Gourd‐shaped rice with ground sesame, homemade Ganmodoki (deep-fried tofu mixed with thinly sliced vegetables), sautéed scallops with soysauce and butter, sautéed Matcha flavoured Nama-fu (gluten cake).
Gourd symbolizes both summer and good luck in Japan.

へぎそば // Hegi Soba
Hegi soba is a local specialty of Niigata. They’re known not only for the high-quality buckwheat used, but bonding agent in the dough is funori seaweed rather than a flour, which gives it a certain sleekness. It’s always served in bite-sized coils on a special plate called a hegi.
