Oatmeal & Dried Fruit Cookies

this recipe is by one of my doctors, though it's quite similar to my own, so I'll be taking the credit for it hehe :) the recipe below makes 10-12 smaller cookies or 8-9 large cookies, if that's what you prefer <3

ingredients:

- one medium banana (make sure it's soft!!)

- 2/3 cup (60 grams, I think?) oats

- cinnamon (optional)

- one teaspoon baking powder (but I always add more lmao)

- one teaspoon vanilla extract

- 10 (or more) almonds

- 125 grams of raisins, dried apricots and dates + whatever you like (or 3 apricots + 3 dates)

- one egg white (optional)

steps:

1) preheat oven to 180 degrees celcius and assemble your ingredients

2) cut up your dried fruits into nice and small pieces (but not so small that they're mushy) and roughly chop up your almonds

3) in an appropriately sized mixing bowl, mash up your banana to your desired consistency--I prefer it to be smooth, but leave it chonky if you like!--and add the oats, baking powder, vanilla extract and (if you like it) cinnamon

4) incorporate the nuts and fruits, using a fork to mix it all up

5) the next two steps are optional--the egg helps bind things together, but I've done it without and the cookies came out just fine :) in another bowl, separate your egg white and beat it with a mixer until thick peaks form (the egg mixture should look fluffy and not budge when you tilt the bowl)

6) fold the egg whites into the oat mixture

7) using a fork or utensil of some sort, shape the mixture into balls and flatten them out some because they don't spread while they bake like normal cookies

8) bake for 10-15 minutes, though it may take longer/shorter to bake depending on your oven :)

notes:

- cinnamon for protection + love + money, apricots for love, banana for money, almonds for prosperity, oats for money + prosperity, raisins for money

- experiment!!! try adding in your favorite dried fruits/nuts, apple, honey, chocolate chunks, nut/seed butter or whatever, really--this is a super customisable recipe <3

- for vegans: just leave out the egg! simple as that

- after the 7 minute mark or so, check on your cookies. I made the mistake of not checking up on them once, and let me tell you, burnt cookies do not taste good
