Dish title- Loki ka Thepla/ Gujrati thepla/ Dhudhi ka thepla
Dish Ingredients
1. Lauki/ bottle gourd/ dhudhi – 400 gm
2. Wheat flour – 300-400 gm/ one bowl
3. Millet(jower/bajra ) flour- one small cup
4. Besan /chickpea flour- one bowl
5. Chopped Green chilli- 2 -3
6. Ginger-Garlic-Black pepper paste- one Spoon
7. Cumin seeds / Ajwain - 1 spoon
8. Chopped Onion- one bowl
9. Red chilli powder-1/2 spoon
10. Turmeric powder-1/3 spoon
11. Tomato- 2 medium size& chopped
12. Salt – 1 spoon/as per your requirement
13. Oil- 7-8 spoon
14. Water –one small bowl
Dish steps/procedure-
1. Cut onion, green chilli, tomato into fine pieces.
2. Grate the bottle gourd/Lauki/dhudhi.
3. Make the mixture by mixing, red chilli powder, ginger-garlic paste, turmeric powder, cumin seeds/ajwain , onion, green chilli, tomato and salt together.
4. Put this mixture into the grated bottle gourd/lauki/dhudhi.
5. Now put wheat ,millet and chickpea flour into the mixture of spices and grated bottle gourd and prepare a dough/atta.
6. Add water only if required.
7. Heat the pan and apply one spoon oil evenly so that the mixture should not stick to the pan.
8. Put small amount of dough on the pan and dip your fingers in water and spread it on the pan .
9. Bake it on both the sides at medium to low flame.
10. Serve the thepla hot with tomato or coriander chutney/dip, pickles, curry , tomato ketchup .

Dish Ingredients
1. Brinjal/Bengun – 250 gm
2. Chopped Green chilli- 2 -3
3. Ginger-Garlic-Black pepper paste- one Spoon
4. Crushed Fennel seeds- 2 spoon
5. Mustard seeds- 1 spoon
6. Cumin seeds- 1 spoon
7. Onion- one medium size
8. Red chilli powder-1/2 spoon
9. Coriander powder- one spoon
10. Turmeric powder-1/4 spoon
11. Groundnut powder- 2 spoon
12. Tomato- 2 medium size
13. Salt – 1 spoon/as per your requirement
14. Oil- two spoon
Dish steps/procedure-
1. Cut onion, green chilli, tomato into fine pieces.
2. Grind the groundnut seeds into groundnut powder.
3. Make the mixture for the fillin by mixing groundnut powder, red chilli powder, ginger-garlic paste, turmeric powder, Crushed Fennel seeds, coriander powder and salt together.(water is not required)
4. Wash the brinjals and make a cut in them from the middle to put the filling.put filling or mixture prepared in every brinjal.
5. Take two spoon oil in the pan and heat it and add cumin seeds, mustard seeds, chopped green chilli and onion .Fry these till onion turns translucent.
6. Add the stuffed brinjals in the pan, put the lid and cook for 3-4 minute on low flame.
7. Add the chopped tomato pieces, mix well and put lid on it to cook for 1-2 minute on low flame.
8. Garnish with coriander leaves and serve hot ..

Title – Bina kadwahat wali karele ki sabzi kaise banayae
Things required-
1. Bitter gourd—250 gm
2. Onion -200 gm/3 medium sized
3. Green chilli- 2-3
4. TURMERIC POWDER -1/4 SPOON,
5. Red chilli powder -1/2 spoon
6. coriander powder- 1 spoon
7. Amchur powder/Chat masal/ unripe mango powder- 1 spoon
8. salt -1/3 spoon
Method –
1. Peel the bitter gourd or Karela and cut into half and remove seeds.
2. Chop into small pieces and mix with one spoon salt
3. Keep in refrigerator for few hours .
4. Take out from refrigerator and wash thoroughly using water.
5. Take two spoon oil in the pan and warm it .
6 . Add cumin seeds, chopped green chilli ,onion and cook well
7. Add chopped bitter gourd or Karela pieces into it and put lid on the pan and cook for 3-4 minute
8. add spices like turmeric powder, coriander powder , red dried chilli powder and dried mango powder or Amchur powder and serve hot with Chapatti or Paratha.
