What would the boys do if hermit MC Has SEVERE social anxiety to the point she would have a whole panic attack being out in public? How would they react if she had Haphephobia on top of that aswell?

Well, they will be accommodating for it. Especially if Mutt, Blue, or Papyrus scolded/yelled at them for not doing so. This isn't really something about her being a bad person at all. It's something she genuinely needs help with. For both the social anxiety and the haphephobia. Though the second one they'll just help her by not touching her.
