12/25 Roasted Trout with Cherry Tomato. This WAS easy. Especially because we followed the part of the recipe that said “have your fish monger scale and gut your fish.”
12/22 Blueberry - Almond - Lemon cake. I don’t have a fancy mixer, just a hand one. With that, the difficulty rating was upped a notch. But overall, it’s making sure all the ingredients are the right temperature (looking at you, butter). I also didn’t wait long enough before putting the glaze on. Overall: delicious.
11/17 Mashed Sweet Potato. Surprisingly simple. I give this a thumbs up. The drizzle is very limey. (British pun not intended) (ha - autocorrect tried to change it to British pub.) but seriously - you have to like lime if your going to use his drizzle.
11/10 Bridget Jone’s Pan-Seared Salmon With Pune Nut Salsa. Best part of this dish was that the movie this was based on was not available on any streaming service (for free). It’s the third one. More Salsa. Here’s a tip: if making multiple dishes, only choose one with a salsa. It’s crazy confusing otherwise. He says this is a good one if you are short on time. Step one: soak currants for twenty minutes! Who has that kind of time! After that, the only hard part is knowing when to take you salmon out of the oven. Knowing when to take the salmon removed from the oven too early so put on a hot cast iron pan off that pan is the easy part.
11/10 Butternut Squash with Corn Salsa, Feta, and Pumpkin Seeds. Was this easy? It was 10 ingredients or less. Technically. It can be made ahead. Things I liked: not peeling the squash. Things that sounded scary but were not: the warning to have your kitchen be well ventilated. (No smoke alarms were set off) we had funky pumpkin seeds that weren’t toasting. I give this an ‘It’s easy’ but in a tone where you aren’t sure if you believe me.
11/7: curry lentil, tomato and coconut soup (not a great photo but must've been delicious because someone asked me for the recipe and made it the next day) cilantro stems for the win!
September 7 Beef Sirloin and Basil Salad. I don’t think it was beef sirloin. It was the best Steve’s Quality Market had. This was pretty easy. Fine. I’ll give him that. It seems about the beef though. The basil dressing is important, but if the beef is over-cooked it is all over.
