HOW TO MAKE/COOK CHETTINAD EGG CURRY | செட்டிநாடு முட்டை குழம்பு | THE TAMILIAN KITCHEN PREPARATIONS: STEP 1: In a pan, heat few drops of oil. Add turmeric powder, salt. Combine well. STEP 2: Slice the boiled eggs into 2 pieces. Add the sliced eggs and then fry the eggs on both sides in low flame. Keep it aside. STEP 3: Preparation of Chettinad masala: In a pan, dry roast star anise, cinnamon, cloves, cardamom, pepper, coriander seeds, cumin seeds, fennel seeds and red chillies. Dry roast for 2 mins in medium flame and then grind it. STEP 4: In a pan, heat oil, add mustard, bayleaf, shallots and required amount of salt. Cook well for 3 mins. STEP 5: Add ginger garlic paste, green chilies, turmeric powder, red chilli powder and chettinad masala. Stir well and cook until the raw smell leaves. STEP 6: Add Chopped tomatoes. Cook well until tomato becomes so soft. STEP 7: For kolambu, add water. Incase for gravy add less water. Allow the mixture to boil. STEP 8: Add fried eggs. Allow the kolambu to boil for 3 mins. Finally add curry leaves. My new found favorite kitchen utensil is my grandmother's irumbu Cheena chatti (iron kadai). Today when we got some chicken , mom wanted to make @vahchef 's Chettinad Chicken. I had to break the news to her that most chef versions don't have much common to the cuisine of Nattukottai Chettiars. As the @thebangala matriarch Meenakshi Meyyappan opines that if there is a dish which has some similarity to the Chettinad Chicken , it is the Milagu Kozhi Varuval. Unlike the bowl of fire that you get in restaurants in Chennai, Chettinad food is nuanced , delightful with predominant notes of black pepper. Madam Meyyappan says that Chettiars were originally Vegetarian & they have quite a few nice plant based dishes up their Kitty. But moving to the hot ,arid climes in and around Karaikudi which happens to be a rain shadow region, they took to meat . With spices & techniques sourced from all over the world thanks to trade with South East Asia, their food can be quite exotic to the unfamiliar. Milagu Kozhi Varuval though is rather simple. While perusing through her interview, she mentions that cardamom, cloves, cinnamon & Tomatoes are a recent entrant to their Cuisine & hence she doesn't use it in her recipe. So I read through quite a few recipes including Jiggs Kalra & Sanjeev Kapoor which contradicts what she said. I finally found a recipe which seemed like it is inspired from the book. I customized it keeping it in mind what I have eaten in Chettinad restaurants in Trichy & Thanjavur. As someone mentioned, they don't marinate their meat .The key is the spice mix . For 300 g chicken, dry roast half a teaspoon each of cumin, fennel, coriander seeds , 1 teaspoon of pepper & 3 gundu ( rotund ) chillies. This was then made into a wet paste with , ginger , garlic, turmeric powder,salt & a little water.In a kadai, add a tbsp of sesame oil, 10 shallots finally chopped , fry till they become golden brown . Add the wet paste, high flame for 2 min & then add the chicken. Cook it till it caramelises a bit , add some water cleaning the remaining bits of your masala, cook in medium flame till the water evaporates & the masala coats the bird. Fool proof deliciousness. HOW TO COOK / MAKE MUTTON KEEMA BALLS | Method 2 | மட்டன் கோலா உருண்டை | THE TAMILIAN KITCHEN PREPARATION: Step 1: In a blender add cardamom, cinnamon, black pepper, fennel seeds and cumin seeds. Blend it to powder. Step 2: In a pan, heat some oil and then add chopped shallots, green chillies. Cook until the shallots changes its color. Add garlic cloves. Once it gets cooked keep it aside. Step 3: Add grated coconut to the pan and dry roast it and add it to the above mixture. Blend to fine paste Step 4:Boil the mutton keema with turmeric powder for 15 mins. Once the keema gets cooked remove excess water from it. Step 5: In a plate add the cooked keema, blended paste and blended powder and give a nice mix. Then add some ghee if needed to the mixture. Step 6: Now make the mixture to small balls and deep fry in the oil. Fry the balls until it chnages to golden and crisp. So the story behind this dish is It was a rainy weekend AND I was craving for spicy chicken dish. So at the first place I decided to make simple chicken curry but the foodie in me said to me to try something new. However while browsing the net I came across so many yummy mouthwatering chicken dishes and then I saw a recipe of Roasted Chicken. And….I made up my mind to prepare Roasted Chicken but I also wanted some curry to go with my chapatis and putting extra effort making another curry dish on lazy weekend…naaahh.. I was not in the mood :P And Roasted chicken is a dry dish which I can eat as a starter but not with chapatis :D So I decided to make Chicken Ghee Roast with little curry. Thats it! But then I saw this recipe of Chicken Ghee Roast in Chettinad Style…and Bang On…finally I knew what I need to make. :D
Learn Step By Step Recipe With Pictures For Chicken Ghee Roast- Chettinad Style
Serves 2
Ingredients:
1/2 Kg small/medium chicken pieces (with bone)
1 Cup finely chopped onions
1 Tbsp lemon juice
1/2 Cup thick curd
1 Tbsp red chili powder
1 Tsp coriander powder
1 Tsp garam masala powder
4-5 Tbsp ghee
Salt as required
Chettinad Masala
2 Tbsp ginger-garlic paste
2 Tsp coriander seeds
7-8 Dry red chili or as you like
1 Tsp black pepper corns
1 Tsp cumin seeds
1 Tsp fennel seeds
2-3 Green cardamoms
1 Star anise
2-3 Cloves
2 Piece cinnamon stick
Recipe:
Step 1- In a pan dry roast all the spices mentioned in the chettinad masala ingredients except grated coconut. We will add coconut later. Roast the spices until golden brown on low medium flame. Make sure it should not get burnt
In a jar add the roasted spices, ginger-garlic paste and grind to a fine or coarse paste
Step 2- Add the curd, 1/2tsp turmeric powder, red chili powder, ground paste, required salt and lemon juice and allow it to marinade for 1hour or more
Step 3- Heat ghee in a pan and sauté chopped onions until translucent. Turn off the flame, let it cool a little and make a smooth paste of it
Step 4- In a deep pan add 3-4 tbsp ghee and let the cumin seeds splutter. Then add the onion paste and fry for 6-7mins and add corinader powder and fry for another 4-5mins
Step 5- Now add marinated chicken and cook on medium flame for 15-20mins and add salt as required
Let the chicken cook on it’s own water. If you want dry chicken roast then fry the chicken on high flame until the water evaporates
Add garam masala powder and cover the lid of the pan and cook for another 20-25mins. It may take more/ less time depending upon the size of the chicken pieces. Turn off the flame, keep the lid covered. Serve after 10-15mins with rice/ chapati
