Living where we do, I've come to accept that I'll rarely wake up to falling snow on Christmas. But I'll happily settle for falling coconut. This is Bibingkang Malagkit...a Filipino sweet rice cake made with sweet rice, coconut milk, and brown sugar. And then topped with a syrup made with more coconut milk and brown sugar. Pretty hard to go wrong here my friends. 😊 Wishing all who celebrate a very Merry Christmas full of love, family, and gooey sweet bites like this one! 🎄🌴🎄🌴

Only a few more days 'til Christmas which means I have some serious wrapping 🎁 to do! But first.....pancit. This is Pancit Bihon, a simple comforting rice noodle dish you'll find at any Filipino holiday gathering. For the protein, I used Portuguese sausage, which I love for its vinegar flavor. And then I piled in the veggies (carrots, celery, cabbage, bell pepper, scallions). I adore this dish for the hodgepodge it is and because it reminds me of home. ❤️ Will be bringing it to the blog soon my friends. But for now, happy wrapping!

Hi friends!!! Hope you had a lovely weekend celebrating the beginning of this beautiful holiday season. 🎄After attending a program last week focused on being your best self, I've been moved to put my phone down more, look my loved ones in the eye more, and just generally be more present. It was perfect timing to celebrate the amazing man in our lives. An incredible husband and father, the kind of guy who spends his birthday at a swim lesson and gingerbread house making party because he wants his son to experience everything and it brings him so much joy to be there. We're so blessed to have him in our lives. 💕

Hi friends!! Had a work trip this week and boarding 🛫for home!! I'll be eating airplane food but I hope you get something more comforting for dinner like this Filipino-inspired turkey and rice soup (flavored mostly with ginger). My mom always made this after Thanksgiving so it felt great to attempt it myself. Plus my son loved it! Happy dance! I knew there was some Filipino in him.😍Since this time of year is all about tradition, I'm planning to focus on mostly Filipino-inspired for the next month. Stay tuned...And Happy Hump Day!!
