There is something so tragiclly symbolic about the greatest of elven smiths choosing to cut off his thumb in order to escape the evil he inadvertently welcomed in. His hands, second to his mind (which Sauron has already destroyed), are his greatest tools. It's not just an escape attempt, it's Celebrimbor choosing to relinquish ever being able to craft again, even if he were to survive Sauron's torture. His grandfather crafted the Silmarils, which for centuries brought war and strife to Middle Earth. But Celebrimbor, the last heir of Feanor, choose to never be able to craft again in favor of the good of Middle Earth.
