There’s lots of scriptwriting software out there. Back when MH was being made I used Celtx but it’s since gone to subscription based shit. I use FadeIn now, which you only have to pay for once. Very worth it in my opinion.

For blocking, that would be included in the script itself if it was something important. Otherwise we would just do what felt natural while actually shooting the scene.
