Since no one else has done it, I will be making a breakdown of the saddles, fitting, and training done by the Targaryens in HOTD from an equestrian's perspective.

The first step they take in getting the dragons ready for their saddles and commands is when they’re young enough to start eating goats, sheep, etc. In season 1 you can see the keepers leading Vermax up into the dragon pit by chains pierced into his back that eventually the saddle will be hooked onto.

At this size, they’re still too small for the saddle and riding but it helps them get used to having something pierced in their skin while practicing obeying vocal commands from their rider.

When they’re finally big enough to ride, the rein hooks are put in their necks, and a saddle (depending on the rider's comfort) is designed and fitted along with a breast collar

Since they grow so big and the riders need to be able to ride off at any moment, the saddle becomes permanent until they die.

When they get to a certain size, getting up and down takes way more effort than when the dragon is young. Syrax is still small enough to where Rhaenyra can still climb up her wings to get on and off but if you look closely at Caraxes collar you can see long strings for Daemon to grab onto and Meleys has raised ridges on her’s to be used like a ladder Rhaenys can use to climb up from the ground.

In terms of how they’re kept, we know some dragons like horses prefer to stay outside while others don’t mind being chained down in the caves. We know that Caraxes stays outside along with Vhagar who was too big for any dragon pit and nested on the coast until Laena claimed and flew her over to Driftmark.

I would think that Meleys and Seasmoke preferred being outsided since they’re not dragon pits on Driftmark but occasionally Meleys is ok staying in the caves for when Rhaenys stays at Kings Landing or Dragonstone.

Many people think it’s cruel about the dragons being chained up but the main reason they did that was to keep them from eating all of the farmer's flocks. I think that was mostly done in Kings Landing where there were more people but since the caves in Dragonstone are warm from it being on a volcano, the dragons naturally stay in the caves on their own and come up to the mounting block when called.

When learning how to fly thier dragons, I think mostly the parents show the kids while riding thier dragons.

Rhaenys most likely let Laenor and Leana ride on Meleys saddle when they were young, so they could see how she controlled and gave her orders while also getting them used to being up so high.

Daemon probably took Rhaenyra up on Caraxes before she started riding Syrax, which might be why she started riding so young at only 7 years old and she did the same thing with Jace and Luke on Syrax.

I know this is his last game as a shark, and I don't know where he's going. But I think his time in San Jose did him wonders, because there's light back in his eyes that was gone in Denver. So thanks, sharks brethren, for taking care of Georgie ❤️ I hope he finds somewhere to play to his best, and I hope the sharks rebuild with the pieces they have and get to the playoffs soon.
