Glad to hear you’re doing well. I’m trying to go weekday vegetarian so when I do buy meat, I can afford to buy more ethical stuff, and I think it’s a good way to force myself to eat more roughage. Do you have any tips for someone starting out?

That’s awesome! Good for you. I’ve realized that by cutting back on meat I’ve been able to eat so much healthier in general. I’ve also cut out all refined grains and sugar from my diet and have replaced ‘em with fruit and whole grains (which in my opinion taste better anyways). There’s tons of recipes for vegetarian meals online, which of course are very vegetable heavy more than anything. Lately I’ve been obsessed with this Tuscan vegetable soup. If I think of any more great recipes I’ll send them your way. Really it’s just about being consistent with healthy eating habits, and after a little bit of time it just kind of becomes second-nature.
