3 QUICK AND EASY STAINLESS STEEL PRESSURE COOKER DESSERTS
A meal feels incomplete without a good dessert, but who has the time and effort to slave over a little sweet nothing. So, we’ve devised three must try recipes that’ll give you the precious time you need while your friends and family enjoy restaurant style desserts at home.

While it’s common to cook savouries in a steel pressure cooker to save on precious time and effort, what few know is that desserts too come out super well and way faster in a stainless steel pressure cooker. And no, you don’t need a non-stick or an oven to make these dishes. Instead, if you have a superior-quality triply technology stainless steel cooker, you are perfectly armed for the job at hand.
So here goes, do try them, and let us know how it goes.
                                                                1. Caramel Custard
This mouth-watering and simple dessert is always a party hit and done with absolutely no extra time or effort in the kitchen. Caramel custard is a creamy dessert with a beautiful caramel flavour that can be served on any occasion or even for no occasion. And in a pressure cooker it is that much faster and simpler to make at home. 
 Ingredients: 
Custard:
500ml full fat milk
4 eggs plus 1 egg yolk
150g granulated sugar
1 tbsp vanilla essence
Caramel:
200g sugar
 Directions: 
Custard:
Beat the eggs and additional egg yolk with the sugar. Mix the milk and vanilla essence and pour into the egg mix. Whisk well. 
Caramel:
In your cooker, on a high flame, add the sugar. Ensure the sugar is evenly melted and turn off the flame. Pour the caramel into individual ramekins or a ring form pan. Fill the caramelised pan/ ramekins with the custard, just ½ -inch short of the top. Cover the moulds tightly with foil.
 Add one cup of water into your stainless steel cooker. Place a wire rack in the pressure cooker. 
If using a ring mould, cover it with foil and carefully lower it onto the wire rack with the help of a foil sling. Lock the lid. Set the flame on high for 10 minutes.
If using ramekins, cover each one with foil and place on the wire mesh. Lock the lid and set for 6 minutes on high flame. Let the steam release for 10 minutes and cool for one hour. Refrigerate for at least 3 hours.
 Just before serving place each ramekin or the ring mould in a baking dish of very warm water for about 1 minute. Place a plate/dish on top and flip the mould over onto it.
 2. Classic Cheesecake
With any jam or topping of your choice.
This scrumptious dessert is a creamy mousse-y not excessively sweet, yet very refreshing slice of heaven. And unlike popular belief, can easily be made on your stovetop. 
 Ingredients:
Crust:
200g crushed biscuits
50g butter, melted
30g granulated sugar
Filling:
500g cream cheese, softened
1.5 tbsp (12g) Maida / all-purpose flour
1 tsp vanilla essence
2 eggs
100g granulated sugar
1 cup (250ml) water
 Directions:
For the crust, combine the crushed biscuits, butter, and granulated sugar in a small bowl. Mix well. Press the crumb mixture evenly into the bottom of a springform pan. Freeze for 15 minutes.
 For the filling, whip the cream cheese until smooth. Add eggs, and granulated sugar. Mix well, then add vanilla essence and then the Maida. Mix until incorporated. Pour the filling over the chilled crust and spread evenly. Make a sling with foil to lower the pan into the cooker. 
 Pour the water into the base of your steel cooker. Place a wire rack into it. Place the pan onto the wire rack. Lock the lid. Set the flame on low and your timer for 45 mins
 Once the timer is up, allow the steam to release for 10 minutes before opening your triply cooker. Pull the pan out using the foil sling. The centre of the cheesecake should jiggle very slightly when you shake it gently. It will firm up as it cools. Wait for the cake to cool completely, then loosen the springform pan. Place in a container and refrigerate overnight.
Serve with any fruit sauce or jam.
 3. Gajar Ka Halwa
 Just the thought of this recipe is sending me to buy gajar. Known to be a winter dessert, this classic Indian dessert is an all-time any-time comfort food. And while the traditional recipe asks for full fat milk and tonnes of sugar and even more time to combine them, here’s a simple recipe that uses condensed milk, and therefore, condensed time. That beautiful tri-ply stainless steel cooker of yours and dig into this delicious treat without having to slave over it.
 Ingredients:
1 kg carrots (grated)
4 tbsp ghee/ clarified butter
150 ml full fat milk
1 tin sweetened condensed milk
1 tsp cardamom (elaichi) powder
Raisins, almonds, cashews, and pistachios as per your liking
Directions: 
Heat the cooker over a low flame with 2 tsp ghee. Fry your raisins, almonds (sliced) and cashews (Chopped) until golden brown and then remove and set aside. 
 Once again heat the cooker with 2 tbsp ghee and the grated carrots. Turn up the flame to full and sauté for about 5 mins. Add the full fat milk and mix in completely. Lock the lid and allow it to cook for 20 mins. Once the timer is up, take your triply pressure cooker off the stove and let the steam release for 10 mins before opening the lid. 
 Now on a high flame add the condensed milk to the cooked gajar and cook until milk evaporates to your preferred consistency (about 10 mins). Stir in the raisins, cardamom and remaining ghee, and garnish with almonds, pistachios, and cashews. Serve hot and enjoy!

5-MINUTE RECIPES USING STAHL COOKWARE THAT YOU’LL LOVE TO RUSTLE UP!
Often, our everyday hectic lives do not allow us enough time to prepare elaborate recipes, especially if we’re working professionals or have family responsibilities to tend to. Thanks to Stahl, you do not need to sweat. Our easy-to-rustle-up five-minute recipes will show you that taste can be achieved in a short amount of time. And this is done ensuring your food never comes into contact with the aluminium layer. Here goes our top four five-minute recipes for you to try:

 1. Cheesy Bread Pizza
 Ingredients:
1 tomato (chopped)
1 capsicum (chopped)
1 onion (chopped)
1 bell pepper (chopped)
½ tsp red chilli flakes
1 tsp oregano
½ tsp black pepper powder
salt to taste
4 tbsp pizza sauce
1 cup grated cheese (mozzarella or processed)
6 slices of bread
3 tbsp butter

 Instructions:
In a bowl add all the chopped vegetables and spices. Mix well and keep aside. Evenly spread pizza sauce on all the bread slices. Top it with the vegetables. Finally add some grated cheese. Place your Triply non-stick tawa on a medium flame and add a teaspoon of butter and let it melt without burning it. Now place the bread pizza slices on it. Make sure the flame is low. Cover the tawa and cook for around 3 minutes or until the cheese melts completely. The bread pizza is ready. Finally sprinkle some oregano and red chilli flakes.
Serve hot!
 Notes:
If you do not have pizza sauce, then you can replace it with some tomato ketchup.
Always cook the bread pizza on low flame else it might burn from the bottom.
You can use your choice of vegetables.
 2. Vegetable Stir-Fry
 Ingredients:
1 packet Mushrooms (chopped)
1 onion (chopped)
½ zucchini (chopped)
½ broccoli (chopped)
3 carrots (thinly sliced)
1 capsicum green (thinly sliced)
1 capsicum red (thinly sliced)
1 tbsp Ginger garlic paste
1 tsp chilli flakes,
Stir-fry soy sauce
1 packet rice/noodles/pasta

 Instructions:
The key to a great stir-fry is to have everything prepped in advance because the cooking process goes faster. Once you have the right dish for the job, things flow through much quicker.
Make sure the oil in the Kadai gets to the right temperature first before adding and sauteing the onions. Stir till translucent.
Start with hard vegetables like carrots and broccoli. Stir and scoop vegetables to the side to make room for more.
Then add the softer vegetables, like sliced mushrooms and zucchini. Pour in some water and always keep the veggies moving in the pan. If you want something to stay crunchy, add it at the end.
For an extra boost of flavour, minced garlic and ginger are added last
When your vegetables are at their desired doneness, add your sauce.
 Notes:
For a good stir-fry, cooking vegetables at a high heat is essential for retaining crunch. Remember to add a splash of water for steam if they need a little boost.
Whether you eat it as-is or serve it with a side of rice/noodles/pasta, you’ll have a sumptuous meal and, best of all, no wastage.
 3. Egg Bhurji on Rusk/Toast
 Ingredients:
2 tablespoon Vegetable Oil
1 tablespoon Butter
1 medium size Onion (Chopped)
1 Green Chilli (Chopped)
2 tsp Ginger Garlic paste
1 Tomato (Chopped)
1 tsp Coriander (Dhanya) Powder
1 tsp Turmeric (Haldi) Powder
2 tsp Pav Bhaji Masala
1 tsp Red Chilli flakes
Salt to taste
4 Eggs (if you don’t have eggs replace with paneer or tofu)
Fresh Coriander (Chopped)

 Instructions:
Heat the oil and butter in your non-stick frying pan together. Keep it on a medium low flame to avoid burning the butter. The combination of the two gives you the perfect texture you’re looking for.
Separately whisk the eggs in a bowl, add all ingredients except onions, ginger garlic paste, green chilli, red chilli flakes, and coriander.
Once the oil is hot, add the onion and sauté until onions turn translucent.
Add green chillies, ginger and garlic and fry until onion is slightly browned.
Now, add the egg mixture on a medium flame and keep stirring the eggs on medium low heat for about 3 mins or until just slightly runnier than your preferred consistency. Turn off heat and bring out the rusk. Remember, the eggs will continue to cook in the residual heat of the pan.
So, if you like soft bhurji, cook the eggs just until set. If you like perfectly cooked bhurji, then cook until eggs are nicely cooked.
Add coriander and mix well.
Serve hot on rusk/toast.
 Notes:
Coriander leaves are added only at the end to retain their fresh flavour in your meal.
Also whisking the eggs separately in the bowl before adding in the pan makes sure the eggs scramble perfectly.
You can cook the egg bhurji to the consistency you like. To make a creamy version of it, add some fresh cream, mayonnaise, and grated cheese once the Bhurji is cooked and mix everything well.
Can add chopped capsicums, mushrooms, or peas.
Adjust the amount of chilli and spices according to your taste.
For more fluffy eggs, add in a little milk while whisking the eggs.
It is very similar to Akuri, a Parsi breakfast dish but Akuri is runnier as compared to Bhurji.

 4. Egg & Vegetable Rice Bowl
 Ingredients:
1 packet of pre-cooked rice/ leftover rice from the fridge
2 eggs

1 carrot (chopped)
1 tomato (chopped)
1 capsicum (chopped)
20g of sweet corn

 Instructions:
Heat a little oil in your Triply steel Frypan. Add the vegetables and salt and cook for a couple of minutes. Add the rice and cook until warmed through, stirring continuously. Remove the rice and vegetables from the Frypan into a bowl.
Add a little more oil to the pan and fry the eggs until cooked through.
Divide the rice between two bowls and add a fried egg on top of each.
Voila, you have a healthy, delicious, wholesome meal that’s ready to be attacked.

Egg Shakshuka in Stahl Frypan
Shakshuka Recipe
One of the most beloved egg recipes all around the world, the Shakshuka is a tasty and protein-rich superfood. Serves: 3-4 people.
 Ingredients: 
2 Red / Green Bell Peppers
2 Slices of Bread
2 Onions
3 Eggs
8 Garlic (Cloves)
20 gms Mixed Herbs
50 gms Parsley
2 tbsp Paprika Powder
2 tbsp Chili Powder
1 tpsb Chili Flakes
1 tpsb Cumin Powder
3-4Basil Leaves
1 tpsb Sugar
10 ml Oil
10 ml Butter
 Instructions: 
Finely chop the bell peppers, parsley, onions, and     garlic.
Season the frypan with oil and a soft cloth.
Start heating the frypan on low to medium flames.
Add some oil and butter.
Add chopped garlic and sauté it for some time.
Add chopped onion and sauté it until it’s translucent.
Prepare tomato puree.
Add diced bell pepper.
Stir the mixture and cook it for some time.
Add a pinch of salt and tomato puree and mix it well.
Add 3 tsp of paprika, 2 tsp of cumin powder, ½ tsp of     chili flakes, mixed herbs, and mix it well.
Break the basil leaves and add them to the pan.
Simmer the mixture for 8-10 minutes on low flame with     the lid on.
Keep stirring so that the food doesn’t stick to the     bottom.
Make 3 wells in the pan for eggs and pour the broken     eggs into the wells.
Cook the eggs as per your preference.
Garnish with chopped parsley and grated parmesan cheese.
Serve with toasted bread.

Spicy Misal Pav Recipe in Xpress Cooker
It's difficult to decide if Misal is a snack or a meal but one thing's for sure, it is one of the few dishes that truly does the job of elevating all the senses. Misal Pav Recipe
Total Time: 35 Mins
Serves 6
Red Chilli Paste
3-4 Byadgi Chillies soaked in hot water for 10 minutes or until soft
3-4 Kashmiri Red Chillies soaked in hot water for 10 minutes or until soft
6 Cloves Garlic
Misal
¼ Cup Oil groundnut, sesame, canola oil
1 Teaspoon Mustard Seeds
1 Teaspoon Cumin Seeds
⅛ Teaspoon Hing
2 Sprigs chopped Curry Leaves stem removed
¾ Cup chopped Onion approx 2 onions
½ Cup chopped Tomato approx 1 tomato
½ Teaspoon Turmeric Powder
½ Teaspoon Coriander Powder
1 Tablespoon Misal Masala sub with goda masala or pav bhaji masala
200 Grams Mixed Sprouts
3 Cups Water
1 ½ Teaspoons Salt
¾ Tablespoon Jaggery
⅓ Cup chopped Coriander Leaves
2-3 Wedges Lemon
Instructions
Red Chilli Paste
Grind together soaked red     chillies and garlic using a food processor or mixer. You can use 1-2     teaspoons of the soaking water. Blend to a coarse wet paste. Keep aside
Misal
Heat oil in a pressure     cooker over high heat. Once hot add mustard seeds and allow to splutter.     Reduce heat to medium and add cumin seeds, hing and curry leaves. Fry for     30 seconds.
Add chopped onions and     saute for 1 minute or until fragrant. Add the red chilli paste and fry     until the raw aroma goes, approximately 2-3 minutes. Add chopped tomatoes     and misal masala and stir to combine. Cook for 3-4 minutes or until the     tomatoes have softened and the oil separates.
Add mixed sprouts and mix     to combine. Add water and salt and stir until well mixed. Cover the lid of     the pressure cooker and seal with the whistle. Cook on high heat till the     1st whistle and then reduce the flame to low and cook for another 10     minutes. Once done, turn off the flame and allow the pressure to release     naturally.
Remove the whistle and     lid of the pressure cooker. Turn on the flame to a medium, add jaggery and     mix to combine. Bring it to a boil and turn off the flame.
Add chopped coriander leaves and some freshly squeezed lemon juice. Stir to combine. Serve hot along with some pav or poha, chopped onion and top it off with some farsaan!
