Low-Carb, Keto Egg and Sausage Casserole
Egg and Sausage Casseroles are perfect for breakfast and brunch. It is an easy make-ahead breakfast casserole loaded with cheese, bacon, sausage, and peppers. This dish is an excellent breakfast option for the keto, low-carb, and paleo diets.

I love baking this casserole when I am hosting brunch at my home, just combine all the ingredients, then throw the dish in the oven and get back to other chores until it is finished baking. The casserole is a great way to sneak nutritious veggies and protein in the diet.

I usually prepare it ahead in the evenings and bake in the next mornings for breakfast. Even the baked casserole stays well in the refrigerator for up to 3 – 4 days. Heat the casserole in the microwave oven until warm through and serve.

The best part about this casserole is you do not need to serve any sides!! Just a piece of casserole and fresh berries are filling and satisfying.

Tips for baking best egg and Sausage casseroles:
Eggs are the base of this casserole!! Beating eggs with spices until fluffy is a key step for the smooth textured casserole. Cooking the veggies before layering in the baking dish is important. Once I layered the raw veggies in the baking dish and casserole turned out soggy. The water content from the veggies oozes out while baking and messed up the casserole.

I added paprika in the eggs for a flavor and kick, you can leave that out. Baking the casserole in a low – medium heat 350 or 375 degrees are perfect for the rightly baked eggs and cheese. Don’t rush the baking time by increasing the heat of the oven that burns the cheese and veggies.

Sausage Egg Casserole Hash Browns:
Sausage egg casserole hash browns are just similar to this recipe. Except layering hash browns to the bottom of the baking dish then layer the veggies on the top of the hash browns then pour the beaten egg mixture over the vegetables and top with shredded cheese and crumbled bacon. Bake in a pre-heated 375 degrees oven for 40 – 45 minutes, until a knife inserted in the center and comes out clean. Let stand 8 to 10 minutes before cutting into pieces.

Smart Cooking Tips:
You can add mushrooms, spinach and green onions in this casserole.
You can swap the sausage for ham or leave it out.
You can leave out bacon too for a vegetarian option.

Ingredients
4 no Large Eggs
0.50 lb Breakfast Pork/Turkey Sausage
3 cups Vegetables Chopped
1 cup Shredded Cheddar Cheese
0.50 tsp Salt (to taste)
0.50 tsp Black Pepper Powder
0.25 cup Bacon Shredded
Instructions
Pre-heat the oven to 375 degrees and spray a baking dish with oil.
Heat a pan, add sausage, crumble into small pieces with a spatula and cook until the sausage color changes to brown. Add chopped vegetables and saute until the vegetables become soft. Drain on the paper towels and set aside.
Beat the eggs, salt, and black pepper powder together until fluffy.
Layer the baking dish with sausage and veggies mixture evenly, then pour the eggs slowly all over the sausage mixture, then spread shredded cheese and top with crumbled bacon.
Bake in a pre-heated 375 degrees oven for 30 – 35 minutes until a knife inserted in the center and comes out clean. Let the casserole stand for 10 minutes before cutting into small pieces.

What do you need to make Disney Dole Whip at home?
Frozen Pineapple Chunks
Coconut Milk or Almond Milk
Lemon Juice
Sugar (optional) depending on the sweetness of your pineapple

Frozen pineapple chunks are easily available in many retailers. However, fresh pineapples are available all throughout the year. Especially, the pineapples that you get in the summer are more flavorful and sweet comparatively. My family loves pineapple, so I buy 3 – 4 pineapples at my local grocery store, cut them into smaller chunks and store them in a freezer for the delicious treats in the summer.
I used thick full fat coconut milk in this recipe, you could use almond milk as well. While blending add the coconut milk first in the blender jar then add the frozen pineapple chunks that help to blend without getting stuck. Though you may have to stop the blender in between and give a mix using a spatula for a creamy texture Pineapple whip. I used my Blendtec blender it did the best job for me!!

Instructions
Bake McCain ® seasoned curly potato fries according to the package directions.
For Preparing Chili: In a pan, heat oil, add chopped onion and cook until the onion becomes soft.
Add ground beef and stir fry until the color changes to brown.
Add red chili powder, coriander powder, salt, cumin powder and stir fry for 2 – 3 minutes.
Add chopped tomatoes and cook until the tomatoes become soft and mushy. Ground beef chili is ready.
For Chili Cheese Fries: Layer the baked curly potato fries with chili, shredded cheese, jalapeno and bake for another 2 – 3 minutes until the cheese melts.

The Zibelemärit or Onion Market is the most significant traditional food festival in Switzerland. Every year, on the fourth Monday of November, farmers head to the Swiss capital with more than 50 tons of onions and garlic in artistically woven braids.
Moreover, as the name suggests all the dishes contain onions; such as onion tarts (Zibelechueche), cheese quiche (Käsewehe), onion sausages and onion soups. The highlight of this festival is the confetti war which begins at 4 p.m.

How to safely dispose of unused medicines

April 27th, 2019, Saturday is a National Prescription Drug Take-Back Day. I am grateful for this opportunity to foster awareness about an opioid crisis to keep our loved ones and community safe by disposing of the unused medicines properly.
According to Drug Abuse.gov, 18 million people in the U.S. over the age of 12 have misused medications at least once in the past year. According to CDC.gov, 192 Americans die every day from a drug overdose.

As a mom, I look to minimize the risk at home in all possible ways. Storing the medications safely from little ones is challenging at times. Little kids are curious to the colorful capsules and they try to imitate parents. I store the medications on the top shelves that are secured with a child lock. However, I never cared about properly disposing of medications until I become a witness in my own family.

Last year, in April, while I was busy cleaning the home for my son’s birthday party. I found a few expired medications on the shelves and sorting out the one that goes to the trash. In between, I heard my phone ringing and got to attend the call. My curious little buddy stuffed his mouth with a hand full of capsules.

I could manage to take out some of the capsules from his mouth though some passed into his stomach. Immediately I reached out a poison control and fortunately, the help arrived on time and my son was treated immediately. I never ever forget that moment in my life. It was the scariest moment that happened in my life so far. After this incident, I started disposing of the expired and unused medications promptly.

Drug Disposal Receptacle
A safe way to dispose of unused medications:
Initially, I started disposing of the unused medications, by flushing down in the toilet or throwing in the garbage. Recently, I came to know that these forms of disposing medications create damage to our environment. According to the Associated Press, 46 million Americans are exposed to trace amounts of medications in their drinking water.

There are many things that I cannot do to protect the environment. Those things are out of my hands but this simple thing I could do. Instructions
Cook the rice noodles according to the package directions.
In a pan, heat oil, add chopped garlic, red curry paste and stir fry for a couple of minutes.
Add vegetables and stir fry for 5 – 6 minutes.
Add coconut milk, salt, and mix well. Add cooked rice noodles and mix well. Garnish with chopped coriander leaves, red chili flakes and serve.

Spicy Chicken Sliders

You could go creative on the filling for your sliders. Simple scrambled eggs with cheese make perfect breakfast sliders. Buffalo chicken sliders are my favorite!! It is easy to prepare at home.

In a bowl, combine Franks red hot sauce, melted butter, paprika, ranch dressing , garlic powder, salt, shredded chicken and mix well. Buffalo chicken filling is ready now.

Slice the Hawaiian rolls into half, place the buffalo filling, spread blue cheese, place the other half of the Hawaiian rolls, apply butter on the top and bake in a pre-heated 375 degrees oven for 15 minutes and serve.

Smart Cooking Tips:
You could choose your favorite fillings like boiled eggs, scrambled eggs, Aloo (potato) masala just like a sandwich stuffing. Many of the sandwich stuffing works best for this recipe.

Easy Party Appetizer:
Chicken sliders are the best party appetizer for all season. It is great for the summer deck parties, pool parties, office potlucks, game day parties, and birthday parties. You could prepare the stuffing a day before the party and store in the refrigerator. Bake just before your guest arrives and serve hot. You could even bake the sliders ahead and slightly warm in the oven for a few minutes before serving.

1 lb Boneless, Skinless Chicken Breast chopped
2 tbsp Oil
1 cup Onion Chopped
0.50 tsp Turmeric Powder
1 tsp Ginger Garlic Paste
0.50 tbsp Red Chili Powder
1 tbsp Coriander Powder
2 no Roma Tomatoes chopped
1 tsp Salt (to taste)
1 no Bell Pepper Chopped
2 tbsp Coriander Leaves Chopped
0.50 cup Shredded Cheese
Instructions
For Stuffing: In a pan, heat oil, add chopped onion, turmeric powder, ginger garlic paste and stir fry until the ginger garlic paste loses its raw smell.
Add chopped chicken, salt, red chili powder, coriander powder and mix well. Stir fry until the chicken gets cooked thoroughly.
Add chopped tomatoes and cook until the tomatoes become soft.
Add chopped bell pepper and stir fry for 2 – 3 minutes. Add chopped coriander leaves, mix well and the stuffing is ready.
For sliders: Slice the Hawaiian rolls in half and place in the baking dish. Place the chicken stuffing on the rolls, spread shredded cheese on the stuffing and place the other half of the Hawaiian rolls on top and spread butter on top.
Bake in a preheated 375 degrees oven for 15 minutes and serve.

Potato Capsicum Fry
Potato capsicum fry (Aloo Shimla Mirch) is a spicy and flavorful side dish in just 30 minutes. Soft cooked potato with spices and the flavor from bell peppers makes a delicious side dish.
Aloo Shimla Mirch:
Potato capsicum fry is known as aloo shimla mirch. It is a delicious side dish that goes well with roti or any rice varieties. This recipe is similar to the South Indian Style Potato Fry recipe with added bell pepper flavor. Bell peppers are my favorite veggie that I add in many dishes like omelets, sambar, fried rice, and curries. I just love that unique bell pepper flavor.
It is a dry side dish if you would like to make in the gravy consistency, add cumin seeds, chopped onion to the oil and saute until golden brown. Add cubed potatoes then add the spices like turmeric powder, red chili powder, coriander powder, garam masala and little amount of water. Cook until the potatoes roasted slightly. Add diced capsicum, cover and cook until the potatoes become soft. Add lemon juice, garnish with coriander leaves and serve.
Smart Cooking Tips:
Keep stirring often to avoid the potatoes getting burned and sticking to the bottom of the pan.
You could use other varieties of bell peppers like red, yellow, orange bell pepper or mixed of all.
Traditionally, mango powder is added to this recipe. I just added the lemon juice instead of mango powder for the mild tangy taste.

Potato capsicum beans fry (aloo capsicum beans fry) is similar to the recipe except add the chopped beans with potato and cook together until the potatoes becomes soft. Then add capsicum and cook until the capsicum becomes slightly soft. Garnish with coriander leaves and serve.

Add red chili powder, garam masala, turmeric powder, and salt. Add diced capsicum, little amount of water, cover and cook until the potatoes become soft.
Uncover the lid and cook until the potato and capsicum become dry. Add lemon juice and serve.

Milk plays an important role in my everyday life. It is a part of my family’s everyday meal. Here are my few beautiful real moments with milk.

At our home, we start our day early with a cup of hot coffee with milk. Though we have lots of work to do in the morning like getting ready to work, pack lunch, and getting my son to school. Me and my husband enjoy our coffee time 5 – 10 in the morning peacefully. It just boosts our energy and makes us feel fresh in the morning. It is our favorite part in the early morning. It’s been 10 years now we are together and we never missed our early morning coffee time.

We love coffee with milk compared to the plain coffee. Because milk adds nutritional value like Calcium and Vitamin D to the coffee compare to the plain coffee.
During the festive season or any special occasions like, we make a vermicelli milk pudding (payasam) at home. From kids to everyone enjoys the milk pudding. It tastes so creamy and delicious. In our tradition, there is no wedding meal without a vermicelli milk pudding. The wedding meal starts with an appetizer and end with the milk pudding as a dessert.

My son Aldrich loves milkshakes and he drinks a milkshake for an after-school snack. It provides needed Calcium, Vitamin D and Potassium needed to the growing kids for strong bones and teeth. What else a mom needs, milk blended with fruits or dry fruits for a healthy and easy snack for the little one?! Sometimes he carries the store bought chocolate milk with him for an after-school program. Milk has the nutrition that’s hard to find in other foods and beverages.

I born and brought up in a community where people makes varieties of sweet using the milk. During my childhood, mom used to make lots of milk sweets like Carrot Kheer, Basundi (Condensed milk flavored with dry fruits and cardamom), Kalakand (milk cake) during the festive season. There are no special occasions without milk sweets.

Next, here comes the summer holidays, mango kulfi (mango ice cream) is the must delicacy at our home. We enjoy mango kulfi all through the summer. After spending lots of time outside in the hot summer we love to enjoy the chilled and delicious mango kulfi.

Finally, one such beautiful memory with milk is my mom serves us the saffron, dry fruits and cardamom infused milk every night during winter before bedtime that helps to keep our system warm. Watching our family’s favorite show on the TV and sipping a cup of warm saffron milk in the cold winter night is bliss.

Milk is default in my grocery list and I stock up 2 large cans of milk regularly in my fridge. Real dairy milk is wholesome, simple and affordable. I make cottage cheese (paneer) and yogurt at home regularly for our everyday use. Homemade yogurt and cottage cheese tastes so fresh and delicious.

Keto chia pudding is a healthy, creamy and delicious breakfast. It is also an excellent dessert option for a keto diet.

Recipes using coconut milk:
Coconut milk adds an excellent flavor and texture to the curries, soups, desserts, and pudding. It is an excellent alternative to the diary and other plant-based milk products. Great option for the gluten-free, vegan, lactose-free, paleo and keto diet.

I am a big fan of coconut milk and I use regularly in my cooking. Egg drop curry, Spinach pulao, Low-carb shrimp soup and quinoa chicken pulao are my favorite recipes using coconut milk.

I use Thai Kitchen Coconut Milk in my recipes. The reason why I prefer Thai Kitchen Coconut Milk is, it tastes mild and fresh without any preservatives or artificial flavors or colors. The texture of the Thai Kitchen Coconut Milk is so amazing. It is thick and creamy similar to the whole milk. It is not only good for making Thai delicacies but also gives a wonderful flavor to the other cuisine dishes.

I bought Thai kitchen coconut milk at my local grocery store, Meijer in the International Asian food aisle.

Thai Kitchen coconut milk contains only three pure ingredients: coconut milk, water, and guar gum (for added creaminess). Note that guar gum is just a natural thickener made from a plant (guar bean). No preservatives or artificial colors or flavors.

You could add any of your favorite toppings like shredded coconut, chocolate chips and your choice of fruits.

Ingredients
1 cup Thai Kitchen Coconut Milk
2 tbsp Cocoa Powder
3 tbsp Chia Seeds
1 pinch Stevia Sweetener
0.50 tsp Vanilla Extract
2 tbsp Sliced Almonds, Sliced Strawberries (any toppings of your choice)
Instructions
In a bowl, combine coconut milk, cocoa powder, chia seeds, stevia, vanilla extract, and mix well.
Cover and set in the refrigerator for at least 3 hours or overnight until the chia seeds plump up. Garnish with any of your favorite toppings.
How to serve keto chia pudding?
Serve chia pudding as a breakfast or snack or healthy dessert.

I love them to eat at any time of the day as a healthy snack, breakfast or lunch. Ingredients
4 no Great Day Farms Hard Boiled Eggs
2 tbsp Oil
1 tbsp Coriander Powder
0.50 tbsp Red Chili Powder
0.25 tsp Turmeric Powder
0.50 tsp Salt (to taste)
Instructions
Cut each egg into the half.
In a pan, heat oil, add coriander powder, red chili powder, salt, turmeric powder and mix well. Cook over low heat until the spices lose its raw smell.
Place the eggs on the pan facing the yolk part down and coat with the spices gently.
Roast the eggs on both the sides over medium heat until the eggs incorporated well with the spices. Spicy egg roast is ready to serve.

How to serve spicy egg roast?
Serve spicy egg roast as a snack or appetizer or as a side dish with rice. Sambar rice and egg roast is my favorite combo.
