Tangy Goa-Style Pork Curry (Chiristas Ghassi)

The recipe is from this book.

1.25 lbs lean pork, cubed 1 tsp turmeric powder Salt 1 large onion, sliced 2 tsps ginger-garlic paste 10 red chiles, stalks removed and deseeded 1 tbs garam masala powder 1/3 cup brown vinegar 3 tbls vegetable oil

Mix the pork, turmeric and salt (I used 1/2 tsp) in a large mixing bowl and set aside.

Add the onion, ginger-garlic paste, chiles, garam masala and vinegar in a blender or food processor until very finely mixed into a paste.

Heat the oil in a medium, heavy-bottomed saucepan and fry the pork, stir to prevent sticking. Add some water if necessary. Cook for about 10 minutes, or until all the pork is browned.

Add the onion mixture and stir to blend. Pour in a bit of water if the paste is too thick. Bring to a boil, reduce heat, cover and cook until the pork is tender (about 1 hour).

Serve hot with rice.

I used serrano peppers instead of red chiles, so my curry paste was green instead of red. I also used malt vinegar in place of brown vinegar.

This was very good, but very spicy. Cut back on the peppers if you don’t enjoy spicy food. While it had a lot of heat the garam masala gave it a hint of sweet as well.
