Dal Makhani-Frozen-RTE-Kingdom foods
Dal Makhani is a popular Indian dish made from black lentils (urad dal) and kidney beans (rajma) cooked in a rich and creamy tomato-based gravy. Freezing dal makhani can be a convenient way to have it available for later meals. Here's a basic recipe along with instructions on how to freeze it:
Ingredients:
1 cup black lentils (whole urad dal), soaked overnight
1/4 cup kidney beans (rajma), soaked overnight
3 cups water (for pressure cooking)
2 tablespoons ghee or butter
1 large onion, finely chopped
2 teaspoons ginger-garlic paste
2 teaspoons cumin powder
2 teaspoons coriander powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon garam masala
1/2 cup tomato puree
1/2 cup heavy cream
Salt to taste
Chopped cilantro (coriander leaves) for garnishing
Instructions:
Drain and rinse the soaked lentils and kidney beans. In a pressure cooker, combine the lentils, kidney beans, and 3 cups of water. Cook for about 15-20 minutes until they are soft and cooked through. You can also use canned beans for convenience.
In a separate pot or pan, heat the ghee or butter. Add chopped onions and saut茅 until they turn golden brown.
Add ginger-garlic paste and saut茅 for a minute until the raw smell disappears.
Add cumin powder, coriander powder, red chili powder, and garam masala. Saut茅 the spices for a couple of minutes to enhance their flavor.
Stir in the tomato puree and cook until the mixture starts to leave the sides of the pan and the oil begins to separate.
Add the cooked lentils and kidney beans to the tomato-spice mixture. Mix well and simmer for about 10-15 minutes, allowing the flavors to meld together.
Pour in the heavy cream and mix until the dal becomes creamy. Add salt to taste and adjust the spices if needed.
Allow the dal makhani to cool down to room temperature.
Freezing:
Once the dal makhani has cooled, transfer it to freezer-safe containers or freezer bags. Leave some space at the top for expansion during freezing.
Label the containers with the date and name of the dish for easy identification.
Place the containers in the freezer and freeze for up to 3 months.
Thawing and Reheating:
To thaw, transfer the frozen dal makhani from the freezer to the refrigerator and let it thaw overnight.
Once thawed, reheat the dal makhani in a pot on the stovetop over low-medium heat. You might need to add a splash of water or cream to adjust the consistency.
Stir occasionally and make sure it's heated through.
Garnish with chopped cilantro before serving.
