Blueberry Oat Pancakes
Om nom nom. That is literally all I can say. Adaption from @theintolerantgourmet
RECIPE 100g self raising flour 100g oats 200 ml rice milk Egg replacer (1Tbsp replacer whisked with 2 Tbsp water) 1 cup blueberries *fresh or frozen Coconut oil to cook
●Sift flour, add the rest of ingredients except blueberries and mix into a smooth batter ●Gently stir through blueberries ●Ladle onto a medium hot pan greased with coconut oil ●Cook for 2-3 mins each side ●Stack on a plate in a low oven till all cooked, this should be about 8 depending how big you male them! ●Serve with your favourite toppings and enjoy!
If giving to small children be careful as the blueberries retain their heat longer than the Pancake does and can be hot explosions in the mouth!

(VEGAN) Pancake Feast
I usually am jumping at Pancake day. Love me a Pancake. This year: DREADING IT. What the hell can I give a child allergic to egg and intolerant to milk 》•《
It’s actually really simple. And. She loved it. Happy babe. Happy mummy. Happy Pancake day.
RECIPE Adaption from Pippa Kendrick
150g self raising flour 300ml rice milk 1Tbsp egg replacer (whisked with 2 Tbsp water) 1Tbsp melted coconut oil (more for the frying pan)
●Sift flour into large bowl. ●Mix milk, egg replacer, oil together. ●Pour wet over flour and whisk together. ●Put a small amount of the oil in the pan and spoon in a large ladle, move pan around to make a large pancake. The mix should be wet enough to spread. Add a little more milk at a time if needed. ●Fry 2-3 mins each side. ●You should get about 6. Top with whatever you fancy and enjoy!
If you fancy something special. You could add either to the batter mix before cooking: ○One grated apple and 1tsp cinnamon ○One mashed banana and 1Tbsp cocoa powder

Ive been at my M&Ds today waiting for a delivery for them. I forgot and was late so rushed around like a mad woman to get me and babe there. But the highlight of my morning, after finally getting here, was babe getting into the compost bin and playing with the bin juice on the floor. When I picked up the bin all the egg shells fell out and I looked at her hands and they were all swollen. Washed her hands and face and gave some piriton and it's come down. Shes all fine now. She came and gave me a big hug. I love these big hugs she gives now. She then bit a chunk out of my neck. Now that's real love. Freaking bin juice!!! Avocado & Bacon Muffins
These are egg and dairy free but you can use ‘normal’ ingredients too. Perfect toddler (and adult!) food. Breakfast, lunch, dinner and on the go. Quick and easy to make.
INGREDIENTS
2 cups plain flour 4 tsp baking powder 1 Tbsp sugar * 1 Tbsp cayenne pepper or paprika 1 cup (100g) grated chedder **
75g Pure sunflower spread (or butter) 1Tbsp Organ egg replacer made with 4 Tbsp water (or 1 egg) 1 cup soya/rice milk drink (or milk) 1 avocado 3 rashers bacon (or any left over ham!)
RECIPE
Preheat oven to 200°c Grease or line a 12 cup muffin pan
Sieve flour, baking powder, sugar, cayenne/paprika into large bowl.
Chop bacon and fry (keep drippings!)
Melt Pure/butter, when cool enough add egg/replacer, milk/alternative, and any bacon drippings. Beat. (**Mix in cheese if using).
Chop avocado into small cubes. Add avocado and bacon to dry ingredients, toss to coat.
Add wet ingredients to dry and use a large metal spoon to gently fold together. The lighter the touch, the lighter the muffin. Don’t worry if you see a little unmixed flour.
Evenly fill each muffin cup. Sprinkle a pinch of cayenne/paprika on each muffin.
Bake for 12-15 mins depending on your oven and ingredients. Replacement and alternative ingredients tend to need a little more time. Keep you eye on them and they’ll be ready when the spring back when lightly pressed in the centre.
*you can omit the sugar if you want
