Located at the crossroads of Hibiya-dori and Harumi-dori, opposite the Imperial Palace and a few minutes’ walk from the Ginza shopping district, the 24-story Peninsula Tokyo also opens directly onto Naka-dori Avenue, a pedestrian-friendly street lined with top luxury boutiques.
Overseeing operations is Australian Sonja Vodusek, who was appointed general manager last December. Vodusek joined The Hongkong and Shanghai Hotels, Limited (holding company of The Peninsula Hotels) as hotel manager at The Peninsula New York in 2010. She relocated to Manila seven months later as general manager in 2011. A native of Yarrawonga in Victoria, Australia, she received separate diplomas in hotel and business management from the Blue Mountain International Hotel Management School (BMIHMS) in Sydney and the Royal Melbourne Institute of Technology, respectively. Prior to joining The Peninsula Hotels, she had 16 years of experience holding various executive management positions in the luxury hospitality sector at Four Seasons hotels in the United States, Japan, Ireland, Australia and the Czech Republic.
Vodusek has applied her international experience across all disciplines – housekeeping, front office, reception, kitchens, food & beverage – as a volunteer instructor for underprivileged youth at the Sala Baï Hotel & Restaurant School in Siem Reap, Cambodia. Her prior experience in Japan includes a six-month internship as room attendant for the Sheraton Grande in Tokyo, and 2 1/2 years as consulting director of rooms at the former Four Seasons Hotel Tokyo at Chinzan-so, where she oversaw a staff of 230 and was involved in the opening of the property’s spa.

When you move from one country to another, do you find it easy to hit the ground running?
The Peninsula culture is very similar around the globe. But as a hotel GM, you have to be plug-and-play, so to speak. My diary was packed as soon as I walked in the door. I have a great staff and during the first few months, I have been getting to know everyone and building relationships.
How would you describe the Peninsula corporate culture?
Our DNA is really about the hotel family — I think of the staff as a family. We only have 10 hotels, so we are not a big group. In a way, the general managers are really the business owners who are accountable for the hotel. You can be as creative as you want and do whatever you feel is right for the market, meaning that we get a great deal of autonomy from head office. However, I always say we are growing — we are green and not ripe, so we have to be on the lookout for new and interesting things whether it is in technology, HR or customer touch points.
How has the hotel industry changed since you began your career?
Hotels may change in terms of technology but you still have to provide a comfortable bed, hot shower, hot coffee and an orange juice, wherever you are in the world. The high tech is changing the industry because guests are more technically savvy. For us as a brand, we are already known for our advances in terms of room technology but we are also known for our personal touch and it is important to maintain that. I make an effort to meet as many guests as possible, maybe for an hour throughout the day.
What’s your management style?
My style is more collaborative. I guess I would call myself a comprehensive communicator. In the hotel, we have eight divisions and each morning, we have a briefing at which we raise any issues that need to be discussed. I tend to be more involved in marketing, PR and enhancing the guest experience. We’ve just done our first executive leadership retreat, looked at where we are going, and have cascaded a lot of that info to the managers so that everyone has the same idea of the direction we are going in.

Did the hotel hire any new staff this year?
Yes, we hired 20-30 graduates this year. I told them to work hard, have fun and do what is right. One good thing about Peninsula is that our staff have many opportunities to work at Peninsula hotels abroad. For example, each year we have a reciprocal arrangement with the Peninsula Paris where 10 of their staff come here and 10 of our Japanese staff go there. We also send them to the Philippines. In addition, we have English and Chinese classes here, so there is lot of investment in learning and development for our staff.
With new hotels opening up in Japan, staff retention will be a challenge. We have been discussing strategies because we want to be the employer of choice. Of course, career changes are much more likely now than when I was starting out. The Internet has changed everything, especially for the millennial generation. I call them the microwave generation. Stick them in and “ping,” they want to be a hotel general manager after one minute.
How is room occupancy at The Peninsula Tokyo?
I can say we are happy with our results for the first quarter. During the week, about 80% of our guests are foreign, mainly because of the weaker yen, but we would really like to be closer to 60-40. We need to grow the domestic market, especially among women.
With the 2020 Tokyo Olympics coming up, do you think Tokyo has enough hotel rooms?
Nearly 20 million tourists visited Japan in 2015 and the government has lifted the target to 40 million by 2020. There is no way that there will be enough hotel rooms by then, even though Tokyo may get another 1,000 rooms collectively. Right now, the demand is very high and all hotels are experiencing high occupancy rates. But we won’t have double the capacity by 2020. We recently met with JNTO on how we can work together to increase the inbound high-end traveller in the lead up to 2020.
Are online reservations increasing?
Yes, especially on mobile platforms. In Japan, there are still many people who make reservations the old-fashioned way by calling in.
What about groups?
We focus on high-end luxury travellers; the group segment is there but that is not our main bread and butter. Only 15% of our business comes from groups.
How about weddings?
The hotel has always been popular for weddings and the market is still strong. The vintage Rolls-Royce is a good drawcard. Currently, we are reviewing the whole business model because there is intense competition in the market with free-standing wedding centers, restaurant weddings and destination weddings abroad.
How do you generally get feedback from guests?
Usually from guest comment cards and word of mouth. Service is a journey not a destination and there will always be some complaints. It might be the bathtub is too high to step into, the shower screen door has a little gap or a complaint about the speed of things getting done. Actually, if we don’t receive any complaints, we get concerned. The staff are encouraged to report everything so we can fix it and recover before the guest leaves the property. Nowadays with social media, YouTube or TripAdvisor, word spreads fast, so we have to be on our game.
What is a typical day for you?
I show up between 7:30 and 8 a.m. I usually start off by going to the lobby, saying hello to the staff and meeting guests. Then I come back for morning meetings, after which I may have business lunches. I generally work 12 hours a day but time flies when you are having fun.
Do you work on weekends?
I try to stay away on weekends because we have a good team. For younger staff, it’s important that I be a role model in terms of balancing work and lifestyle. When I’m away from the hotel, I like to walk my dog, meet up with friends and go to pilate

This year is proving to be so stressful already. Mum has been in and out of hospital after complications with her surgery over the last two weeks. She isn't allowed to drive for another two weeks, still can't sit up straight and is on all kinds of medication. Between my dad and both sisters we have been doing clothes washing, grocery shopping and a million other things in our spare time to make sure Mum is okay. Not to mention also having surprise visits from our grandmother who starts trying to clean up the house while 'checking in' on how mum is. I need to get my passport stuff together, as I have a work conference in Mexico later in the year. I am also trying to get more of my course work done as it has to be handed in before Mexico. I have to travel to Sydney for a 4 day course to complete my advanced diploma. Between all of this I work full time as a Restaurant Manager for a fast food corporation. The restaurant I manage turns over more than 3 million a year. And what's funny is that my boss got upset that I didn't invite him to the 1989 tour as he enjoys Taylor's music. I also tried explaining to his wife that Taylor followed me on tumblr which she was in shock over. And she also calls Taylor, Tay-Tay which cracks me up every time.

Certificate cấp I (chứng chỉ nghề cấp I): là khóa huấn luyện và đào tạo đào tạo các kiến thức cơ bản, kỹ năng cần thiết. thời điểm kéo dài từ 3 tháng – 6 tháng.
Certificate cấp II và III (chứng chỉ nghề cấp II và III): thời kéo dài từ 6 đến 12 tháng.

Vocational Graduate Certificate (chứng chỉ tốt nghiệp nghề): chương trình học kéo dài 6 tháng đến 1 năm.
Vocational Graduate Diploma (văn bằng tốt nghiệp nghề): chương trình học kéo dài 1 đến 2 năm.
Tiếng Anh: là khóa huấn luyện và đào tạo cải thiện cả 4 kỹ năng nghe, nói, đọc, viết. Các khóa đào tạo giúp cung cấp cho học sinh, sinh viên vốn từ vựng chuyên ngành trong khoảng thời khắc kéo dài từ 4 – 48 tuần.
Có một điều đặc biệt bạn cần biết đó là các bằng cấp du học nghề tại Úc được coi cao. Chẳng hạn văn bằng bài bản cao cấp Advanced Diploma có giá trị tương ứng so với nửa bằng cử nhân (Bachelor).

Điều kiện du học nghề tại Úc có chương trình học đầu vào khá thấp:
Học sinh, sinh viên thế giới đã hoàn thành từ lớp 11 (THPT) trở lên và phải đủ 18 tuổi trở lên.
Có bảng điểm cấp 3, giấy chứng nhận kết quả học tập.
Học lực rất có khả năng từ nhàng nhàng trở lên.
Tiếng Anh tương đương IELTS 5.5.
Nếu tiếng Anh chưa đạt yêu cầu, một số ít trường đào tại tiếng Anh trước khi bạn học.
Chứng minh tài chính hỗ trợ chi phí (học, ăn, ở, sinh hoạt, phí phát sinh,…) trong suốt thời khắc đi du học.
Bạn cần chuẩn bị đầu đủ để đóng học phí. trung bình chi phí du học nghề tại Úc sẽ có dao động 4,000 – 22,000 AUD/ năm tùy trường, ngành học và cấp bậc.
Lộ trình học nghề Úc
• Học hết lớp 11 ở Việt Nam => Certificate III  => Certificate IV/ Diplomam => Advanced Diploma => sau khi tốt nghiệp cao đẳng nghề rất có khả năng xin việc làm hoặc liên thông chuyển tiếp lên đại học. • Học hết lớp 12 ở VN: => Certificate IV/ Diploma => Advanced Diploma => sau khi tốt nghiệp cao đẳng nghề rất có thể xin việc làm hoặc liên thông chuyển tiếp lên đại học.
Với điều kiện này, sinh viên quốc tế sau khi tốt nghiệp cao đẳng nghề có thể có cơ hội xin đi làm việc hoặc liên thông đại học (thêm 1,5- đến 2 năm tùy vào ngành học). Các du học sinh, sinh viên thế giới được ở lại Úc 1,5 năm và được đinh cư khi thỏa đủ các điều kiện của Chính phủ Úc.
Thông thường, các sinh viên sau tốt nghiệp đều đi làm trước để kiếm tiền. khi giành dụm đủ tiền và đã sẵn sàng chuẩn bị họ sẽ học liên thông lên đại học. Đây cũng giống như một cơ hội khá hay mà diện visa du học nghề tại Úc đã tạo điều kiện cho sinh viên. Meet the mum from Bega booming with her low carb baking business

The Protein Bread Co caught my attention whilst embarking on the ‘post baby bounce back keto diet’ I set myself 12 months ago.
Most ‘low carb’ flour products leave little to be desired and have you back on the carby sugars before you finish the packet! I can’t claim this bread helped me lose weight but it did allow me to continue eating toast and pancakes for brekky and pizza for dinner leaving me feeling less like a dieting social outcast.
The Protein Bread Co, like every great success story, comes from humble beginnings.
For siblings Luke and Anna Hopkins it starts in Bega with a passion for cooking, health and fitness. Their goal was to create better versions of normally high carb foods by utilising locally sourced high protein and low carb meals, seeds and flours.

What was it like growing up in Bega? 
At the time, I dreamed of living in the city, and loved our trips up to Sydney to go shopping however now I think about my childhood in the country with so many fond memories.
Looking back, growing up in the country really enhanced my creativity, resilience and resourcefulness, all which have been skills that I heavily relied on when setting up the business – and life in general!
Activities like roaming the paddocks picking blackberries then coming home and making blackberry pie and jam, or swimming in the dam on hot summer’s days are my favourite memories from that time.
How did you become motivated and inspired to follow your dreams?
I consider myself very fortunate that my parents were always very supportive of us following our dreams, even if that meant a slightly untraditional path. My childhood dream was to have a cafe/restaurant just like McDonalds but healthier.
I was always taking Mum’s traditional Danish baking recipes and making them healthier by reducing sugar (and at that stage fat).
At school I chose subjects that I felt would give me the skills to achieve this dream, such as food technology and hospitality.
I loved working, gaining experience and earning my own money. When I was 12 I started baking healthy cakes for Bega Health Foods to sell by the slice. Then when I was old enough I started working at Bega Foodworks in the Deli.
The more I worked, learned and progressed, the clearer I became on my vision of my future in business.

What business support did you have to help you get your bread on the market?
I can’t say we really had any official business support as such, mainly honest feedback and moral support from friends and family!
Protein Bread was a product that I created from my cafe, that was on the menu for my health conscious customers.
Due to regular Facebook posts, I was soon getting demand from all over Australia for my Low Carb Protein Bread.
Being a fresh product, with no preservatives that required refrigeration, sending bread around the country wasn’t an option. This is when my brother Luke came on board and set up our website, and we started selling the bread mix online.
Today the business (now PBCo – formerly The Protein Bread Company) has 12 employees, over 20 natural, low carb, high protein products, and two manufacturing facilities in Marrickville, Sydney.
We sell direct to consumers online around Australia, NZ and the US as well as in leading health food and independent grocery.

What did you study after high school?
After school, I was keen to start working and gain experience in hospitality and leadership. I moved to Sydney and started studying business through TAFE.
I also gained a casual position at McDonalds in McCafe. After about 6 months my restaurant manager asked if I’d like to commence a Management Development Program through McDonalds, instead of TAFE,  which I did, and went on to achieve my Advanced Diploma of Business, at the same time as gaining real life, hands on experience.
This experience was absolutely invaluable for my confidence and knowledge of business. After a 10 year career in leadership with McDonalds Head Office, I decided to take the plunge and bring my childhood dream to life.
Whole Meal Cafe opened in Darlinghurst, Sydney in 2010.
I ran the cafe for 4 years, then successfully sold in 2014 to focus all my attention on The Protein Bread Company.
I really believe that everyone has something special to offer the world, and the best thing we can do is encourage kids to follow their dreams and forge a path that they are passionate about, then success will come.
The traditional education system has its place for certain careers, however definitely not the best approach for everyone, nor the only way.

Where do you see yourself in 5 years?
My ultimate goal would be to have the business in a position where we can move back to the Far South Coast, or maybe have even sold and started a new business down there.
My passion is enabling people to feel their best, by making better food choices. As a society, we have made some progress when it comes to health education and understanding of food, and the impact this can have on our bodies, and minds, however, there is still so much work to be done.
People often think that healthy food choices are expensive, hard and not tasty – I try and show people that this does not have to be the case! There is so much focus and attention on exercise, personal trainers, the gym – all of which play a part, however, can also come unstuck if the wrong food choices are made.
Right now my focus is on PBCo and creating our products – healthy foods that people love to eat, however, I would also love to travel around and talk in high schools about food and the power of food to change lives.
Who is your most famous customer?
Guy and Jules Sebastian, Kylie Gillies, Karl Stefanovic and James Stuart have all used our products in their recent transformations, as well as Para Olympian Mon Murphy.
How have your parents supported your dream? 
By giving us all the flexibility and freedom to pursue our goals without judgement or expectation.
There has never been any pressure that we ‘should’ go down a certain path, which I am so grateful for. Also asking the right questions to help gain clarity and just bouncing around ideas.

You’re a mother of a 1 year old, how do you get enough sleep to run a company?!!
Mmmmmm very good question, it’s definitely a struggle!!
I’m fortunate enough to have Lily in a great little family daycare place near work three days a week, and then my partner Aaron has her at home one day a week, so I can work four days a week without her.
Re the sleep…. it’s just a matter of doing the best I can each day, some days are better than others depending on how many times she has woken up! I try not to be hard on myself but it’s definitely frustrating when there’s just so much I want to do!!
Apart from that eating the best I can, avoiding sugar/carbs really helps my energy.
How do you spend your time when back in the Bega Valley
My #1 is definitely glamping at Tathra Beachside Caravan Park, which we do about twice a year and absolutely love.
Switching off, being in nature, breathing the fresh air, hearing the ocean and exploring all the beautiful places down there are what I love most.
I now have a 1-year-old daughter who also loves being outdoors in nature and she really loved the last trip we took.
The Far South Coast is just so beautiful and has such a special place in my heart, it’s definitely my go to for holidays and mini breaks.
We enjoyed dinner and drinks at Tathra Pub, the renovations are stunning, and the staff were also very impressive, and we had some amazing bacon & egg rolls and coffee from Wild Orchid Cafe.
It’s so pleasing to see some great business popping up or reinventing themselves on the Far South Coast.

In an effort to support students moving into regional areas of Australia, the Australian government recently announced new changes which will benefit current and future students studying in regional Australia. If you complete at least 1 degree, diploma or trade qualification that satisfies the Australian study requirement obtained while living and studying in an eligible area of regional Australia, not only will you be able to claim 5 additional points for a skilled visa, you may also be able to apply for a second temporary graduate visa (SC 485 visa).
On November 16 2019, the Department of Home Affairs announced that regional area will be defined as any area excluding Sydney, Melbourne and Brisbane (List of postcode can be found here).
Northern Territory – Darwin
All of the Northern Territory is considered regional centres by Immigration. What that means is that graduates from Northern Territory may be eligible for an additional two years on their second temporary graduate visa (SC 485)

The Protein Bread Co caught my attention whilst embarking on the ‘post baby bounce back keto diet’ I set myself 12 months ago.
Most ‘low carb’ flour products leave little to be desired and have you back on the carby sugars before you finish the packet! I can’t claim this bread helped me lose weight but it did allow me to continue eating toast and pancakes for brekky and pizza for dinner leaving me feeling less like a dieting social outcast.
The Protein Bread Co, like every great success story, comes from humble beginnings.
For siblings Luke and Anna Hopkins it starts in Bega with a passion for cooking, health and fitness. Their goal was to create better versions of normally high carb foods by utilising locally sourced high protein and low carb meals, seeds and flours.

What was it like growing up in Bega? 
At the time, I dreamed of living in the city, and loved our trips up to Sydney to go shopping however now I think about my childhood in the country with so many fond memories.
Looking back, growing up in the country really enhanced my creativity, resilience and resourcefulness, all which have been skills that I heavily relied on when setting up the business – and life in general!
Activities like roaming the paddocks picking blackberries then coming home and making blackberry pie and jam, or swimming in the dam on hot summer’s days are my favourite memories from that time.
How did you become motivated and inspired to follow your dreams?
I consider myself very fortunate that my parents were always very supportive of us following our dreams, even if that meant a slightly untraditional path. My childhood dream was to have a cafe/restaurant just like McDonalds but healthier.
I was always taking Mum’s traditional Danish baking recipes and making them healthier by reducing sugar (and at that stage fat).
At school I chose subjects that I felt would give me the skills to achieve this dream, such as food technology and hospitality.
I loved working, gaining experience and earning my own money. When I was 12 I started baking healthy cakes for Bega Health Foods to sell by the slice. Then when I was old enough I started working at Bega Foodworks in the Deli.
The more I worked, learned and progressed, the clearer I became on my vision of my future in business.

What business support did you have to help you get your bread on the market?
I can’t say we really had any official business support as such, mainly honest feedback and moral support from friends and family!
Protein Bread was a product that I created from my cafe, that was on the menu for my health conscious customers.
Due to regular Facebook posts, I was soon getting demand from all over Australia for my Low Carb Protein Bread.
Being a fresh product, with no preservatives that required refrigeration, sending bread around the country wasn’t an option. This is when my brother Luke came on board and set up our website, and we started selling the bread mix online.
Today the business (now PBCo – formerly The Protein Bread Company) has 12 employees, over 20 natural, low carb, high protein products, and two manufacturing facilities in Marrickville, Sydney.
We sell direct to consumers online around Australia, NZ and the US as well as in leading health food and independent grocery.
