WHEEEEEEEEEEEELP
Loaded Guac Chicken Taco.
DISCLAIMER! This was hastily thrown together, only tried this once, and I am in no way good at cooking. It is a fair amount of trial and error and this is no exception, and my pallet for the finer foods is mediocre at best. Also I don't know how to make Tortillas from scratch. So there's that. And since I'm a terrible chef, especially since I'm not an actual chef, I'm just going to put how everything was done in no particular order and more than likely less descriptive than my previous "Dave pretends he can cook things" installments. You should probably have an oven pre-heated and ready to keep what needs to be warm actually warm. Set it to 275, I don't know, I didn't do it and I'm not a doctor.
WHAT YOU NEED Tortillas Chicken(Used thin sliced chicken, full breast will work out just fine.) Bacon (Suggest either Applewood or maple, the sweetness of the bacon adds a nice touch, Doesn't matter which bacon you pick though.) A Lemon Salsa Sour Cream Cheese dip(used for taste, can be omitted) 5 Avocados Olive oil Salt Lemon pepper Crushed Red Pepper Cayenne Pepper Chipotle pepper Brown Sugar A Shallot Small clove of garlic Mushrooms 2/3 diced, rest just sliced. (Only get sliced mushrooms if you want to put them on the tacos, if not. just get the one's you'll need to dice.) 2 baby red potatoes. (Unless you don't want them on the tacos, if that's the case, don't get them) Basil(to taste) Whatever else you want on tacos. ala tomatoes, lettuce, jalapenos, etc etc etc.
Making the Guacamole.
I started with all the dry ingredients. Generous (about 2 tsps) pinches of salt, cayenne pepper, chipotle pepper, crushed red pepper, brown sugar. Next add a tsp of olive oil about a cup of salsa(Personally used hot salsa, pre-made because today I'm lazy and don't want to make that from scratch), two large spoonfuls of sour cream and a large spoonful of cheese dip(Seriously, you can omit this bit if you want. I did this just to try it and more than likely I'm going to do this differently the next time I make this.) Take lemon, cut lemon, squeeze out juice. Hopefully there's no seeds. If you're afraid there is, squeeze out the juice into a small glass. Get fork, fish out seeds. Next add the avocado, Easiest way to do this. Cut all avocados in half, take out the seeds. Cut in half again, take spoon, scoop out. Now stir until you have a thin consistently. Can add more salt to taste, I'd suggest waiting until everything has been added to the guacamole.
Since the goal is to use bacon grease to cook everything go ahead and start the bacon, use as many as you'd like. Personally used 3 strips to add into the guacamole. You could also put strips ON your tacos. Crazy. While the bacon is cooking you need to thinly slice up the shallot and dice up a small clove of garlic(Make sure it's small. Shallots have a slight garlic flavor and you don't want it to be overpowering)
Assuming you have whole baby bell (The small white ones, Portabellas could also work but it's untested.) mushrooms dice up about 2. If they're pre sliced, about 5-6 slices should do fine. Chop up the basil. Also dice up the potatoes if you chose to add them.
Hopefully the bacon is done by now, If it's not. finish bacon, if it is. Go ahead and add the potatoes (Cook those until crispy) mushrooms also until crispy, or however you'd like. I don't know, I ran out of unrelated medical professions that are more or less appropriate for whatever the hell this has turned out to be.. Then add the basil, diced mushrooms, shallots, garlic, These don't need to be crispy, more so cooked as apposed to raw.
MAKE SURE THAT WHAT NEEDS TO GO IN THE GUACAMOLE AND WHAT NEEDS TO GO ON THE TACOS REMAIN SEPERATE. I DID NOT PUT POTATOES IN MY GUACAMOLE SO AS OF THE MOMENT I DON'T SUGGEST IT.
The potatoes and mushrooms will take a while to cook where as the rest you should add into your guacamole mix. This is assuming you've already chopped up the bacon and added to it. Assuming everything was done, mix again. Guac done, cover and put in fridge. Unless you're a barbarian, If that's the case. Tacos?
Are the potatoes and mushrooms done? Cool.
Now the chicken.
This is by far the easiest of the whole process. Two ways you can do this. baked or fried, I personally fried in leftover bacon grease mostly because I hate blood vessels. The goal of this part is simple. Coat chicken in lemon pepper, Cook until safe to eat, slice into strips. Heat up the tortillas if that's your thing. Add everything to taco.
Eat.
More than likely you have a LOT of extra sliced chicken and guacamole. Go ahead and save that for later or. Add it to sandwiches(Untested) Pastas(Untested) Nacos(Untested) Have it file your taxes(Not recommended) Or have more than two tacos?
Something far less complicated tomorrow.
Or it could be more complicated.

Peanut crust bacon wrapped chicken over bed of cheesy creamed spinach. Can replace cream with a tomato and peanut sauce.
I got the roasted self serve salted peanuts, crushed them, not to dust but pretty finely crushed. On a cookie sheet put any spices you want, don't necessarily need salt but a little can't hurt, lemon pepper could work very well, a decent amount of it. Olive oil, roast 45-1 hour on 275
After 45 minutes to an hour let peanuts set and cool off on either the cookie sheet or a plate. Next about half way cook 1 side of bacon and set oven to 325 What I normally do is put about 3 bacon halves per chicken breast. After that's done, remove bacon from whatever, cut in half. Depending on the number of chicken breast will depend on how many egg whites you need, 4 pieces = 2 eggs put a small amount of water in the egg whites and use a whisk to beat the eggs. Cook both sides of the chicken for about 2 minutes a peice
After chicken is removed put chicken in the egg wash, then cover chicken in peanutes. Wrap with bacon Put in oven for about an hour and a half When there's about 30 minutes left for the chicken, start the spinach, put whatever you want, onion, mushrooms etc etc etc. when the spinach is cooked add cream, after cream is decently warm add cheese, mix
If you want add some mushrooms/white wine vinegar to a seperate burner Cook mushrooms, add white wine vinegar, let simmer for 5 minutes add cream When chicken is done make a bed of creamed spinach, put a piece of chicken on top, and put the other cream on top of chicken
I always found the chicken to be a little dry which is why I went for the extra cream sauce on top. One alternative is put the chicken in for about an hour, after an hour slice the chicken torward the middle, if it's pink in any way put back in the oven for about 10 minutes depending on how under it is.
If you're using tomato try to incorporate some basil Would probably work well with pasta, I dunno I'm not a doctor.
Pico de Gallo cheeseburgers
2lbs of ground beef 2 eggs assorted spices 3-4 Tomato small bushel of Green onion 1 Onion small bushel of Cilantro Cheese of your choice Salt Pepper red pepper flakes Lemon Juice Vinegar
This one is MUCH easier
Put all beef, eggs and assorted spices into a mixing bowl. Mix then with about a third of the meat make into small patties (Not sliders but thin) Then with the last of the meat make make the last of the patties that have a pocket in the middle Halfway done.
the pico de gallo is even easier. What you're going to want to do is chop up all the veggies into cubes, add about 2-4 tablespoons of vinegar About 1/4th or 1/3rd cup lemon juice 3 teaspoons of salt and pepper each add red pepper to your liking. Mix well.
Add pico de gallo to the pocket of hamburger patties along with cheese. use the thinner patties and seal.
Cook If you want to be snazzy you can add a fried egg on top. toast buns with a small bit of butter. Serve
