My gardens may be weedy but oh, my pantries are looking BEAUTIFUL!!! Seriously, this is important. This is how we feed ourselves all year. Most is grown in our backyard. But some things, like peaches, apricots and cherries come from market stands. Climate change is real. We can and have to make changes in our personal lives. Eating local is an easy change. It was a day of bits and pieces canning! 3 quarts of tomatoes 1 pint of Mexican flavored tomatoes 12-1/2 pints of pizza sauce 11 pints of green beans The tomatoes are finally coming into their own. I know I haven't been around much lately. It is that time of year. It is canning season. These are two of our three pantries. Today ... I will start tomatoes ... slowly. Yesterday, I canned 11 pints of beautiful fresh apricots. Tomorrow, it is green beans and a final flush of pickles. This is my way of fighting climate change. It is really LOCAL food ... grown in my backyard, preserved in jars that have been used for decades. No trips to the grocery store for salsa or green beans or frozen corn. Just a walk to the laundry room. And it is really good stuff!! I am teaching a class on Tuesday at Lady of the Prairie Retreat Center if you want to join me. This just happened. After 33 years, my jiggler canner bit the dust. The gasket was good and little else could go wrong. Today, I couldn't get it up to pressure. I checked the gasket, soaked it in hot water and oiled it. But after several tries, it still wouldn't pressurize. The locking mechanism in the handle will no longer pop into place and there is no repair. ☹ Kind of excited about my new toy! And I have to make sure I know when they test them annually. That was the joy of the jiggler. Oh well. Time to learn a new trick or two.
