questions. I unfortunately wasn’t able to get to all of them, so sorry! They were all wonderful though and it means so much that you participated.
Here are all of the soup rats in their glory!! People have asked about stickers and prints. Because of tariffs I’m holding off on stickers for now but you can get prints on my inprnt. I ordered copies for myself to test the quality and I am quite pleased! Thanks again! This project was a ton of work but I’m so happy the soup rats now exist in the world 💖🥫🐀
