It’s the most wonderful time of the year! Black Cake Season! 🇯🇲 And, it’s my birthday 🎉 The full recipe is in my Island Soul Holiday Recipes e-cookbook, but here’s what we used: 1 lb or 4 sticks salted butter 1 lb or 2 cups dark brown sugar 1 lb or roughly 2 cups all-purpose flour 1 tsp baking powder 6 large eggs 1 tsp ground cinnamon 1 tsp grated nutmeg 1 tsp ground allspice 4 tbsp browning (or according to preference) 1 tbsp vanilla extract 1 tbsp rose water 1 tsp almond essence 2 cups fruits (raisins, prunes, currants, cranberries) soaked in red wine and rum in advance 1/2 lb dried mixed peel 1 cup maraschino cherries 1 cup + few tbsp white rum (i.e. Wray & Nephew) 1 cup (or to taste) sweet red wine (i.e. Red Label) 2 tbsp water 1/2 cup plain bread crumbs

I’d love to see your creations 🥹 here are the 1/2 recipe measurements, feel free to double/triple: Small mixing bowl: 55g oil + 60g milk, mix well 68g flour 4 egg yolks Larger mixing bowl: 4 egg whites Few drops lemon juice optional 60g sugar Fold egg white mixture into yolk mixture til well combined Bake at 325F, 32-35mins til toothpick comes out clean Fresh cream frosting: 1:10 ratio of sugar to heavy whipping cream, whip together til desired consistency (stiff peaks) Few drops lemon juice optional my.mellow.menu

cava harissa chicken
Cava honey harissa chicken marinade: 1 10oz can harissa paste 2 tbsp olive oil 2 tbsp avocado oil Juice of 1 lemon (or more if you’re feeling ✨zesty✨) 4-5 cloves garlic, crushed 2 tbsp chili powder 1 tbsp smoked paprika 1 tbsp oregano 1 tbsp onion powder 1 tsp cumin Salt & pepper to taste (you want it on the saltier side!) Whisk to combine Marinate the chicken in gallon bags. I just put in a spoonful at a time until the pieces are completely covered with a thin layer of marinade. I like to cook the chicken until it’s 90% of the way done, chop into small cubes once cooled (or pulled from the fridge if stored for later), then finish in the pan with a drizzle of honey.

CAKE BATTER: 1 cup butter 1 ⅔ cup sugar 3 eggs 3 yolks and whites separated ½ lime zest ¼ cup squeezed orange juice (about 1 orange) 1 tbsp domincan white vanilla extract 2 cups all purpose flour 1 tbsp baking powder ¼ tsp salt 1 cup evaporated milk guava paste FOR MERINGUE: 1 ½ cup sugar ½ cup water 1 egg white 1 tsp Dominican vanilla extract DIRECTIONS: 1) Mix 2 cups of softened butter and 1 ⅔ cups sugar until mixture is fluffy and very pale in color (about 7 min) 2) Add in 3 eggs and 3 egg yolks gradually, with ½ lime zest, and 1 tbsp of Dominican white vanilla 3) Add in sifted flour, baking soda, and salt mixture until well combined. Then add 1 cup of evaporated milk, and a ¼ cup or orange juice. Mix until fully combined. 4) Pour batter into two 9” cake pans and bake at 350 for 25-28 minutes. Remove from oven and let completely cool for 1 hour. 5) To make meringue icing start by simmering 1 ½ cup sugar and a ¼ cup water on medium low heat until temp reaches 275 F. This takes about 10-12 minutes. Texture will have lots of bubbles, turn clear, and be thick. 6) Whisk 4 egg whites on high speed until they form stiff peaks. When the sugar and water mixture is ready, immediately pour slowly into the egg whites, while beating on high speed. Then add 1 tsp of Dominican vanilla. Keep beating until the mix turns glossy and very fluffy. 7) To ice the cake, use the bottoms as the top so it’s perfectly flat. Adhere cake layers together with a ring of meringue on the edges and guava pasta added in the center. Then ice the outside and decorate however you’d like and enjoyyy :))

habichuela con dulce
32 oz de abichuela Roja oh rosada (boil for 2 hours)
2 batata ( wash peel & cut into small pieces)
10 oz gengibre (wash peel & cut into small pieces)
1/4 de leche
2 leche evapora
1 1/2 leche condensada
4 canela entera
4 cucharada de clavo dulce
6 cucharada de sal
2 basos de azĂşcar
4 cucharada de vainilla
In separate pot, boil cinnamon sticks & cloves.
next blend beans & strain.
put tea in beans mixture & simmer. add ginger, batata, milks, sugar, vanilla. handful of raisins.
simmer until foam disappears. take out the ginger & cinnamon stick. eat with domi water biscuits.

real coconut(2or 3), cut up & blend with some white rum. strain with cheese cloth & set asside in a bowl. (coconut milk mixture)
put a can of carnation milk in a pot with a few slices of ginger, 5 star anise, 3 cinnamon sticks & let simmer. add about at tablespoon(?) of nutmeg. let cool? (tea mixture)
put coconut milk mixture in a blender with about 1/2 -1 cup of sugar, maybe a pinch of salt?? then blend.
Put coconut milk mixture back in bowl & add:
1 can evaporated milk
1 can condense milk
tea mixture
tablespoon vanilla extract
teaspoon almond extract
teaspoon lemon extract
lime zest
(looks like) the juice of a lime
then strain.
add some barbancourt rum to your liking.

sandwich bread recipe
2 cups warm Water ¼ cup Sugar 1½ Tbsp Active Dry Yeast 1½ tsp Salt ¼ cup Vegetable Oil 6 cups Bread Flour In a large bowl, combine water, sugar and yeast. Set aside for 5 minutes. Add salt and oil and stir. Add flour 1 cup at a time. Knead dougg on a lightly floured surface until smooth, about 5 minutes. Place dough in an oiled bowl and turn to coat. Cover and let rise until doubled in size, about 1 hour. Punch down dough 🤛🏼 . Knead for 3 minutes. Divide in half and shape into 2 loaves. Place loaves into greased 9 x 5-inch loaf pans. Cover and let rise for 45 minutes. Bake at 350°F for 30 minutes. Remove from pans and let cool

My friends and i have named this ✨wet-wet sauce✨ #chilioil #chilisauce Whites of 2 green onions (save the rest for garnish!) 2 Tbsp minced garlic 1 Tbsp minced ginger 3 Tbsp gochugaru (Korean chili flakes) 1 tsp sesame seeds Heat up 1/2 cup neutral flavored oil + 1 Tbsp sesame oil and pour over. Then add 3 Tbsp Soy sauce 1 Tbsp Oyster sauce 2 Tbsp Rice vinegar
*she adds wonton dumplings. can use it for anything
