Anyone else ever tried Trader Joe's cucumber pickled vegetable soup? It is not as bad as you may think. I have learned to actually enjoy sauerkraut quite a bit. Truth be known, I have spent much of life trying to straight-out avoid the steaming, pungent cabbage soup concoction which used to gag at the very thought of it. This is because it is just simply too darned good! If you've never heard of Trader Joe's Saucerkraut, then allow me to fill you in. Trader Joe's Saucerkraut is one of their most popular pickled vegetables. I am not sure exactly how they do it, but it is effective. The second way is to use a process called pasteurization where the sauerkraut are coated in a salty paste. Pasteurization works especially well if you use cultured or wild fermentation products. You can also buy pasteurized sauerkrauts but since they are more expensive you won't want to buy too often because they are quite expensive. Since the fermented pickles are quite rich in natural sugars and fiber, they are an excellent source of wholefoods nutrients. Trader Joe's spicy and tangy sauerkraut are a great example of natural wholefoods and can be used instead of sweetener if you prefer to eat less sweet pickles. They have high levels of potassium, fiber, vitamin A and vitamin C and low levels of sodium. If you don't care for the taste of the pickled persian cucumbers you can always soak them overnight and squeeze the juice out of them, which is just as good as pickling!

Another great aspect of Trader Joe's sauerkraut is that it comes packed with crunchy greens, such as kale, lettuce, mushrooms and mustard. This means that you get a healthy dose of greens even while enjoying your juicy pickled persian cucumbers! Be careful not to overfill your mouth though, because the pickled persian cucumbers will become too crunchy if packed in too much of a lump.
