Castletown Café Episode 7: Addison’s Personalized Tea Part 2: Mari Tea

Whose tea did I start with? Oddly, none of the canonical teas, but instead, I tried my own flavor. Originally, this episode was going to be about using your imagination and thinking up what your flavor would taste like...that is, if somebody else where to drink it. If you wanted to drink your own flavor, just pour yourself a glass of water, right? Just kidding! Nah, I’m sure we’d wanna try our own flavors for ourselves, so I began figuring out what to make my tea flavor and the ingredients I’d need. Then I got an idea for Noelle Tea, Kris Tea, and so on, and so forth!

One hundred Dark Dollars for magical tea that changes flavors when different people drink it? Yeah, I’d say that’s worth the price, as long as you don’t drink your own flavor, when it just turns into water. Although you’re not supposed to drink your flavor, what if you could? As I wondered what my tea would turn into when different characters were to drink it, I settled on a chai-like tea that would be easy to brew for someone who had never made their own tea before, but has made mulled apple cider many a time in the past. All I needed to do was just use water instead of juice and add tea bags, right? Fortunately, making my own tea didn’t have to be as daunting or as complex as I once thought. Although I begun to read “Healing Herbal Teas: Learn to Blend 101 Specially Formulated Teas” by Sarah Farr, the herbalism and the math required to make your own combinations of loose-leaf tea didn’t really jive with me.
Remembering how I make warm spiced ciders every autumn, an idea struck me: brew my favorite tea, English Breakfast black, with my usual mulling ingredients of cinnamon, clove, allspice, and orange slices, and to sweeten with a small amount of honey upon serving. I began by brewing it all together in my ghost mug, taking the tea bag out, and letting the spices and orange continue brewing for another 30 minutes before removing them, placing the tea in the microwave and reheating it for 60 seconds (I have a 1200 watt micro, if you have a 1100, you may need 30-60 seconds more time), stirring in honey, and returning the orange slice as a garnish. While that result was good, I thought it was missing something: a slice of ginger and a dash of nutmeg. Switching to the stovetop, Mari Tea now had the four spices that make up Pumpkin Pie Spice: cinnamon, ginger, clove and nutmeg. I still kept the allspice and orange, however, to give it a little citrus flavor and to bring a little fruitiness into this “pumpkin spice black tea”.

MARI TEA:
Ingredients:
4 cups water
1 cinnamon stick
2 allspice berries
3 whole cloves
1/4 piece ginger
Sprinkle of nutmeg
2 small orange slices
2 bags English black tea
Honey to taste
Peel and slice off one 1/4 inch thick piece of ginger. Slice orange for 2 wedges or round slices, keep the peel on. The peel’s oils add to the flavor as does the juice.
Bring 4 cups of water to a boil on high heat and turn off heat immediately. Carefully, preferably with a slotted spoon, add your cinnamon, ginger, cloves, allspice, orange, and sprinkle in nutmeg. Cover and let brew for 30 minutes.
After 30 minutes, turn the heat back on to get to a simmer before turning the heat off again and adding your tea bags. Cover and brew the tea for 3 minutes and then remove bags.
Strain tea into a heat-proof bowl, then ladle your tea into a teapot or just into your desired teapot. If you have a strainer small enough to fit a teapot, you can strain your tea directly into one.
Serve by pouring a cup or ladling a cup from the bowl. Add honey to taste, and store leftover tea in an airtight container after it’s cooled.
That solved my question of what Mari-flavored tea would taste like - pumpkin spice black tea with orange and honey. What would you-flavored tea taste like? I hope I could give you ideas on how to do your own tea. Think of the kinds of teas you like, and the flavors you like. Get creative!
This, however, was just the beginning. With this, I quickly figured out the rest from here. Oh, we can go further…and we will!

The Best Black Bean Burgers I’ve Ever Had
We’re settling into another week at our favorite vacation spot: Deep Creek Lake. We haven’t taken a non-work trip in over 2 years, so we packed up Noelle, the dogs, and pretty much everything we own and are here for 2 weeks! There’s been biking, hiking, swimming, boating, tubing, s’mores-ing, grilling, cheers-ing, and above all else: sitting on the deck doing absolutely nothing. Now that’s vacation.
Yesterday we took Noelle to where we got engaged 5 years ago. Remember that? Those photos. We were babies! ♥
Earlier in the summer, with vacation in mind, I made a batch of what I believe to be the best black bean burgers ever. Or at least the best black bean burgers I’ve ever had. The goal was to have a delicious homemade vegetarian option for the nights we grill burgers and hot dogs. My assistant, Hilari, was visiting and we couldn’t believe their hearty texture, incredible flavor, and overall ease of preparation. I was expecting good, but not this good. Kevin actually loved them too, which… I don’t know… sort of surprised me because he loves beef and this was… beans.
Let’s highlight the good stuff. These black bean burgers are:
easy
healthy
hearty
satisfying
big + thick
compact
garlicky
juicy
spicy
NOT MUSHY
I feel the need to shout that these black bean burgers are not mushy, one of the common problems with homemade black bean burgers. On the other hand, these black bean burgers are not crumbly either. They hold their shape beautifully!
What makes them the best?
BEHIND THE RECIPE
Partially dry out the black beans. I learned this from Serious Eats. Spread out the canned black beans onto a lined baking sheet and bake for about 15 minutes. This prevents the black bean burgers from tasting like mush.
While the black beans are in the oven, sauté some garlic, onion, and pepper together. This will be the flavor base of the entire burger. Make sure you blot the garlic, onion, + pepper when they’re done– you don’t want its moisture in the black bean burger.
Food processor or fork! Your choice. Whichever you choose, make sure you don’t completely mash the black beans. We want a bulky and satisfying texture. Larger chunks of beans are the best part!
FLAVOR. A black bean burger would simply be a patty made from beans if we didn’t add some pizazz. The sautéed garlic, onion, + pepper combo is a great start, but a little cumin, worcestershire sauce, smoked paprika, feta cheese, and chili pepper turn black beans into the BEST black bean burger.
Now let’s talk about binders.
How do the black bean burgers hold their shape?
Breadcrumbs. I used gluten free bread crumbs to keep the burgers GF, but any bread crumbs are great. You can use crushed crackers, almond flour, or even oat flour instead.
Ketchup. I love ketchup so the more the merrier, but you only need 2 Tablespoons. Some sort of condiment like this is needed so the burgers hold their shape. Instead of ketchup, try mayo or BBQ sauce. (I used a tangy BBQ sauce in the 2nd batch and the burgers were incredible.)
2 eggs. Best burger binder you’ll find.
All of this stuff, plus the baked black beans, goes into 1 big bowl. Lightly mash it all with a fork to combine. It’s too easy.
Shape the black bean burgers however large or small you want, keeping in mind that the larger they are, the more unevenly they’ll cook. From what I tested, the sweet spot is about 1/3 cup of mixture.
You can bake or grill the burgers– instructions for both included in the printable recipe below. You can also make the burgers ahead of time and freeze, which is what I did for our trip. Stack them between parchment paper in a freezer container or zipped-top bag. You can even bake/grill the frozen burgers if you forget to thaw them.
For a light lunch, skip the bun and eat on a salad. For a seriously impressive supper, get creative with the toppings: mashed avocado + caramelized onion, pepper jack cheese + spicy mustard + sweet pickles, herbed goat cheese + roasted red peppers, sriracha + sautéed mushrooms, mozzarella + pesto, corn salsa + cheddar cheese.
When I made them this past weekend, I piled the black bean burgers high with BBQ sauce, Swiss cheese, and grilled pineapple. Best thing I’ve eaten all week. And my week included s’mores made with peanut butter cups. SO THAT’S A GOOD BURGER.

Ingredients:
2 (14 ounce) cans black beans, drained, rinsed, and patted dry
1 Tablespoon extra virgin olive oil
3/4 cup finely chopped bell pepper (1/2 of a pepper)
1 cup finely chopped yellow onion (1/2 of a large onion)
3 garlic cloves, minced (about 1 Tablespoon)
1 and 1/2 teaspoons ground cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon smoked paprika
1/2 cup bread crumbs or oat flour
1/2 cup feta cheese
2 large eggs
1 Tablespoon Worcestershire sauce
2 Tablespoons ketchup, mayo, or BBQ sauce
pinch salt + pepper
Directions:
Preheat oven to 325°F (163°C). Spread beans evenly onto a lined baking sheet and bake for 15 minutes until slightly dried out.
Meanwhile, sauté olive oil, chopped pepper, onion, and garlic over medium heat until peppers and onions are soft, about 5-6 minutes. Gently blot some of the moisture out. Place in a large bowl or in a food processor with the remaining ingredients. Stir or pulse everything together, then add the black beans. Mash with a fork or pulse the mixture, leaving some larger chunks of beans.
Form into patties-- about 1/3 cup of mixture in each.
To bake: Place patties on a lined baking sheet and bake at 375°F (191°C) for place patties on baking sheet, and bake 10 minutes on each side. To grill: Place patties on aluminum foil and grill 8 minutes on each side. 
Serve with your favorite toppings.
Make ahead tip: Cooked or uncooked black bean burgers freeze wonderfully! Stack between parchment paper in a freezer container or zipped-top bag. Thaw in the refrigerator and reheat to your liking or, if uncooked, cook according to instructions.   If desired, you can skip thawing and reheat/cook from frozen for an extra couple minutes.
Recipe Notes:
These black bean burgers are vegetarian, but they are not vegan. To make vegan, leave out the cheese. Replace the Worcestershire sauce with a different vegan condiment (your favorite BBQ sauce would be great!) and replace the eggs with 1/3 cup mashed sweet potato.

- Noelle. – Llamo con la voz entrecortada – Bésame.
Ella obedeció la demanda del chico de cabello gris inclinándose para unir sus labios en un beso apasionado mientras sus manos pasaban por encima de sus hombros para abrazarlo mientras él la acercaba con sus brazos rodeado su cintura.
- ¡Noelle!
Abrió los ojos sobresaltada por el grito de su nombre, Vanessa estaba a su lado todavía vestida en su camisón, su mano tocaba con insistencia su hombro intentando levantarla, se sentó en su cama confundida manteniendo la almohada que abrazaba presionada con fuerza contra su pecho, sacudió su cabeza enfocando su mirada en la mujer mayor.
- ¿Qué sucede, Vanessa?
- Estabas moviéndote demasiado en sueños y tenias la cara roja, pensé que podrías tener fiebre. – A medida que la escuchaba su rostro se ruborizaba de un rojo intenso, y su expresión se llenaba de vergüenza – ¿O tal vez interrumpí un buen sueño?
- ¡No, no…Claro que no! – Balbuceo moviendo sus manos torpemente, su nerviosismo solo logro que la sonrisa de Vanessa se convirtiera en una maliciosa.
- Con otro novato conocido…
- ¡Dije que no! Soy un miembro de la realeza…
- Esta bien, Noelle. – Dijo colocando su mano sobre su cabeza – Tus sueños son tuyos y puedes disfrutar lo que suceda en ellos. – Noelle estaba tranquilizándose con las palabras de la mujer hasta que siguió hablando – Pero es mejor cuando es la realidad.
- ¡Sal! – Grito con todas sus fuerzas empezando a lanzarle las almohadas de su cama mientras Vanessa corría al pasillo riéndose escandalosamente, decidió perseguirla con una almohada en su mano lista para lanzarla cuando cruzando una esquina choco bruscamente contra algo duro, impulsada por el rebote se caía sobre su trasero cuando una mano rodeo su brazo para ayudarla a recuperar su balance.
- ¿Estás bien, Noelle? – Pregunto con preocupación, aunque ella solo pudo escuchar el “Bésame” demandante de sus sueños y siguiendo el mismo impulso se movió para unir sus labios en un movimiento torpe.
- ¡Te dije que era mejor en la realidad! – Chillo Vanessa que regreso sobre sus pasos al dejar de sentir a la adolescente perseguirla.
Completamente avergonzada Noelle intento alejarse, pero Asta confundido después de ver a Vanessa corriendo por la base en pijama y luego chocando con Noelle, sostuvo su mano con firmeza, su mente intentaba procesar lo sucedido, pero se estaba quemando su cerebro a mitad del cargando, en esos momentos Finral también se acerco hasta ellos.    
- ¿Qué sucede?
- Noelle tropezó. – Contesto Asta con seguridad, dejando sorprendida a las dos mujeres.
- No deberías correr en camisón, Noelle. – Regaño Finral dándose la vuelta ligeramente avergonzado, Asta soltó su agarre sobre el brazo femenino con una leve sonrisa para seguir al mago espacial.
- ¿Es tan tonto? – Inquirió Vanessa al aire sin esperar una respuesta real, Noelle parecía en estado de conmoción por la situación así que le paso un brazo por los hombros para regresarla a su habitación – Tal vez tengas que ser directa. Después de todo esto fue algo accidental – Vanessa siguió hablando, aunque Noelle no la está escuchando, quería que la tragara la tierra.

- ¿Noelle? ¿Qué sucede?
- ¿Asta? – Ella no esperaba que la encontrara en el techo de la base debido a que normalmente solo Nero subía hasta aquí – ¿Por qué viniste?
- Sentí que regresaste por tu mí, parecías sentirte muy triste. – Contestó sentándose a su lado y apoyando su mano sobre la que ella tenía en el techo.
- No es nada. – Dijo nerviosa por el contacto de sus manos.
- Pensé que habías ido a cenar con tus hermanos.
- Si, no salió nada bien, no sé por qué tenía esperanzas de que algo hubiera cambiado, solo porque ahora puedo usar mi magia.
- ¿No fueron amables?
- Hermano Mayor Solid me trato como si nada hubiera sucedido, durante el ataque de los elfos me dijo que tenía que regresar con vida porque también era una Silva, en cambio esta noche…. Lo negó todo. – Algunas lágrimas cayeron por sus mejillas mientras sus hombros temblaban – Fui una tonta al esperar más…
Se vio interrumpida cuando Asta se inclinó para besarla en la mejilla, la acción la tomo tan desprevenida que solo pudo aguantar la respiración mientras su rostro se ruborizaba, balbuceo tontamente mientras retrocedía.
- ¿Qué haces?
- En la iglesia cuando alguno de los niños estaba llorando, la Hermana Lily solía besar sus lágrimas, para ayudarlos a quitar esa tristeza. – Asta le dedico una sonrisa amable – Yuno y yo éramos los mayores así que teníamos que consolar a los más pequeños cuando tenían pesadillas, Yuno incluso era muy llorón cuando éramos niños.
- ¿Yuno?
- Sí, vivimos algo difícil cuando éramos pequeños, a partir de ese día no volvió a llorar y se convirtió en lo que es ahora. – Asta sonrió orgulloso – Soy un hermano mayor así que me cuesta mucho creer las cosas que tus hermanos te hacen, los crueles que pueden ser contigo.
- Cuando era niña y hasta antes de entrar a los Toros Negros, pensaba que merecía ese trato, después de todo era la causa de la muerte de nuestra madre… Fui miserable toda mi infancia, deseando, aunque sea una pequeña muestra de afecto por parte de ellos.  – Noelle movió sus manos para poner énfasis en sus palabras – No es justo.
Odiaba la forma en que su voz se quebraba al decir las palabras, odiaba sentirse pequeña, miserable y desolada, incluso con el conocimiento de la verdad de la muerte de su madre no podía dejar de pensar como en el pasado, en las circunstancias que dejaron huella en su persona.
- No lo es. – Concordó el chico dándole un apretón a su mano – No es justo la forma en que te tratan, no puedo cambiar su comportamiento, pero puedo estar aquí para ti siempre que lo necesites.
- ¿Siempre?
- Siempre, es una promesa. – Soltó su mano para levantar su dedo meñique hacia ella.
- Estas haciéndole una promesa a una princesa, no puedes romperla. – Dijo entrelazando su propio meñique con el suyo mientras usaba un tono de voz exigente, sin embargo, sabía que eso no hacía falta, Asta siempre cumplía sus promesas.
- La próxima vez deberías mandar a volar a tu hermano.
- Hermano Mayor Nozel me reprendería, no es apropiado para una princesa tener ese comportamiento.
- Pero los Toros Negros pueden hacerlo.
- No, los Toros Negros tampoco pueden hacerlo. – Replica con seriedad antes de sonreír sinceramente – Gracias, Asta.
- Siempre podrás contar conmigo. – Noelle asintió dirigiendo su mirada al cielo estrellado, quizás no lograría formar parte de su familia de sangre, pero tenia una nueva familia con la que había creado preciosos recuerdos, lazos irrompibles, un amor hacia si misma y hacia la persona que estaba a su lado.
