Quick Lunch - Black Bean and Scrambled Egg Tortilla


You’ll need:
- An Italian mom to measure out everything because I don’t measure
- Salt, pepper, red pepper flakes, garlic powder
- 1/2 can of black beans
- 1 large egg, 2 egg whites
- Olive oil
- 1/2 of a medium onion
- 2 whole wheat tortillas (or 1 if you’re avoiding carbs)
- Shredded Moz cheese
Let’s do this:
Start by browning 2 tortillas on a medium-sized pan. You won’t need to put butter or anything down, the tortilla has enough oil to keep it from sticking. Sprinkle cheese on top of one and set off to the side.
Cut up 1/2 of a medium onion, and saute in the pan with olive oil. While that’s cooking, drain and rinse half the can of black beans.
Once the onions start to brown, throw in the beans. Sprinkle with salt, pepper, dash of red pepper for taste, garlic powder, and top it off with a little more olive oil. Don’t put a lot of salt on it, the beans are p salty from being in a can for many centuries. Once the beans are cooked (I just cook them until they are heated), throw in the eggs. If you are a magic cooking wizard, you can attempt to make an omelet. If you’re a normal person you’ll just scramble them to save yourself the disappointment.
When the egg is finished, lay the cookin’s on top of the one tortilla with cheese. Top that bad boy off with more cheese, salsa, and the other tortilla (or not, it’s still good open-faced). Cut with pizza roller or shove it all in your face at once. I don’t care what you do with your life.

Get Me Healthy
I’m starting a blog to track my progress for getting healthy and feeling better. I think it’ll be good that I can vent to the world my frustrations and maybe get some support from others also interested in this topic.
In all reality I bet only 5 people will read this. So it’s a win-win situation!
So far, the hardest decision I’ve had to make all day was choosing a username that best fit this type of blog. Tumblr helped by suggest some. In the end, it was between sweatyladywizard or westwardeaglefire.
I think I made the right choice.
So Pep, why the blog? Well internet, I just took a trip to the lady doctor, and she made me step on the scale. Yeah I get it, a woman is worried about her weight blah blah blah. SHUT IT it’s a problem and I need to solve it.
Currently, I weight more than I have in my ENTIRE life. And it’s not “baby fat” or that “you’re just growing up” shit anymore. I’m 25, not getting any taller, and it’s gotta change while I’m young and have no “old habits”. So now’s the time.
I’ve been wondering what plan would work well for me, preferably one that doesn’t require me to go on a diet or exercise. We all know diets don’t work; I need to change my eating habits. So I took to the internet.
I stumbled upon this website that looked exactly like what I needed. 7 days of meals, already planned, and all under 1200 calories:

Okay yeah if you’re a fucking rich person or a prince totally go for it. I can’t afford to buy food like this every week. I need to reduce and simplify.
I decided to eat the same thing all week, and change it up every week. I get lazy and to be honest, the likely scenario of all this is I give up halfway through shopping at the grocery store, opt out to just eat beans for my whole life, become immensely frustrated, then eat 12 pizzas to spite the diet (usually happens around day 2). So how does one lazy mofo change to a healthier life style?
I made a list of things that are easy and already in my wheelhouse to make. My job has a great fruit selection so I don’t need to buy bananas, apples, or oranges. So here’s the list I came up with:
Banana (work)
Apple (work)
Oranges (work)
Almonds
Hummus
Bell peppers
Carrots
Blueberries
Eggs with salsa + banana at work
Bran Cereal (bring to work) + blueberries
Red kidney beans (2 cans)
Chickpeas (1 can)
Red onion
Tomato
Cucumber
Lemon juice
garlic
Mixed greens
Tortillas
Black beans
Cheddar cheese
Avocado
Lime juice
Onions
Sesame oil
Garlic
Vat of olive oil
I have a couple of recipes that use these ingredients, and I’m going to make a fuck ton of beans and space them out throughout the week. I also have a lot of stuff already purchased at my house so we good.
