REMOVE #BADBEANS FROM YOUR LIFE FOREVER
If you are a #TrueBlueCoffeeHead and subsisting on supermarket beans and/or frequent visits to big chains like Starbucks, PLEASE help yourself (and your local community, the environment, coffee workers, etc) and buy a pour over filter and freshly roasted, quality beans from a local roaster. Explicitly seek out Fairtrade Organic/Smithsonian Bird Friendly certified beans if possible. The taste of shade-grown coffee is incredibly flavorful AND you can be certain that your beans aren't the product of yucky pesticides, actual slave labor, and the annihilation of millions of acres of rainforest.
To start with what you need, a goose-neck kettle and pour over carafe are good purchases, but a suitably sized mason jar and regular kettle still work on a budget. Learning how to make a great pour over will raise your home coffee game to professional standards without needing to spend literal thousands of dollars on a real grinder/steamer/espresso machine setup -- if you're able to buy all of these items new for less than a thousand dollars, you're going to be down a few hundos in exchange for some pretty shitty machines. Regardless, a pour over setup with good beans will pay for itself VERY rapidly, assuming it replaces frequent Starbucks visits or whatever other chain you were going to. If you frequent a LOCALLY OWNED coffee shop that you like, keep going! You're an important part of the ecosystem.
What about grinding the beans? Should I get pre-ground beans? Would a cheapo blender-like blade grinder work?
NEVER touch a blade grinder again. It doesn't matter as much if you have #BadBeans, but if you have good beans, ALWAYS use a grinder with a burr; blade grinders just chop up your beans randomly into particles of massively varying sizes, leading to simultaneous over-extraction and under-extraction, generally leading to wildly inconsistent flavors and low repeatability. Burrs will always grind the beans into uniform particles and ensure that you're always (more or less, every cup is different to an extent) getting a consistent flavor. Don't buy a burr grinder -- just bring your beans to a local coffee shop, buy a drink, tip well, and ask the barista if they could grind the beans for you when you can clearly tell that they aren't busy. I have NEVER been refused, just go to a place with less sour employees if they won't help you out. Specify the coarseness that you'd like; smaller grounds have a greater surface area, so they're extracted to a greater extent, resulting in a more intense flavor; coarse grounds are the inverse. Lots of people recommend medium-coarse for pour overs (about 80% coarse 20% fine), but I prefer the stronger flavor of medium/drip (dead middle, 50% coarse 50% fine). It's also better to grind your beans periodically, as freshly-ground beans will taste better, but it's fine to have it pre-ground or ground all at once if you aren't able to easily make coffee shop trips every week or two. As far as roasts go, there's an entire gradient for you to explore -- not just the few that I list here; light roasts have a more sour, fruitier flavor, medium roasts are well rounded, and dark roasts are rich and smokey. Medium-dark is my personal favorite.
Experiment!!! It's all about your own taste, after all.
How do I make a good pour over?
Again, it depends on your taste. My go-to is a vigorous fourth-cup of grounds to 300ml of water; this is easily on the stronger end, but it's what works for me. More common ratios are usually weighed out on a kitchen scale, so consider picking one up if you don't already have one. Document your process until you get to your favorite! I always stop the kettle a little before it gets to its terminal temperature, then pour just enough water onto the grounds to let it bloom -- wait for one minute, and then start pouring a small-ish portion of the water onto the grounds every 20 seconds (this is where my own technique varies the most, it usually takes between 3-4 minutes to finish since I'm not pouring standard amounts; some people DO measure their pours for even greater consistency). Use the stopwatch on your phone, it's much better than keeping track in your head. Make sure to distribute the water evenly over the grounds, particularly making sure to wash the grounds off the sides every pour. When I'm finished, I like to immediately take a sip to see if a splash of milk or half-and-half would help or hurt the cup -- I think a very good cup of coffee can easily stand on its own without anything else, but additives can absolutely help depending on your personal preferences. Just be sure to taste the black coffee before you add anything.
What if I like the syrupy sweet drinks? What about iced coffee?
From my experience working at/visiting coffee shops, Monin is the most common syrup brand I see at local places. As far as iced coffee goes, coldbrew would be probably be the superior option -- it's also pretty easy to make at your home. I'm not going to be writing a guide for coldbrew any time soon, so you're out of luck there. I also never steam my milk if I'm doing a pour over, so I can't really point you to an inexpensive way to do that. Just know that the cheap handheld stick-frothers do not do the same thing as an actual steamer.
What was that about certifications?
Fairtrade is a pretty notable certification for food items produced in areas that have a history for being exploited (so pretty much the bulk of the global south), it can get very complex -- read more about it here. The goal is to ensure that the workers and communities involved in the production of the product receive fair, livable wages, that labor conditions are safe and reasonable, and that the decisions around the production of the product are made by those directly involved in the labor. FTO refers to Fairtrade Organic, which just means that it meets the standards of both Fairtrade AND organic production -- I'm not exactly sure if the organic standards are based on where the coffee is sold, produced, or both, but regardless, it's still a bonus; organic coffee will almost ALWAYS be shade-grown, which is the way that coffee grows naturally. Since coffee is an understory tree in nature, shade-grown coffee is produced more slowly and under a canopy and thus does not require the forest to be damaged or destroyed to grow; however, not all organic coffee will necessarily take place in a completely natural, untouched rain forest setting. Industrial non-organic coffee is most often produced under direct sun in gigantic clear-cut monocrop rows and usually with massive usage of potentially harmful inputs like, such as various pesticides and fertilizers. Direct sun coffee grows faster, but it has a distinctly different taste and is easily the most damaging method of coffee production to both the environment and the local communities. Smithsonian Bird-Friendly is the most rigorous certification for coffee in particular; FTO is more or less a pre-requisite to achieve SBF. Coffee likes to grow in tropical, equatorial environments -- these environments are also the areas of the greatest bird diversity in the world (and, really, biodiversity in general) and the destination for most migratory birds during the winter. The coffee industry has destroyed literal millions of acres of rain forest across the world, which has resulted in the death of billions of birds worldwide over the past 50 years. SBF guarantees the FTO criteria PLUS the additional criteria that the coffee must be produced in forests that are more-or-less in their natural state with thriving diversity of endemic species of flora and fauna. It's harder to find SBF-certified coffee than FT(O)-certified coffee, but the Smithsonian website has a handy vendor locator here. I'm not confident that it works beyond U.S. vendors, so I apologize to anyone interested abroad. Note that some of these certifications may be exclusive to particular continents; I need to do more research on the subject, but the tropical forests around the world vary wildly -- this adds a level of complexity to the goals and criteria of a particular certification. I am confident that all of the certifications that I have mentioned apply to South and Central America (and most likely the Caribbean), so keep that in mind. Also, watch out for phony certifications; big corporations frequently buy out existing certification organizations and/or create new green-sounding organizations to fool well-meaning consumers.
Where should my brand new beans come from?
Like wine, the exact qualities of a bean depend on its terroir, or the specific methods and geographic factors involved in its growth. However, some countries have trends in how the coffee is generally grown; some counties will practice shade-growing more than others and some countries will practice direct-sun industrial methods more than others. As a rule of thumb, Arabica beans are mostly grown in shade or partial shade, while Robusta is generally grown in direct sun. Defer to certifications if applicable.

Again, this is just a rule of thumb; there are exceptions to both and I'm sure that I've left out several production areas. Most of this information comes from the blog Coffee and Conservation, written by ornithologist Julie Craves. I've only tried a very small percentage of these origins; so far, my favorites are Sumatran (Arabica, of course) and Peruvian.
*The source that I got this information from mentioned that some avoid Zambian and Zimbabwean coffee due to concerns of it helping fund violent conflict in the area; this particular article, however, is from 2006 and may be wildly out of date. I couldn't find much more info on this topic when I searched elsewhere.
**They primarily produce Arabica with organic methods, despite the sunny conditions.
***Sumatra is likely the most notable coffee-growing island in Asia; while the majority is Robusta grown on plantations that have deforested a horrifyingly large percentage of the island, the Arabica grown in the north is well-known for its far healthier growing conditions (shade + organic, usually) and extremely distinct flavor.

Someone's probably already come to this conclusion about Prescott Whitehorn. It may even come as obvious, but I still want to document it.
[Warning for spoilers from The Outlast Trials if you haven't played the newest update yet and also there is mention of leaks/spoilers surrounding Whitehorn. You have been warned!]

Also before I begin I should mention one other thing. LEAKS ARE NOT ASSURED SOURCES. This may not even be the finalized model for Whitehorn above, probably isn't. BUT they give an idea of things and are most often reliable. Red Barrels also is aware and seemingly fine with leaks; they give references and hints in the game files, but have also cautioned to not let these things make you "expect" a certain thing.
THAT SAID, A LOT OF MY IDEA IS SPECULATION

Okay, now to what's relevant. Simply— I think Whitehorn is the "response" to the Amelia escape/attempted escape (OOO which one could it be ooo?)
He breaks apart from the family dynamic shared by the previous Prime Assets and they begin to show something larger. From the microsystem and deepest part of the reagents life to something bigger. I think he represents where the power really lies in the world- not the law, maybe not even the government: Murkoff. The reagents will serve Murkoff, the absolute, unbending, unquestioned authority and the laws which they will abide no matter what. I even think his height is a not-so-subtle nod at his themes: his tremendous size representing how far he towers above you and your family, his strength representing that the reagents simply cannot win against this authority.
(Here is where mention of leaks begin, don't continue reading on if you don't wish to! I will not be showing images out of respect to RB and those who found the leaks, none of this was my work, I'm simply lucky enough to see! This also means: take my word for it. Or don't. The choice is always yours.)
There is a leaked video introducing presumably the first Whitehorn trial. Funnily enough, it's about killing the boss of a Union! Easterman says the Union is a putrescent sore that infects with notions of a livable wage” and so on. This leads me to believe that Whitehorn is a Union/strikebreaker. I think, if true, then Whitehorn's role seems obviously significant to division among the reagents. This also leads me to believe he will be the Prime Asset introduced with PVP. I think PVP will not involve direct harm of the other reagents but rather to stall/beat them at their objectives and create division rather than unity among them. The faculty are scared now; they've seen what unity can do. Because of Amelia's contraption as seen in Motion Comic #5, I also predict we're not getting out of this event without a major death, and I do mean more than possibly Amelia. I believe she was creating a machine/grinder intended to kill the staff or pursuing expop, but that's somewhat irrelevant.
Coyle is an authority figure, representing a father and a police officer: but cops aren't the absolute, especially not to the reagents. They'll defy people far more powerful than cops, but what they aren't allowed to defy is Murkoff. Whitehorn's the one who's going to break those who try to unite, the next subconscious idea I believe will be planted in by the trials.
The next leak involves voicelines by the reagents, which I believe to be an even stronger piece of evidence than the last toward this idea. When reagents ping the assets, they'll occasionally get voicelines such as "It's the cop!" And "Mother Gooseberry!"
With Whitehorn? He gets "It's the worst of them." I mean, wow, to be the worst among that crowd? That's got to be a serious tormenter. And I think this is what Murkoff wants— if they can't rule with this loose facade of love, then,

One of the lines also refers to him as "The" Prime Asset. Not just a, but the? And a "walking nightmare." I mean, that's the Big Cheese right there. Now whether the reagents gained this impression naturally or it was furthered by whatever Easterman may be saying, I think it's pretty clear he's dangerous, and I can't wait to hear what little Franco has to say about that.
The last thing is not a leak, but there is also a drawing depicting a very large bald man in the game labeled "the mean man." This has already been mentioned by many that it's probably Whitehorn. And yeah, he seems like a pretty mean man.
So, TLDR? I think Whitehorn represents the authority to the reagents — something that should be feared, respected, and definitely never rebelled against (again). And I think he's going to give us a Hell of a time. I also do have to wonder what his weapon will be. Melee? Ranged? When I think "authority" I think a big ass sword, but when I think "breaker.." Big ass hammer. Big ass bald dude with big ass hammer. Tell me that wouldn't be cool. Though, given his size, much like the big grunts I don't think he'd have trouble tearing us apart with his bare hands. He'll be the most imposing enemy yet!
Now is all this to say that Amelia's plan turns into a failure? Well, I have some ideas and leaks again, but that's too far... I'll only say: not necessarily. It is possible this is a massive escape and some reagents get out. But, where would they go? All they have to hear is "Spider, Eye, Lamb" and would they ever be able to unlearn that torture, if Avellanos has any merit, in their "deep subconscious?" Who knows, but maybe some did get away, and managed to get off the grid in a way Murkoff cannot track or execute any plans to capture them yet. Does Amelia get away? Highly doubt it, but don't know. I'm just hyped!

OoooooOOO scary(itsnotthatscarystill) story part 2 OOOOO
You can't exactly scan anymore items when the machine is asking for a service plan so I let my own eyes wander, and I see what was waiting behind the grinder: The deli meat I had seen earlier. Except it wasn't just deli meat, it was whole steaks and sausages and slabs of pork. And beyond all those piles of meat, was a single brown paper bag, the bottom dark with some liquid that was slowly leaking onto the conveyor belt. I don't know why but I felt, weird about it. I linked it to the idea that the liquid was going to make the bag tear easily, but that still didn't feel like that was it. The man finally decided on getting the service plan, which cost a ridiculous amount for a hand crank grinder, and I began to scan the meat. Most of it was soggy by now, I don't think I took that long getting to it? Maybe the old man just wandered around with it in his cart forever. I glanced back at him and nearly jumped, his head practically leaning over the register as he stared at the meat. He must have taken notice because he stepped back, though didn't stop looking at his soggy purchases. I made some conversation to cut the tension, trying to start with a “So, have a lot of mouths to feed, eh?” only to be met with “Oh I just like to save it up.”. I wanted to continue but the only words I could think of were ‘You eat all this!?’, so I dropped the chatter. Can I tell you how annoying it is to scan meat products? They are always in some small bag you have to open, or the barcode is wet and wont read, or sometimes it's none of those and the machine just doesn't accept the item despite nothing being wrong. This grievance came to my mind when the paper bag finally reached me. I picked up the scanner and with an annoyed glare at the bag went to open it. I had barely any time to notice the man was over the register again. I did notice, though, his slimy hand firmly grab mine as I opened the package. I could feel his bone through his thin skin and, and his skin.. It was like leather left in the rain. His gray eyes looked through me the same way as when he looked at his deli. It pains me to admit I, indeed, did yelp a little at this otherwise out-of-line customer behavior. Not wanting to be gripped anymore I did the first thing to pop in my head and let go of the red stained bag, and thankfully he unclenched his hand from mine upon doing so. He smiled, and in the same charming old voice he spoke with earlier said “My apologies, I did not want the bag to rip. I hope I was not inconveniencing you.” I smiled, wiping my arm on my uniform behind my back “Of course sir.” I say. He turns the bag around and plastered to the back of it is a barcode sticker. I examined it for a moment, the bottom of it was wet with the red that was now making a whole puddle on the conveyor which I simply knew I was going to have to clean again. It looked like a real enough barcode, though I'd never seen the deli use a brown bag for any of the meat, not that I really cared if this guy was trying to sneak some expensive meat out with a lower price, I only cared that he wasn't going to be staring at me any longer. To my surprise the barcode worked, and it wasn't listed as cheap either. Three hundred and something dollars for something that seemed the size of a burger patty, not that I had the chance to see it but it had that weighty-feel when I had moved the bag. Actually in all the man had spent well over seven hundred dollars on everything, still not the biggest sale I had though, you would not believe how much some people buy by themselves.

Photo a day 100-112/365 coffee
You see people all the time talking about how they prepare coffee, usually with hundreds of dollars of equipment. So as a foil to the idea that you have to spend tons of cash to get a good cup of coffee, here's my process to get a good cup of coffee out of my 1950's percolator.

First, measure your beans! You don't need anything fancy to do this, I used a little glass bowl and a $10 Wal-Mart Mainstays scale. It'll read in grams so it's just fine for this. Just put the bowl on the scale before you turn it on so that it 0's out with it and doesn't count the weight of the bowl when you're measuring your beans.
Getting the right amount of coffee is paramount to getting a good cup. My percolator is a 4 cup, so between 40 to 45 grams makes pretty good coffee in it. As a rule about 10-12 grams per cup if you're using a larger / smaller pot.

If you want to grind your own like I do, you'll need a grinder. You CAN spend hundreds on one, but honestly as long as it makes a decent grind any grinder will do. This one was about $45 and has worked well for me for years. A burr grinder is going to give you the best results, and the most uniform grinds. But if you have a blade one that's fine too. In this case, I want a coarse grind for the percolator.
If you have one like mine that has the cup measurements on it, don't trust them. These measurements are very seldom correct, and can be inconsistent as well. It's always better to just measure what you need and grind it all on the spot.
It can be a little messy, but I'll tell ya' a secret, just grab a little hand vac and keep it handy. 2 seconds with that will suck up all the grounds that spill in a jiffy!

This is what a good coarse grind for percolators should look like, grains about the size of say Kosher salt.

Water up to the 4 cup fill line. If you don't have good tap water, you might want to get a filter or bottled water. It can make a big difference in the taste of your coffee.

Drop the basket in, the water level should be below the bottom of the basket so that the water can filter down through it, if it's not, pour a little out.

Ideally, you want to put the coffee in so that it's level all the way around the basket. This isn't perfect, but it's close enough. Make sure to not let any go down the tube when your filling, I like to use a spoon to pour it in, like in the picture below.

If you want your coffee fast, you're better off with a Keurig, this takes a little time. ;)

Depending on the percolator, you may have a dial like this on the front, but most percolators now a days are just on or off deals without any kind of adjustments. In my case, I have to set the dial and then watch for the light to go off. Usually this takes 8 to 10 minutes.
If you've never heard one of these, and wondered what they sound like, now you know. :)

And that's it, coffee. :) The whole process takes about 15 minutes and in my case all the equipment costs about $100. It's not a fancy espresso machine with a pretty caramel colored pull, but if you just want a good cup of coffee it's all you need.
You can get a modern percolator for about $50 from makers like Hamelton Beach, Farberware, etc. Grinder was in my case about $45, If you want to go even less expensive, and less prep, you can swap out the percolator with a regular old drip coffee maker and just change the grind from coarse to medium. (about 3/4 the size of the grounds you see in my photo.)

Oh, and this is the coffee I was using, getting good coffee makes a huge difference in flavor. Most store bought coffee sits around for some time before you get it, that can lead to stale tasting coffee. This is especially likely if you buy preground coffee. This is the part of the whole process that's really worth putting the money out for. On that note, you don't have to buy stuff that's crazy expensive, this is Crazy Fox Coffee's Hoot Owl Blend. Goes for about $30 a pound with shipping.
Anywho, all this isn't to say that the hobby of making craft coffees and going for the expensive gear isn't cool, it definitely is. But if you don't have the cash for a thousand dollar espresso machine and all the assorted trappings to get the most out of it, you can still get a good cup of coffee.

So, you've decided to dive into the world of coffee. Maybe you've taken your first step with a barista training course, or perhaps you're already behind the counter brewing up your first espresso shots. Either way, stepping into the role of a barista comes with a learning curve—and mistakes are part of the process. But some mistakes? They're more like coffee crimes that can sabotage your growth or turn customers away.
This guide is here to help you avoid those early missteps and become a more confident, skilled, and professional barista from day one.
1. Burning the Milk (A Cardinal Sin)
Let’s start with one of the most common mistakes baristas make: overheating the milk. The ideal milk temperature for lattes and cappuccinos is between 55°C and 65°C. Go beyond that, and the milk not only loses its sweetness but also scorches—leaving a burnt taste that ruins the coffee.
Pro tip: Use a thermometer until you can gauge temperature by feel. The moment the jug becomes too hot to touch for more than a second, you're probably overdoing it.
2. Grinding Without Understanding
The grind size directly affects flavor, shot timing, and extraction quality. One of the biggest coffee crimes is adjusting the grind without understanding its impact. Too coarse, and you get a sour shot. Too fine, and it's over-extracted and bitter.
As a beginner, you don’t need to memorize grind sizes—but you do need to learn how to dial in your grinder based on the espresso's look and taste.
3. Rushing the Tamp
Tamping is not just about pressing coffee into the portafilter—it’s about consistency. Uneven tamping leads to channeling, where water rushes through one part of the coffee puck and barely touches the rest. The result? A weak, unbalanced shot.
Tip: Focus on an even, level tamp with firm pressure. Don’t slam the tamper—just press, twist slightly, and pull away.
4. Ignoring Cleanliness
Yes, cleaning is part of your job. A dirty portafilter, milk wand, or grinder can seriously affect taste and hygiene. Cleaning doesn’t just keep things tidy—it prevents bacteria growth, improves flavor, and extends equipment life.
Make it a habit to:
Purge the steam wand after every use.
Wipe the portafilter clean between shots.
Backflush the machine daily.
Clean the grinder hopper weekly.
5. Not Tasting Your Own Coffee
How will you ever know if you're making great coffee if you never taste it? Many new baristas hesitate to try what they prepare. But tasting your shots is how you learn what’s right and what needs fixing.
You don’t need to drink every cup, but try a sip occasionally. It builds your palate and helps you understand how grind, tamp, and milk affect taste.
6. Overlooking Customer Interaction
A great barista isn’t just good with coffee—they’re good with people. Many beginners focus so much on technique that they forget to make eye contact, smile, or ask questions. This can make your service feel cold or robotic.
Remember, you're not just making drinks—you’re part of someone’s day. Greet them with energy, remember regulars' names, and show interest. These small actions make a big difference.
7. Skipping the Pre-Shot Routine
Consistency in workflow is key. Every shot should go through a simple routine:
Clean the portafilter.
Dose the coffee.
Distribute evenly.
Tamp.
Brew.
Skipping steps or rushing through them causes inconsistency. Customers can taste that inconsistency—even if they don’t know what’s wrong.
8. Assuming Latte Art is Just for Show
Yes, latte art looks cool. But it also reflects how well your milk is textured and poured. Beginners often focus only on the design, not realizing that poor texture leads to flat, tasteless drinks.
Instead of obsessing over hearts and rosettas, learn to create silky, microfoam milk first. The art will follow naturally.
9. Forgetting the Basics Under Pressure
The café gets busy, and suddenly you're steaming milk, pulling shots, and calling orders all at once. In that chaos, many beginners cut corners—bad tamp, rushed steam, poor attention to cleanliness.
Rule of thumb: When things get hectic, slow down just enough to maintain quality. Speed comes with time. Your priority should be doing it right, not doing it fast.
10. Not Asking Questions
You won’t grow without curiosity. One of the biggest silent mistakes is staying quiet out of fear of looking unskilled. But asking questions shows you’re eager to learn—and good cafés respect that.
Whether it’s about the roast profile, grinder settings, or workflow efficiency—ask. The more you learn, the faster you’ll grow.
