3 Keto "supplements" I can't live with out
3 Keto “supplements” I can’t live with out
Okay, so you start keto or a low carb diet and bam, there’s all this stuff on supplements, erogenous ketones, electrolyte powders, MCT oil, the list goes on and on. You could literally spend thousands of dollars a month on supplements alone. It’s absolutely ridiculous, and for the most part completely unnecessary. After a year of doing keto/low carb (I did the math finally, my macros are spot on…

What's for Dinner April 10th thru April 17th
What’s for Dinner April 10th thru April 17th
This weekend was a struggle. I wasn’t feeling great so this is a little late. This week was very simple meal prep. I had half a head of cabbage leftover from the ginormous head last week. Smoked sausage was on sale as was chuck roast and shredded lettuce. So I decided to go with pot roast, fried cabbage and Taco salad/Burritos. I made a super simple pot roast in my pressure cooker on Saturday. I…

What's for Dinner April 3rd through April 9th
What’s for Dinner April 3rd through April 9th
Alright, so I see people in various Facebook groups who struggle with how to cook Keto or Low Carb with a family that is decidedly not into that. No one has time to cook two different dinners a day, so I’m hoping this will help some of you who need a little help with how to feed your Carb-ivores. My meal plans start on Saturday, I usually pick up my groceries on Thursday or Friday, and I get…

Low Carb Diet: Year 2, 3 Month Check in
Low Carb Diet: Year 2, 3 Month Check in
Lord, it has been a trying three months. Actually, I’ve made a lot of progress, but it doesn’t feel like it because I back slid so bad over the holidays. January 1st I weighed in at 196 lbs. Three days earlier I weighed in at 189, yeah, so I don’t remember what I ate on New Years, but I definitely fell off the wagon, rolled off a cliff, set it on fire and used the insurance money to buy Twinkies.…

Emotions and Overeating Progress Day 10
Emotions and Overeating Progress Day 10
I don’t know if it’s a case of seasonal depression, holiday stress, work stress, Covid stress or a combination of all of the above. But my diet took a big old nose dive. It wasn’t that I didn’t want to stay on track, I just couldn’t find the motivation and more importantly I just wanted to eat all the time, regardless of hunger. That’s a big tip of something isn’t right. I played it off as a…

Low Carb Check in One Year
Low Carb Check in One Year
Well about a year ago I started my journey to a healthier new me. Out of all the years to start a diet, well, this was certainly a doozy of a year. I didn’t realize this year was going to crazy when I started last December 31st. Frankly, no one had any idea what a crazy year it would be. I thought I would reflect on some of the wins and struggles of the last year and plans for the next year. When…

New Mattress under $300! Crazy, or Crazy Like a Fox?
New Mattress under $300! Crazy, or Crazy Like a Fox?
Alright, I did it. I pulled the trigger on a mattress. My husband has been complaining about our mattress for a few years now, and he was totally right. Our old mattress sucked. It was a 10 year old memory foam we got for like $300-$400 dollars. It worked great for a number of years. About five years ago we noticed a hole, roughly my size had developed, I was a big girl. We tried turning it, we…

Low Carb Check in Months 8-10
Low Carb Check in Months 8-10
Well, it’s been kind of a crazy ride. I meant to post a month ago, but you know, life happened. Meal prep has been a godsend. Legit, I don’t know if I would still be doing low carb if I didn’t get my butt in gear and start prepping my meals. It also isn’t as big of a deal as I made it out to be. I tried meal prep years ago, and I was stuck in the kitchen for eight hours like an absolute crazy…

Adventure's in Meal Prep #4
Adventure’s in Meal Prep #4
Last week was on the struggle bus, I was driving and I’m pretty sure the bus was on fire. Work was crazy, my husband went hunting for 2 days, and I was just overall a grumpster. But through all of this, food was not an issue. About a serving and a half of the Butter Chicken went down the drain, I forgot Steve was going hunting. Oops, but not to bad on waste. Meal Prep for the win. Hallelujah,…

Adventures in Meal Prep #3
Adventures in Meal Prep #3
We are on a roll. Last week was awesome. Very little food wasted, and overall it felt like a win. The pot roast was awesome, bacon bomb sprung a little cheese leak, but I just added some extra cheese when we reheated it. The egg roll in a bowl is a work in progress, it needs something to jazz it up. But I’m already doing my research to see how I can make it better. The other major issue was I…

Adventures in Meal Prep #2
Adventures in Meal Prep #2

I learned a lot from the first week of meal prep. It went pretty awesome with the exception of a couple of hiccups. Steve wanted rice a few nights with diner, and I realized I didn’t actually pay any attention to side dishes. Mostly because I don’t eat a lot of side dishes when I have casseroles. Most of my sides are a bag of frozen veggies in the air fryer or microwave anyway. In a casserole my…

Meal Prep Wrap Up #1
Meal Prep Wrap Up #1

Last week I tried meal prep, I wasn’t really sure if I was going to like it, or if it would even be worth all the trouble. I was also a little nervous about two of the recipes, since I’ve never tried them before.
Honestly, things went great. Meal prepping took so much pressure off the week, that I felt like I got to enjoy my family time a lot more. A few times I drove home thinking, man I’m…

Adventures in Meal Prepping #1
Adventures in Meal Prepping #1

I started meal planning this week, knowing I’m going back to work, and I’m going to be tired after a week off. I decided to try a few quick and easy casseroles that looked pretty tasty, and then it hit me, why not just make them all in one day. That way there’s no “I’m too tired to cook” whining, which usually leads to eating out. Steve can also eat when he’s hungry on my late days. The best…

I just lost 50 lbs!
I just lost 50 lbs!
It has been a roller coaster 71/2 months, I lost, I gained, I ate some Voodoo doughnuts, and then got my shit back together. I made huge progress in the last week, dropping 3 lbs in less than a week. That brings my total weight loss for August to 6 lbs, and it’s not even halfway over. I think getting my hormones straightened out has definitely helped with the weight coming off. I mean it is…

Low Carb Months 6 and 7 Check In
Low Carb Months 6 and 7 Check In
Wow, my weight loss journey has been strange. I’m sure living in the middle of a pandemic has made everyone’s life a little weird. I struggled the last 2 months. I oscillated between 220 and 215 for a month and a half. It has been an emotional two months, some good, some bad, but just emotional as all get out.
My birthday was the beginning of June, and I decided to celebrate, and…

Low Carb Months 4 and 5
Low Carb Months 4 and 5
Well, life got complicated again, but in a great way. I’ve been very busy at my new job, in spite of Covid. I work in a mental health facility teaching highly traumatized kiddos. Since the kids live on site we have been deemed essential. The low carb and weight loss journey has been a little weird. I totally assumed that eating low carb and not cheating was the best way to go. In fact I made it…

Low Carb Month Three
This has been a dozy of a month. My personal life has just gotten weird, along with everyone else’s. I started the month out with one job, switched to another job, then finished out the month being asked to stay home for two weeks. Being stuck at home has been interesting on my diet to say the least. My weight loss overall has slowed down, which is to be expected. Food shopping has been a…
