The Butcher Board Bacteria Bust!

For years, there has been a HUGE battle raging. It has split friends, families, states, and even countries! Ok, not really, but it is, at the very least a topic of discussion. Wooden butcher chopping blocks vs. Plastic cutting boards! Which is safer? From research that I have read, the study started while trying to find a good way to disinfect wooden butcher blocks at home, not in a commercial setting such as a restaurant, or butcher shop. The researchers wanted to study things like E-coli and salmonella, not be confused with semolina which is the flour used to make pasta. BIG DIFFERENCE!
Bacteria were spread evenly over the surface of both wooden butcher boards and plastic butcher boards. What was found is the bacteria on the wooden chopping block were not recoverable after a very short time. Bacteria was found after a lot more of it was applied. New plastic allowed to bacteria to live much longer, but were quite easy to clean. Here is the crazy part. Old, knife scarred wooden butcher chopping blocks acted almost the same as brand new ones. Old plastic, knife scarred butcher boards were almost impossible to clean and sanitize without using a machine washer. Imagine an old plastic board with lots of chicken fat, blood and skin stuck in the knife gouges. That is a foodborne illness super highway. Water is naturally wicked away from the wood and because of the tight grain nature of the woods chosen to make quality butcher chopping blocks, moisture does not hang around, thus making bacteria go bye bye. The only way found in the study to reach bacteria, if any at all, was to practically destroy the butchers blocks. They split the blocks, gouged them and forced water through them. These are things that we would not want to do to our beloved butcher https://superbutcher.com.au/. The other issue for me is that wooden butcher chopping blocks are better for your knives than plastic, but that is for another article.
All of this "science" stuff brings up another important issue, and that is HOW DO I CLEAN AND SANITIZE MY BUTCHER BOARD? As we know, it is wood, and wood can dry out and crack if not taken care of properly. The best way we found was to hand wash the Butcher Chopping Block with hot water and soap. Make sure you dry it on BOTH sides. If you want to use bleach, do so with warm water, NOT HOT! Make sure you rinse the butcher block board well. Furthermore, you may want to condition your butcher board food safe a mineral oil to keep it healthy and beautiful. In conclusion, The most important thing to understand about the battle between Butcher Chopping Blocks and plastic butcher boards is that you NEED to sanitize them BOTH. Tainted moisture is the enemy. The researchers in the study came to a conclusion that "Butcher Chopping Blocks are a NOT hazard to human health." On the other hand, plastic butcher boards may be.

A Christmas Story or I Knew Roy Clomp

Seeing that it is that time of the year, I think a Christmas story is in order. It just so happens I couldn't sleep so well. I woke up early this morning so I had better haul bones, get out of bed and hit the computer to tell you the tale, is it a tale? Well not really, but it has kept me from the sleep of the just.
In all the countries of the new world as they called Australia, the Americas and parts of Africa, there have been a special breed of characters. This special breed, were not, as the original inhabitants might have told you, not particularly special and the lands they conquered were not particularly new either. They had lived there for eons.
If we delve back even further in time say a few million years give or take an eon or two we might find even these 'original inhabitants' were not all that original at all. They had simply out thought and subsequently killed off the neanderthals or whatever breed of pre human existed in the region, at that time.
Evolution can be cruel and certainly holds no sentimentality for the 'original inhabitants'. The same evolutionary traits that were bringing about the original, original inhabitants demise was creating the modern man. He had less body hair but kept some hair, as a sort of token to his wildness on his chin. Modern man also developed that symbol of his modernity, a pot belly.

Actually he is rather fat but he fools us into not noticing by wearing outrageous red clothes trimed in white, and to be perfectly frank with you, a ridiculous red extended beannie style hat with a whit pom pom and of course we can't see how fat his jowls are because of that beard.
A similarly enduring image we have of our pioneering forefathers in North America, but more particularly in South Africa and especially in Australia is the same full beard. Look at any picture of early Australian settlers, not just Bushrangers like Ned Kelly or the heroes of the Eureka Stockade but pretty much everyplace in early Australia was a haven for the unshaven.
One never saw a roman with a full compliment of facial hair dangling and swaying below the chin and catching crumbs and droplets. That is not to say Santa claus was Australian or a denizen of the South African transvaal for that, he was of course European.
He was simply too busy feeding reindeer and banging up toys and keeping elves in line to shave. Not to mention Mrs. Claus who hated his beard but he kept it as a symbol of his independence. She wasn't that keen on his pot belly but cound't really mention it as she was a bit of a pudding herself.

Strong Style Epiphany

Every person who has strived for success in their field of choice, be it in business, teaching, sports, or professional wrestling have all had that one moment where they realize their current path hasn't placed them on their intended direction. That one moment opens their eyes to the real path that'll lead them down the road to greatness; or so they think. Unfortunately for quite a few wrestlers, their moment of epiphany doesn't lead them as they were to believe. In 1988, "Million Dollar Man" Ted DiBiase realized that he couldn't beat Hulk Hogan for the coveted WWF Heavyweight title. So DiBiase did the next best thing and hired Andre The Giant to do his dirty work before being handed the title from Andre. The bad news for Ted was the championship being taken from him immediately, and vacated until Randy Savage won the title in a tournament-last defeating DiBiase ironically.
In a more recent show of an epiphany gone wrong, look no further than Samoa Joe. A little more than a year ago, Samoa Joe had that life changing moment when confronted by the Main Event Mafia, and a wad of cash. Instead of keeping to his principles and continuing to be the no nonsense, hardnosed grappler that TNA fans fell in love with, Joe took the money, and a MEM membership card. In the end, Joe moved further and further away from the TNA World title picture. The force known as Samoa Joe became nothing more than silent backup for a group of men who were took scared to fight him.
But not every epiphany has led to failure in wrestling. The Rock is a great example. Only a couple of months after his debut as Rocky Maivia, the fans turned on him. When he finally realized the person he was wasn't the person the people wanted to see, Rocky Maivia became The Rock; and the rest is history. Even under not-so-bright lights of Ring of Honor can come an epiphany that catapults someone to their destiny. CM Punk witnessed his epiphany in 2004 by siding with Ricky Steamboat against Generation Next (Alex Shelley, Austin Aries, Jack Evans, and Roderick Strong), becoming a fan favorite, and gaining the unwavering support of Ring of Honor fans in his quest to become ROH World champion.
