Melt the unsalted butter, brown sugar, corn syrup, and salt in a saucepan over medium heat, stirring constantly until smooth and well combined. After taking the mixture off the stove, add the peppermint extract and stir. Once the popcorn has popped, pour the mixture over it and gently toss to coat evenly. Place the popcorn on a baking sheet that has been lined, then allow it to cool for a few minutes. Ingredients: 1 lb fresh mussels, cleaned and debearded. 2 tbsp olive oil. 3 cloves garlic, minced. 1/4 tsp red pepper flakes. 1/2 cup dry white wine. 1 cup marinara sauce. Salt and pepper to taste. 2 tbsp chopped fresh parsley, for garnish.
Instructions: Warm up the olive oil in a big pan over medium-low heat. Add the red pepper flakes and minced garlic. Saut for one minute, until the garlic smells good. Clean the mussels and add them to the pan. Add the garlic and pepper flakes and stir to coat. Add the marinara sauce and white wine. Add pepper and salt. Put the lid on the pan and cook for 5 to 7 minutes, or until the mussels open up. Throw away any mussels that won't open. Add chopped parsley as a garnish before serving.

Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1/4 cup psyllium husk powder. 1 tablespoon baking powder. 1 teaspoon salt. 1/2 cup olive oil. 1/2 cup warm water. 2 eggs. 2 cloves garlic, minced. 2 tablespoons fresh rosemary, chopped. 1 tablespoon dried oregano. 1 tablespoon dried thyme. Sea salt flakes, for topping.
Instructions: Before you start cooking, heat the oven to 375F 190C. Put cooking spray on a baking sheet or put parchment paper on it. Put almond flour, coconut flour, psyllium husk powder, baking powder, and salt in a large bowl. Mix in the eggs, garlic that has been minced, rosemary that has been chopped, oregano that has been dried, and thyme that has been dried. Mix until everything is well mixed and a dough forms. Place the dough on the baking sheet that has been prepared. Spread the dough out into a rectangle shape with your hands. It should be about 1/2 inch thick. For the classic focaccia texture, use a sharp knife to make small cuts in the top of the dough. Pour olive oil over the dough and then sprinkle sea salt flakes on top. Before you put the focaccia in the oven, heat it up. Bake it for 20 to 25 minutes, or until it turns golden brown and feels firm. Take it out of the oven and let it cool down a bit before cutting it up and serving.

The traditional Australian treat, Anzac Biscuits, are made with plants in these Biscuits. The outside is crunchy and the inside is chewy. They taste great with coconut.
Ingredients: 1 cup rolled oats. 1 cup desiccated coconut. 1 cup all-purpose flour. 1 cup coconut sugar. 1/2 cup vegan butter, melted. 2 tablespoons maple syrup. 1 teaspoon baking soda. 2 tablespoons hot water.
Instructions: Preheat your oven to 160C 320F. In a large bowl, mix together the rolled oats, desiccated coconut, all-purpose flour, and coconut sugar. In a separate bowl, combine the melted vegan butter and maple syrup. In a small bowl, dissolve the baking soda in the hot water, then add it to the butter and maple syrup mixture. Pour the wet ingredients into the dry ingredients and mix until well combined. Roll tablespoons of the mixture into balls and place them on a lined baking tray, leaving space between each biscuit. Flatten each ball slightly with the back of a spoon. Bake for 12-15 minutes or until golden brown. Remove from the oven and let cool on the baking tray for 5 minutes before transferring to a wire rack to cool completely.

Ingredients: 1.5 lbs boneless, skinless chicken breasts, cubed. 2 cans 15 oz each white beans, drained and rinsed. 1 onion, diced. 3 cloves garlic, minced. 1 red bell pepper, diced. 1 yellow bell pepper, diced. 1 can 14.5 oz diced tomatoes. 4 cups chicken broth. 1 teaspoon dried oregano. 1 teaspoon dried basil. 1/2 teaspoon dried thyme. Salt and pepper to taste. 2 cups fresh spinach leaves. 1/2 cup heavy cream. Grated Parmesan cheese for serving.
Instructions: Put olive oil, garlic, bell peppers, diced tomatoes, oregano, basil, thyme, salt, and pepper in a slow cooker. Add the chicken and white beans. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the chicken is fully cooked and the flavors are mixed. At the end of the cooking time, add heavy cream and fresh spinach leaves. Grate some Parmesan cheese on top and serve hot.

For Frosting:. 1/2 cup unsalted butter, melted. 1 cup packed brown sugar. 1/4 cup milk. 2 cups powdered sugar. 1 teaspoon vanilla extract.
Instructions: Spread the softened butter and brown sugar out in a large bowl. Mix them together until the smooth. Add the egg and vanilla extract and mix them in well. Mix the flour, baking powder, baking soda, and salt together in a different bowl. Slowly add the dry ingredients to the wet ones and mix them together until they are just combined. Put the dough in the fridge for at least an hour with the lid on. Warm the oven up to 350F 175C and put parchment paper on baking sheets. Roll the dough into 1-inch balls, and then coat each one with granulated sugar. Spread the dough balls out on the baking sheets that have been prepared, leaving about 2 inches of space between each one. After the oven is hot, bake for 8 to 10 minutes, or until the edges are just beginning to turn golden. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheets before moving them to a wire rack to cool all the way. Melt the butter and brown sugar in a saucepan over medium heat. Then, whisk the butter and sugar together. Bring it to a boil, then stir it all the time for two minutes and let it cook. Take it off the heat and add the milk while whisking. Add the powdered sugar slowly while whisking until the frosting is smooth and the consistency you want it to be. Add the vanilla extract and mix well. Cover the cookies with the brown sugar frosting after they have cooled. Wait until the frosting is set before you serve it.
