Ham and Potato Soup with Apple and Dandelion Greens

I foraged some dandelion greens this morning and wanted to learn how to use the late spring/early summer greens in a way that would reduce their bitterness. At this point in the season, having flowered and grown larger, they are quite bitter.

I washed the greens and then soaked them in a water and vinegar bath as usual. In addition to making them nice and clean, I read that the vinegar can help reduce bitterness.
Next, after rinsing them, I soaked them in a salt water bath for 15 minutes—another trick to reduce bitterness. Then I boiled them for 15 minutes. I pinched a piece off and tasted it and it was so far from bitter I could have used it to make the gomae I’ve been craving! But at that point, I had already chopped all the vegetables for the soup so carried on with the original intent. 😜

After I prepped the dandelion greens I sautéed about 2 tsp of garlic in oil until it was aromatic, and then added a chopped onion. Once the aromatics softened I added the dandelion greens, which I had chopped when they cooled, as well as a tablespoon of marjoram.

I then poured over about 3 cups of broth and 1 cup of milk and added 1 and 1/2 cup of cubed ham, 2 medium, chopped russet potatoes, and a chopped honey crisp apple.

I brought it all to a boil and then reduced it to a simmer until the potato and apple were tender.
I added a little bit of a cornstarch slurry once the vegetables were cooked to my liking to give the soup a creamier mouth feel. If I make it again I’ll probably make a roux at the beginning when I sauté the onions.
I stirred in 1 TB of lemon juice and removed from the burner.
I topped each bowl with a little bit of pepperweed pods for flavor and for pretty.
The sweetness of the apples and ham contrasted nicely with the earthiness of the potatoes and greens. The horseradish-like flavor of the pepperweed was really nice either way the apple, too.

Honestly I’m so proud of all the soup recipes I have. Like… soup is so fucking good, and I’m so glad I can actually cook and make stuff that tastes good. And soup is so versatile!! You got chicken soup, potato soup, tomato soup, gnocchi soup, tortilla soup, chili soup, cauliflower soup, and the list goes on! this has been a soup appreciation post ☺️

Soup time!
I cast a soup spell this weekend! It was a potato-cabbage-ham spell. It hits the trifecta of easy-cheap-good, so I will tell you about it.
Here's what you need:
An onion
Butter or oil
Cabbage
Potatoes
ham
stock--I used chicken, but vegetable would work, or ham broth if you have it
Salt and pepper
Cream or milk
First chop up your onion into small pieces. Put it in a pot with your butter or oil, over medium-low heat. Keep an eye on it and stir it once in a while, while you get your cabbage ready.
2. Chop your cabbage. To do that, take off the outer layer of leaves, cut the cabbage into quarters, and remove the core (where the stem goes up into the middle of the cabbage. You'll see it.) Slice each quarter finely, across the grain, so you have a lot of little shreds of cabbage. Put it in the pot with your onion and let it cook, stirring from time to time, while you get your potatoes ready. Sprinkle a little salt and pepper on it.
3. Peel the potatoes (or just scrub them, if you want) and slice them finely. Proportions are flexible here; I had a lot more cabbage than potatoes on hand, so that's how I did it, but as a starting point, I'd say use one good-sized potato per serving of soup, and an equal volume of cabbage.
4. Once the cabbage has softened a little, put the potatoes in, and pour in enough stock to mostly cover the vegetables. (Or as much stock as you have, and enough water to cover.) Here's how it looks with about enough stock/water:

Turn up the heat a little to bring the stock up to a simmer.
5. While it's coming up to a simmer, chop up your ham. Scraps off the bone of a roasted ham will have the most flavor, but if you don't have those, anything is fine. I used these breakfast ham steaks:

My grocery store often has these two-packs one sale for the same price as one. I decided to use both of them in my soup, but I could have gotten by with one.
6. Add the ham to the pot and stir everything. It might take a minute or two for the soup to come back to a simmer since you just put the cold ham in there. Once it does, put the lid on and turn it down to medium-low.
7. Give it about half an hour, until the potato slices are falling apart. Take off the lid, turn the heat way down, and add some cream or milk. I had some light cream that needed using up, but you could use heavy cream, half-and-half, or milk if that's what you have. I used about half of a pint carton, so about 1 cup.

Add a little more salt and pepper; serve with crackers.
If you're in the US, cabbage is probably on sale really cheap for St. Patrick's Day, & this is a nice thing to make with it!
