How To Do Camping Solar w/ Limited Battery Use

I'm trying to build a portable solar power rig for camping. Specifically, I need it to power a 12 V 4.5 A portable freezer as well as charge my tablet. I have some questions about battery size and using appliances while charging that I'm hoping yall can answer.

The Setup:

I plan on using a charge controller (a cheap one in this case, probably PWM) and connecting it to a lead acid battery. The battery would then be connected to the freezer as well as a 12V-to-USB adapter/buck converter [https://www.amazon.com/Ginsco-Charger-Socket-Outlet-2-1A%EF%BC%884-2A%EF%BC%89/dp/B01N6S2SNM/ref=sr_1_3?keywords=12+volt+to+usb+adapter&qid=1550092784&s=gateway&sr=8-3]. Probably I'd throw in some fuses.

The Questions:

How large does my battery need to be? Or rather, how small can it be?

My situation is a bit peculiar, it's a sort of trial-run for whether I want to live in an RV full-time, mostly on land without electrical hookups. If I do decide to live in an RV then I'll want a larger solar-electric system than I have in the "trial" period. If I decide not to do it then I won't have a use for the small solar electric system I buy and I'll have to sell the parts--and used lead batteries aren't easy to sell without owning a battery resale company. So for this camping setup I want the lowest capacity, least expensive battery possible.

Normally I understand the basic setup for this would involve a battery with enough life to get the freezer through the night. I think a 20 AH lead acid battery might do it (4.5 amps run about 1/5 of the time for 12 hours gives 10.8 AH, then multiply by two because we're trying to keep the battery from going below 40% or 50%). Is this math correct?

But What If I Didn't Use Electricity At Night?

Although a 20 AH battery won't break the bank I'm still thinking ahead to the system I'd want for an RV so please humor me as I ask: If I were to try to limit electricity use to only when the sun was shining, how much would I need in the way of battery capacity? Am I right in thinking that inducing a load while the solar panels are generating power basically pulls power from the solar panels, meaning that in this case the whole purpose of the battery is more or less as a buffer that keeps the voltage going to devices constant as the charge controller voltage fluctuates from one millisecond to another? Does this mean I could potentially use a 5 AH or 10 AH battery successfully, at least on the days when the sun is shining (I plan on camping in a sunny climate).

High Voltage?

Probably this isn't an issue and I know this is an absolute newbie question, but I do wonder about what happens if the solar panels are charging the batteries at 14.6 V or whatever the maximum voltage is...will that cause problems with either the USB converter or the 12 V device? Would they need the voltage to be closer to 12.8 or whatnot?
