I make matzah brei throughout the year when the grandkids come but never eat it myself because it is such an indulgence. In my opinion! But hey, it’s Passover and that’s special. We’re supposed to eat matzah. And it’s social distancing time and I need to eat something indulgent. So, matzah brei. I also wanted to post this photo before the #matzahchallenge ends. Here’s the simple recipe: Matzah brei One sheet of matzah Water One large egg, beaten Salt Butter Topping if your choice (sour cream, jam, maple syrup, etc.) Break the matzah into small pieces into a bowl. Add warm water to cover and let soak until the matzah is soft. Drain the water and squeeze the matzah to extract as much liquid as possible. Add the egg and some salt and mix the ingredients thoroughly. Melt some butter in a sauté pan over medium heat. Add the matzah mixture and fry for 3-4 minutes per side or until crispy. Serve with topping.
