We dropped off our cat Nina at the Humane Society today to be euthanized. She had not been feeling very good for about a week or more and was losing body weight quickly. We thought it was the “humane” thing to do. She weighed only 13 lbs, down significantly. She was always incredibly kind to everyone she met. I don’t think we could have asked for more! Greek spanakopita! Fillings been sitting in the freezer for months, yet somehow still wonderful to the palate! There are many ways to make spanakopita, my way is easy! You’ll need two or three bags of frozen chopped spinach, depending on how large the bags are. You want about 16 oz. of frozen spinach to work with altogether in one sitting. Thaw the spinach until room temperature, and then strain of excess water in a hand towel, squeezing until relatively dry. Add spinach to large mixing bowl, and break up with fork. Add two eggs, one 8 oz. cream cheese, 8 oz. chopped feta, one chopped white/yellow onion, 2 tablespoons dried parsley, and 1 T ground dill. Mix together well. Butter a cookie sheet and lay out the phyllo dough on a counter or hard surface with the plastic sheet underneath. Using two sheet of phyllo at a time, butter the top sheet of phyllo and use a pizza cutter or knife to cut dough into five equal strips. Place about a tablespoon of filling onto the top of each segment and roll like a football, triangular. This strawberry shortcake took about fifteen minutes to make, but it took years for me to reach the level of love and happiness I feel today! This past year has come with its ups and downs, but I have only been moved to be better, more creative, tolerant, and understanding of all things. I feel almost like I have met a brilliant and wild spirit or side of myself I once disregarded. I feel like while I am moved by the future of life, I can also be comfortable enough in the present that I think of new ideas and theorize about the scientific and technical mysteries that defy logic. I am experienced in computer science now and I can see the future and my ideas for new types of tech work opening up some big opportunities I could only have dreamed of years ago. It feels like I have been universally guided here by everything and everyone I love, and it is something I cherish. I hope to fulfill a lot of my and your dreams in my 33rd year! Just crafted the most amazing smoothie ever! Strawberry, mango, peach, and banana went into this healthful and cool summer drink! As well as Greek yogurt and whole milk. Here are some “Dutch windmill” cookies, officially called Speculaas , which originated in Belgium and the Netherlands. Cardamom, coriander, cinnamon, ginger, nutmeg, and cloves combine to make for a spicy and distinctly Dutch cookie, and toasted ground almonds add a nuttiness that makes for a seriously tasty and heady cookie!
