Vrat wale Aloo ki sabzi or Farali Aloo Bhaji (Potato Curry for Fasting) – is a spicy falahari recipe (A tasty potato curry) made during fasting or vrat for festivals such as navaratri, maha shivratri, ekadashi,  janmashtami, or shravan maas upwas. You can serve these falahari aloo as a sabzi or Potato Soup. Vrat wali aloo sabzi (Simple Potato curry without onion or garlic) is simple and delicious and is ready in minutes. This curry / sabzi is consumed mostly during the days when one observing fast and restricts from consuming garlic or onion. This "Falahari" sabzi goes well with kuttu ki poori (Buckwheat flour puffed bread), Rajgire ki poori / paratha (Amaranth flour bread) or Singhare ke aate ki puri (Water chestnut flour bread) etc.. Vrat Wale Aloo Sabzi is quick fasting (vrat/upwas/navratri) recipe which makes excellent side dish with vrat (navratri) ka khana like kuttu cheela, singhara cheela, singhara poori, samvat pulao or khichdi. You can make this sabji without any festivals too for breakfast/brunch and it tastes best with whole wheat paratha and a bowl of fresh Dahi (yogurt). A simple dish of delicious potatoes made especially during fasting in by people in India. Boiled potatoes are made in the dry form or in curry form. Sukhe aloo( dry potato) can be had as the main dish with kuttu/singhada parantha or pooris( Buckwheat /Water Chestnut flatbreads that are eaten during fasts)or as a snack. It is very easy to make these potatoes with minimum or no use of spices. As a kid, I and my sister always looked forward eating this with curd/yogurt when mom made these during her fasting days.
All you need are boiled potatoes depending on the quantity you are making.For making these potatoes I don’t use any spices except the cumin seeds. Feel free to use any of the spices that you use during fasting. I also add finely chopped green chillies and garnish with fresh coriander.  Let’s see this super quick way of making something so simple and yet delicious!!
Time: 10 minutes
Serving: 2
Ingredients:
Boiled Potatoes–2
Cumin Seeds–1/4 Tsp
Green Chillies–2 medium
Ghee(Indian Clarified Butter)–2 Tsp
Sendha Namak*– as per taste
*For those who don’t know Sendha Namak, it is Rock Salt a type of salt that is used in making fasting food, because Table salt is sea salt that is made from sea water that may contain some living forms and impurities of marine creatures during the extraction process and is also made chemically. Whereas Rock salt or sendha namak is a extracted from rocks as the name suggests, and as per Hindu traditions, one should have only veg and sattvic food during fasts.
Method:
Peel and mash the potatoes into thick chunks.
Heat ghee in a pan, add cumin seeds and when it starts to splutter add green chillies and fry for a sec then add potatoes.
Fry the potatoes nicely, add sendha namak and serve hot.
Ingredients– Boiled Potatoes, Cumin Seeds,Chopped Green Chillies, Sendha Namak, Coriander leaves, Curry Leaves
Heat ghee in a pan/kadhai
Add Cumin Seeds, Chopped Green Chillies
Add Curry leaves
Add Potatoes and mix well. Add Salt to taste
Vratwale alloo for topping
Enjoy it with paranthas or pooris or have it just like that.
I enjoy these with yogurt and sometimes add tamarind chutney. Give this way a try. you can add some pomegranate seeds also along with tamarind chutney, and have vart wali chaat.
You can make these potatoes adding other spices like cumin and coriander powder, turmeric and red chilli powder. during fasts or also when you are not fasting and serve it as the main dish with Paranthas side dish with any of your favorite dal or vegetable curries.
